PAGE 7-B The Cook’s Nook By Mildred E. Warren Tomatoes are plentiful at the present time and I have enjoyed eating them raw, and cooked. For those of you who have a bountiful supply I have a delicious recipe for Old Fashioned Chili Sauce which was given to me by Nancy (Mrs. Norman) Owens. This recipe comes from her mother-in-law, Mrs. George Owens of Avoca, New York. Thank you Nancy, for sharing this delightful recipe with us. I also have two request “numbers.” One is for a Left-Over Ham Casserole which has been requested by several people. The other is a Japanese Fruit Pie; this one has been requested by Jackie (Mrs. Bobby) Holtzclaw. It is a delicious pie, and Jackie, at long last here ‘tis. OLD-FASHIONED CHILI SAUCE 18 ripe tomatoes 4 onions 3 red peppers (Sweet, may use green) 2 cups white sugar 11/2l l /2 cups cider vinegar 1 teaspoon cinnamon 1 teaspoon cloves 1 teaspoon salt Chop vegetables and mix with other ingredients. Boil for 2 hours or until thick. Pour into sterilized jars and seal. JAPANESE FRUIT PIE 1 cup sugar 1 stick butter (melted) Hi •J i; $ $ v !•* Gen. Beck Receives Distinguished Service Award From Gen. Merrell Gen. Beck To Step Down After | 4 Years Os Service At WRAMA I A four year tenure which featured one of the most progressive commands in the history of the Warner Robins Air Materiel Area, came to an end Monday when Major General A. J. Beck retired following 27 years of service to the Air Force. General Jack G. Merrell, commander of the parent command, Air Force Logistics Command, presented him the Distinguished Service Medal upon his retirement. General Beck will serve as an executive with the Morris Paint Company in Omaha, Nebraska upon retirement. Succeeding General Beck as WRAMA commander is Major General Robert E. Hails, who comes to Robins from Philadelphia, where he was commander of the Defense Personnel Support Center. Under General Beck’s leadership, the base has survived Congressional PERRY, GEORGIA, THURSDAY, AUG. 10, 1972 budget cuts without serious effect. Facilities on the base have been improved sub stantially. General Beck has been active in community affairs. Because of his keen interest in Macon clean-up campaigns, a park has been named in his honor. Through his cooperation with Macon Junior College and Georgia College at Milledgeville, the Robins Resident Center is a reality. He also has been interested in improving ecology, setting up an Explorer Scout program and has supported numerous other community efforts. The DSM is one of numerous awards received by General Beck which in clude the Legion of Merit with three oak leaf clusters, Distinguished Flying Cross Air Medal with three oak leaf clusters, Army Com mendation Medal, Presidential Unit Citation Emblem with three oak leaf clusters and the British 2 eggs 1 tablespoon vinegar Pinch salt Vi cup coconut (fresh, canned or frozen) Vi cup raisins Vi cup chopped pecans Mix butter sugar and eggs. Add vinegar, salt and other ingredients. Bake in 300 degree oven for 35 to 45 minutes. LEFT-OVER HAM CASSEROLE 1 cup diced cooked ham 1 small can tiny green peas 2 large eggs 1 cup evaporated milk Vi cup grated Cheddar cheese 1 cup loosely packed crushed Ritz crackers Vi teaspoon black pepper Vi teaspoon garlic salt Vi teaspoon salt Beat eggs and evaporated milk on low speed in electric mixer until well blended. Add salt, garlic salt and pepper. Set aside. Line bottom of casserole with ham. Add layer of peas, next layer of crackers. Now pour milk, egg and seasoning mixture over the casserole mixture. Sprinkle grated cheese on top. Cover com pletely with foil and bake in 450 degree oven for about 20 minutes. Serve hot. Serves 6. (Note; You might add 3 or 4 hard cooked eggs, sliced along with the ham in this casserole). HAPPY COOKING! Military Cross. :j: General Hails is a veteran of 30 years in the Air Force. Action Committee To Meet In Warner | Robins August 15 | The next regular meeting j| of the Houston County Community Action Com mittee will be held August 15, 1972 at 7:00 p.m., at the Neighborhood Service Center, Warner Robins, £ Georgia. The program will be on $ Housing, conducted by Ted Johnson, Housing Director * for the Heart of Georgia Community Action Council, jij Inc., in Eastman, Georgia. |:j School Food Workers Attend Service Program Summer Vacation meant going to school for some of the School Food Service Personnel of Houston County. Eight persons at tended a Food Preparation Course in a series recom mended for School Food Service Personnel. The following completed the course: Bessie Lamberth, Tucker Elem.; Judith Williams, Tucker Elem.; Hattie Dent, Perry High; Helen Nash, Perry Elem.; Theresa Hammock, Perry Jr. High; Juanita Roberts, Northside Jr. High; Elizabeth Groves, Watson Elem.; Corine Jinks, Elberta Elem. In July Menu Planning, a third course in the series was offered. Completing this course and assisting in planning menus for the coming school year were: Betty Walters, Lindsey Elem.; Corine Jinks, Elberta Elem.; Juanita Roberts, Northside Jr. High; Theresa Hammock, Perry Jr. High; Judith Williams, Tucker Elem.; Hattie Dent, Perry High. The Food Preparation group will present a demonstration and food for a luncheon on Tuesday, August 22 for the School Food Service Manager and guests. The recipes and other knowledge will be shared with this group. Both courses were taught in Macon by Mrs. Myrtice Johnson, Director of School Food Service, Bibb County.
