Each week brings pleas for
something to cook that is easy,
inexpensive, and, of course, good. I
have two meat recipes, one for
Stuffed Peppers, and the other a
London Chicken. The Stuffed Peppers
are made with cooked ground meat,
and you might use leftover ham or
beef. The Chicken recipe comes from
a little cookbook full of “easy-to-do”
and “bake-it-later” dishes. My friend
Tingle Buff gave me this little book
which I have enjoyed because of its
“prepared ahead” dishes.
I chose a Cole Slaw for our salad
idea, and this one has crumbled bacon
or the new bacon bits for a topping.
Now for our week’s recipes, and I
hope you’ll like them!
STUFFED PEPPERS
6 green peppers
2 cups flaky cooked rice or bread
crumbs
2 cups ground cooked meat
1 small onion chopped fine
1 teaspoon salt (or to taste)
Vz cup chili sauce, catsup or meat
gravy
1 cup buttered bread crumbs
Cut off the stem ends of peppers;
remove seeds. Boil peppers for 5
minutes in lightly salted water;
drain. Stuff the peppers with a
mixture made from the next five
ingredients, and cover with the
breadcrumbs. (I sometimes sub
stitute grated cheese for the bread
crumbs.) Place in buttered casserole
dish. Bake at 325 degrees for about 30
minutes or until peppers are tender
and crumbs are brown.
Note; I think you might use about 1
pound of ground beef for this recipe;

Conducts Sept . Meeting
The “Houston County School
Food Service” held its
monthly meeting Tuesday,
September 23, at 3:30 at the
Westside Elementary School
in Warner Robins.
A report of the House of
Delegate Meeting was given
by Pres. Theresa Hammock
and Director Alma Beckham.
Both attended the meeting
September 13 and 14 which
was held in Macon at the
Sheraton Motor Inn. Great
plans for the future of our
children were discussed. This

just saute it in the skillet for about
five minutes before mixing with other
ingredients.
LONDON CHICKEN
20-24 pieces of chicken (breasts, legs,
and second joints)
Butter or salad oil, enough to brown
chicken
% pound sliced mushrooms, or you
can use canned, drained
2 cans cream of chicken soup
1 can mushroom soup
Sherry or white wine to taste, about V*
cup
Brown the chicken in butter or oil.
(Then, if using fresh mushrooms,
brown these.) Place chicken in a
large casserole. Mix the soups (un
diluted) and pour over chicken. Place
mushrooms on top. Refrigerate.
When ready to bake, add wine, cover
the casserole and bake at 350 degrees
for IVi hours.
COLE SLAW
2 cups shredded cabbage, tightly
packed
5 tablespoons sour cream (dairy sour
cream)
2 tablespoons vinegar
2 teaspoons sugar
1 teaspoon salt
V 2 teaspoon dry mustard
V 2 teaspoon black pepper
V 2 teaspoon caraway seeds
V 2 teaspoon paprika
2 slices crisp bacon crumbled
Place cabbage in bowl. Beat next 7
ingredients together and pour over
cabbage. Toss well. Dust with
paprika and top with bacon.

is a meeting where all officers
from the State meet to make
plans for the future of our
children in the Food Program.
It is so rewarding to know how
much love and interest these
dedicated women have for our
children. They are trying to
get across to the children and
parents how important food is
to their health.
Also discussed was National
School Lunch Week. We will
highlight “You Are What You
Eat”. Parents and other
important community leaders
will be invited to participate in
the week long celebration. It
will be October 13 to October
19.
Also discussed was an ex
citing event to take place in
February. It will be “School
Lunch Heart Week. The
Georgia Heart Association
will merge their efforts with
our association to inform the
public the importance of diet
on heart disease. A Heart Day
Menu will be featured. Also
contests will be held and
prizes given away for the
children. There will be more
publicity on this later on.
We also learned with great
pleasure how much interest
our two Senators and ten
Congressmen are in our
program to feed the children
of Georgia. We need their help
and we thank them for their
interest.
We had as special guest
Mrs. Sims of Peach County
who is a newly appointed
supervisor in that county. We
wish her well and hope she will
come back again.
After the meeting, we had a
tasting parly. That is when we
tried out new foods to see if
they are good enough to serve
our children.
Mrs. Florence Boles was our
gracious hostess, and we
appreciate and thank her for
her hospitality.

Larry G. Beavers, son of

Perry, completed an in
crement of the officers’ basic
training at the Marine Corps
Development and Education
Command, Quantico, Va. He
is enrolled in the Platoon
Leaders Class (PLC)
Program, which enables of
ficer candidates to attend
college full time and par
ticipate in summer training
periods Upon receiving his
degree, he will be com
missioned an ensign in the
Navy.
A 1973 graduate of Perry
High School, he is attending
North Georgia College,
Dahlonega.
Red Cross Project
Houston Aids
Fifi Victims
Local efforts to aid sur
vivors of hurricane Fifi in
Honduras are being promoted
by the Houston County Unit of
the American Hed Cross.
Fleming International
Airways at Lewis B. Wilson
Airport in Macon Monday
donated the use of a DC-7 to
transport supplies to the
Central American Nation.
The plane will permit the
local Red Cross office to ac
cept canned and non
perishable food and clean
clothing in good condition.

Baptist Revival Set Oct. 6-10
Rev. W.A. Venable, Jr., of
Conyers, Ga., will be guest
minister for fall revival at the
Second Memorial Baptist
Church, October 6-10. Rev.
Venable is affiliated with the
Immanuel Baptist Church,
Conyers, and has been its
minister since Oct., 1972. Rev.

McKinley of Perry staled this
morning that fire stations
throughout Warner Robins
and Perry will serve as
collection centers for the
goods.
Checks marked “for Hon
duras relief” are also
welcome at the Red Cross
Office Bldg., 1685, Box 223,
Warner Robins, Georgia.
Those funds will be forwarded
to the national headquarters
and then to the Honduras Red
Cross Society,
Venable, born of missionary
parents in Kimsan, Korea, is
married and has 2 children.
