Christmas draws nearer and it
seems that everyoen is in a rush. I
have these recipes for this pre-
Christmas season and I hope they
will add much to your holiday
parties and holiday menus.
The Divinity Candy recipe is a
request, this recipe comes from
Sandy Stokes, and those who have
requested it will be so pleased.
Sandy gives you her special secret
for making this candy and those
who have tasted it says it is so, so
good! She gives us the recipe for
both Divinity and Brown Sugar
Divinity, so you have a choice.
Next, a Christmas Salad for your
holiday menu, and last of all a
Molded Cheese Delight, great for
an afternoon party.
And, so we go, into the holiday
season.
DIVINITY
2Vi cups sugar
% cup white Karo syrup
V« cup water
2 egg whites
Pinch salt
1 teaspoon vanilla
1 cup chopped nuts
Stir sugar, Karo syrup, water
and salt together. Boil to medium
ball stage, (242 degrees on candy
thermometer). Slowly pour Vi
syrup mixture over stiffly beaten
egg whites, beating constantly.
Cook remaining syrup to very hard
ball stage (265 degrees). Beat
syrup into candy, add vanilla and
continue to beat until it takes on a
dull sheen, add nuts and drop by
spoonfuls on waxed paper.
BROWN SUGAR DIVINITY
3 cups sugar
1 pound light or dark brown sugar
IVi cups water
1 cup white Karo syrup
3 egg whites
1 tablespoon vanilla
2 cups chopped nuts
Cook as above instructions for
Divinity Candy. (The secret of this

CHRISTMAS SALAD
2 (3-ounce) packages black cherry
gelatin
1 cup freshly ground cranberries
1 cup freshly ground oranges,
reserving juice
1 cup crushed pineapple, undrained
1 cup pecans, chopped
1 teaspoon ground orange rind
1 cup red wine
Make gelatin according to
package directions, using wine and
juice from pineapple and orange as
part of the liquid. Refrigerate
gelatin mixture until it begins to
thicken; stir in remaining
ingredients, chill in molds and turn
out on lettuce and decorate with
thinly sliced oranges for a colorful
salad.
MOLDED CHEESE DELIGHT
12 ounces Philadelphia cream
cheese
1 stick butter
Vi cup sour cream
Vi cup sugar
1 envelope plain gelatin (Knox)
V 4 cup cold water
Vi cup white raisins
1 cup slivered almonds, toasted
Grated rinds of 2 lemons
Saltine crackers
Let cream cheese, butter, and
sour cream come to room tem
perature. Cream well and add
sugar. Soften envelope of gelatin in
Mi cup cold water. Dissolve over hot
water. Add to cream cheese
mixture. Then add raisins,
slivered almonds, and lemon rind.
Put in 1 quart mold in refrigerator.
When firm unmold and serve with
saltine crackers. This can be used
at a sherry or cocktail party, or as
a dessert. Do not substitute for the
saltine crackers. You can also
freeze this after unmolding it.
When ready to serve, just thaw.
Serve about 35.

Why Are Products Packaged Differently?
Looking at supermarket
shelves with their eye
dazzling array of bottles and
cans in various sizes, designs
and materials, may prompt
the question: Isn’t all this
unnecessarily costly and
wasteful? Wouldn't it be
better to use one size con
tainer for all products, and
less wasteful to use one kind
of material instead of using
paper, metal, glass and
plastic?
First, of course, there is
no one material, one size or
one container design that is
best for every product just
as there is no one shoe size
or style that Tits every foot
and every purpose. Not
everyone’s needs are the
same. Size of family and
how often the product will
be used make a difference.
For individuals living alone,
or using small quantities of
a product, a small size is the
most economical. For large
families, buying in large
containers makes more
sense—it is less expensive
per unit.
What the public wants, in
the end, determines what
manufacturers supply. Soft
drinks, for example, are
packaged in various sizes
and types of containers be
cause people's needs and
activities vary as much as
their preference. For picnics
or boating, metal cans are
generally preferred because
they chill faster, take up less
space and won’t break.
Homebodies may prefer
beverages in glass. On the
other hand, the new two
liter size plastic bottle has
been an instant success not
only because the larger size
is less costly per ounce, but
because these larger plastic
bottles are lighter and easier
to handle than comparably
sized glass bottles.
Some materials are better
suited for certain products.
A no-drip top may be best
or an easy-grip handle, or a
metal pouring spout or a
bottle that squeezes out the
. product.
MINI DESSERT: EASY AND ELEGANT
These Chocolate or Coco
nut Cheesecake Cups were
designed to add excitement
to the simplest meal or the
most elaborate menu. Blend
melted Baker's German’s
sweet chocolate (or the
Baker’s Angel Flake coco
nut), cream cheese and few
other ingredients in about a
minute. A vanilla wafer
placed in the bottom of
each miniature aluminum
foil baking cup is the crust
for this cheesecake-like des
sert, which is sprinkled with
pecans or flaked coconut.
After baking, garnish with
thawed frozen whipped top
ping and maraschino cher
ries or chocolate curls, if
desired. Makes 12 servings
to impress waiting diners.
CHOCOLATE
CHEESECAKE CUPS
12 vanilla wafers
1 package (8 oz.) cream
cheese, softened
1/2 cup sugar
2 eggs
2 tablespoons all-purpose
flour
1 teaspoon vanilla
1 package (4 oz.) sweet
cooking chocolate,
melted
3/4 cup chopped pecans
Place a vanilla wafer, flat
side down, in each of 12
aluminum foil baking cups;
place on baking sheet. Beat
cream cheese until smooth.
Gradually beat in sugar and
continue beating until light
and fluffy. Add eggs, one at
a time, beating well. Blend
in flour and vanilla; then
blend in chocolate. Spoon
into cups, filling about 3/4
full, and sprinkle with
pecans. Bake at 325° for 30
minutes. Cool on rack and
serve cool or chilled. Gar
nish with thawed frozen
whipped topping and choco
late curls or maraschino
cherries, if desired. Store
in refrigerator. Makes 12
servings.
Coconut Cheesecake
Cups. Prepare Chocolate
Cheesecake cups as directed,
substituting 1 teaspoon al
mond extract for the vanilla
and 2/3 cup flaked coconut
for the sweet cooking
chocolate. Omit pecans and
sprinkle with 2/3 cup flaked
coconut.
