This week’s Nook is in answer to
several requests for low calorie
dishes. I read and checked several
articles and I think I “hit the jack
pot” when I discovered, The
Complete Book of Calorie Cooking,
by Levinson. It is full of valuable
kitchen information along with
many catagories of low calorie
recipes. These range from
Beverages to Anti-appetizers to
Desserts, Preserves and Pickles.
I’ve selected an Eggplant An
dalusia, a Baked Fish Creole, a
Sweet and Sour Meatball and a
Peach Sherbert for our low-calorie
recipes of the week. Each recipe
gives the amount of calories per
serving; I thought you might like
this idea.
EGGPLANT ANDALUSIA
3 large eggplants
1 chopped green pepper
1 chopped sweet red pepper
V i cup chopped mushrooms
Vi teaspoon chopped chives (or finely
chopped onion)
Vi teaspoon chopped parsley
Salt, pepper and paprika
6 (Vi inch thick) tomato slices
Cut the eggplant in halves length
wise. Scoop out the green part with
plastic or stainless steel spoon, so
that only shells remain. Chop the
flesh fine and combine with pep
pers, mushrooms, chives, and
parsley. Season with salt, pepper,
and paprika to taste. Return
mixture to shells and place in
baking dish. Cover each eggplant
half with a tomato slice and bake
for 1 hour. Serves 6.
(62 calories per serving)
BAKED FISH CREOLE
2 cups stewed tomatoes
4 tablespoons thin-sliced onions
4 tablespoons chopped green peppers
4 tablespoons chopped mushrooms
1 tablespoon lemon juice or vinegar
Vi teaspoon monosodium glutamate
Va teaspoon Sucaryl solution
Pinch of oregano
Vb teaspoon mustard
Salt and pepper to taste
2 pounds fish fillets or steaks
Put all ingredients except fish in
saucepan and simmer, stirring

weekend guest of friends in St.
Petersburg, Fla., classmates
at ABAC in Tifton.

the weekend guests of Mr. and
Mrs. W.H. Draughon and
family in Chattanooga, Tenn.

graduation from Westfield
occasionally, until vegetables are
tender. Grease shallow baking dish,
season fish with salt and pepper,
place in dish, and pour sauce over.
Bake in moderate (350 degree) oven
about 30 minutes, or until fish is
tender. Serves 4.
(168 to 206 calories per serving.
Depending on fish used; Haddock is
190 per serving, flounder 168 and
perch 206.)
SWEET AND SOUR MEATBALLS
3 green peppers
1 pound ground lean beef
1 teaspoon salt
V t teaspoon pepper
1 tablespoon shortening
1 cup chicken stock or bouillon
1 (No. 1 or 303) can Diet Delight
apricots
1 teaspoon soy sauce
V 4 cup vinegar
Cut peppers into eights; season beef
and form into small balls the size of
walnuts; heat shortening in frying
pan over medium heat and brown
meatballs on all sides. Remove
from pan. Place 1/3 cup chicken
stock, apricots with liquid, and
green peppers in frying pan; cover
and simmer 10 minutes. Blend soy
sauce and vinegar with remaining
chicken stock. Add to apricot
mixture. Cook slowly, stirring
constantly until thicker. Return
meatballs to sauce, and heat.
Serves 6.
(185 calories per serving)
PEACH SHERBERT
1 cup chopped unsweetened peaches
1 cup water
3 teaspoons Sucaryl solution
1 teaspoon grated lemon rind
1/3 cup orange juice
1 tablespoon lemon juice
2 egg whites, stiffly beaten
Combine peaches, water and
Sucaryl solution; add lemon rind,
orange and lemon juice. Freeze
firm. Remove from refrigerator
and beat to a mush; fold in beaten
egg whites. Return to freezing tray
and freeze firm again. Serves 6.
