Once again it’s time for the “Arts
& Crafts Show at the Crossroads”.
This event is a yearly affair, so join
the crowd on April 8 at the National
Guard Armory, When you have
browsed a bit drop by the Pilot Club
dining room to have lunch. They
serve delicious food and I suggest
that you take your family out to
lunch, then wander through the
show where you will see so many
lovely things.
One of the Pilot Club members,
Grace (Mrs. Harris) Wilson
brought me two of her favorite
recipes for our Nook, one a Royal
Seafood Casserole and a Sweet
Potato Nut Cake. Yummy! The Hot
Chicken Salad has been requested
so many times and here it is for
those of you who asked for it.
The Menu For
‘‘A rts & Crafts At The Crossroads ’’
Chicken Salad Plate
Baked Ham Plate
Hamburgers
Chicken Salad Sandwiches
Sausage & Biscuit
Cake (Several Kinds)
ROYAL SEAFOOD CASSEROLE
2 (lOVfc) ounce cans condensed
cream of shrimp soup
Vz cup mayonnaise
1 small onion, grated
% cup milk
3 pounds raw shrimp, cleaned and
cooked
1 (IVz ounce) can crabmeat,
drained
1 (5 ounce) can water chestnuts
(drained and sliced)
IVz cups diced celery
3 tablespoons minced fresh parsley
1-1/3 cups uncooked white long
grain rice (cooked until dry and
fluffy)
Salt, white pepper, seasoned salt,
ground nutmeg and cayenne
pepper
Paprika
Slivered almonds
Blend soup into mayonnaise in
large bowl. Add onions, then milk,
Now begin seasoning using a heavy
hand. Combine with other
ingredients except paprika and
almonds. Check seasoning, add a
few tablespoons of milk if mixture
seems dry. (It should be moist.)

Turn into large shallow casserole
well buttered, sprinkle with
paprika and sprinkle with almonds
over top, generously. Bake un
covered at 350 degrees for about 30
minutes or until hot and bubbly.
This freezes well. Serves 10.
SWEET POTATO NUT CAKE
3 cups grated sweet potatoes
IVz cups Crisco oil
2 cups sugar
2 cups chopped nuts
4 eggs
2 cups self-rising flour
1 teaspoon cinnamon
1 teaspoon vanilla extract
Cream sugar and oil; add eggs
one at a time beating well. Add
sweet potatoes, flour and nuts.
(Dredge nuts in a little of the flour
before adding.) Add vanilla and
cinnamon. Bake at 325 degrees
about 1 hour in tube pan or use 2
loaf pans. Pour glaze over cake
while still hot.
BUTTERMILK GLAZE FOR
CAKE
1 cup sugar
1 teaspoon baking soda
Dash salt
1 cup buttermilk
1 tablespoon cornstarch
Combine all ingredients in a
saucepan. Cook until thick, 2 to 5
minutes. Pour on sweet potato cake
while still hot.
HOT CHICKEN SALAD
2 cups diced cooked chicken
2 cups diced celery
Vz cup slivered blanched almonds
Vz teaspoon salt
Vz teaspoon grated onion
2 tablespoons fresh squeezed lemon
juice
1 cup mayonnaise
Vz cup shredded sharp Cheddar
cheese
2 3 cup broken potato chips
Mix all ingredients except cheese
and potato chips. Turn into shallow
buttered casserole. Combine
cheese and potato chips and spread
over top. Bake uncovered at 375
degrees for about 20 minutes.
Serves 6.

at the National Guard Armory and the Pilot Club is in charge of the dining
room. Be sure to come enjoy some good home cooking while taking in the
show.

Williamson. Three
members were
recognized tor their
weight losses for 1977.
First place in Div. 4 with
a 29Vz lb. loss was Myrtle
Mathis (also the chap
ter's best loser for 1977.)
2nd place in Div. 4 was
Linda Johnson with an
18% lb. loss. Ist place in
Div. 5 with a 12Va lb. loss
was Alice Holley.
The Chapter was well
represented Fri. & Sat. at
Georgia's SRD (State
Recognition Days) held
this year in Atlanta.
Myrtle Mathis, Cathy
Stanley, Linda Johnson,
Lynn Shelton, Hazel
Watson, Mae Underwood,
Jeanie Belle, and Polly
Williamson stayed at the
Regency Hyatt where the
convention was held. The
chapter was recognized
for having near-perfect
weight charts and one of
the chapter's KOPS
participated in the
beautiful Circle of Light
Ceremony, honoring
those who have reached
their desired weight.

Saturday, April Bth from
10 to 12 noon; also next
Tuesday, April nth to
help any person ages 55
or over in preparing their
1977 income tax reports.
These counsellors have
been trained by the In
ternal Revenue Service
and can help you with any
of your problems. If you
prepare your own form
and want a competent
person to check it for you
bring it in. Be sure to
bring your copy of your
1976 reports and your
records of income and
expenses for 1977.
