I
I have a message for two of my
Unadilla readers. They came into my
shop not too long ago and asked for a
recipe for an okra casserole. Well
girls, here ’tis -- it took a lot of lookin’,
but I think this one is “just what the
doctor ordered.” I think a lot of other
folks will welcome this one.
I also have a Chicken and Rice
Casserole for that “hurry-up” dinner.
And for you blackberry lovers I have
a Blackberry Meringue Pie.
And so it goes, where will it stop—
nobody knows.
OKRA AND CHEESE CASSEROLE
4 medium tomatoes, peeled and sliced
Vi pound okra, cut in Va inch slices
cup chopped onion
1 teaspoon salt
Va teaspoon black pepper
Vi pound Cheddar cheese, cut in cubes
or coarsely grated (or more)
Arrange all ingredients in layers in
IVi quart greased casserole. Begin
with sliced tomatoes, then okra,
onion, salt and pepper and top with
cheese. Cover and bake at 325 degrees
for about 30 to 40 minutes. Serves 6.
CHICKEN-RICE CASSEROLE
1 cup uncooked rice
1 can cream of celery soup
1 can cream of chicken soup
1 cup water
6 chicken breasts
Vi stick melted butter or margarine
Put the rice in the bottom of a 2-
quart casserole. Mix soup with water

and pour over rice. Dip chicken
breasts in melted butter, then lay on
top of the rice. Bake at 325 degrees for
about 45 minutes, or until chicken is
tender and rice is done.
BLACKBERRY MERINGUE PIE
4 cups fresh blackberries
1 cup sugar
1 teaspoon lemon juice
IVi tablespoons cornstarch
Va cup cold water
Vs teaspoon salt
2 tablespoons butter or margarine
One baked 9-inch pie crust
3 egg whites
Va teaspoon cream of tartar
Vi cup sugar
Wash and drain blackberries.
Crush Vi cup of the berries with a
fork; add 1 cup sugar and 1 teaspoon
lemon juice. Add remaining berries
and cook over low heat until berries
are soft; stir to prevent sticking.
Dissolve cornstarch in cold water and
add to cooked berries. Add salt and
the butter or margarine. Cook and
stir until mixture has thickened. Cool.
Pour mixture into baked pie crust.
Beat egg whites until foamy; add
cream of tartar. Continue beating,
add sugar, a small amount at the
time, and beat until meringue stands
in peaks. Spread over pie and bake at
350 degrees about 15 to 20 minutes or
until browned.

attendance for the year. He
was in the 4th grade and has
never missed a day of school
in the four years.
Lisa Rucker spent a week
with Lisa Brannen.
Mr. and Mrs. Aubrey Farr
and Wanda had as Sunday
guests Mrs. Jimmy
Smallwood, Kim, Keri, and
Lee Smallwood of Perry,
Debra Evans, Beth Folds and
David Folds, Unadilla, Tim
Sinyard, Browndale, and
Elaine Wilson, Perry.
A small group spent a fun
day at Six Flags Saturday.

Kim Nelson, Mrs. Betti'

Appointed To
Hospital Post
The appointment of Allen W.
Kennedy, Jr., as assistant to
the administrator at Floyd
Hospital, Home, Georgia, has
been announced by Hospital
Administrator Ben Ansley. He
assumed his new duties April
29.
Mr. Kennedy, a senior at
Georgia State University in
Atlanta, was employed at
Grady Hospital as supervisor
in the personnel department
until his transfer to Floyd. He
attended the Southeastern
Hospital Conference in
Atlanta May 1-3.
Mr. Kennedy is the son of
Mrs. Allen W. Kennedy of
Perry and the late Mr. Ken
nedy and is a graduate of
Perry High School.
Heard Club
Enjoys Trip
For the May meeting the
Heard Club took a trip to the
Jarrell Plantation. The
members met at Mrs. Pearl
Thompson’s home.
After a short business
session the club left Mrs.
Thompson's home with a stop
in Macon for lunch. Af
terwards the club enjoyed a
window shopping spree before
motoring on to the plantation.
The June meeting will be
held at Mrs, J. D. Wood’s
home.

Wilson had as Sunday dinner
guests Mrs. Maxine Wellman,
Ann Wellman and Nicky
Wellman of Hawkinsville.
Vacation Bible School will
be held at County Line June 10
through 14 starting at 7 o’clock
and lasting until 9 o’clock.
Mrs. Kenneth Brannen will be
the director and everyone is
urged to attend and bring their
children. There will be
something for everyone.
Graduation will be Friday
night and the parents and
friends are especially asked to
be present for that,

Woody Hunt, son of Mr. and
Mrs. William W. Hunt of
Perry, was among the seniors
of the University of Georgia
that were recently honored at
the Senior Superlative
Banquet held May 14. He was
chosen among a select group
of other seniors that received
a certificate of outstanding
recognition presented by Dean
William Tate and the Alumni
Society of Georgia
