Broiled Liver

Liver need not always be fried. One
of the best ways of cooking any kind
of liver—bheef, calf, lamb, or hog liver
—according to the bureau of home
economies of the United States Des
partment of Agriculture—is to hyroil it
under the flame of a gas oven. For a
‘fumily of six, bny about 4 pound and
a half of liver, cut in slices a quarter
of an Inch thick. Wipe the slices with
a damp cloth, Place them on a
greased baking sheet and put it under
the flame of the broiling even. Cook
from eight to ten minutes, turning
frequently, When done, sprinkle with
salt and pepper, pour over it some
melted butter, and serve at once.
Good vegetables to serve with broiled
liver are: Baked onions, baked to
matoes, green peppers stuffed with an
onion, tomato and bread crumb mix
ture, spinach, kale, or cabbage.

of fresh halibut and place over the
pork and onion. Mix three table
spoonfuls of flour with the same of
butter und spread over the fish. Cov
er with buttered crumhs and strips
of salt pork. Bake fifty minutes.
Serve with gravy made from the pan,

with salt and pepper.
Fruit Puneh.—Pour one cupful of hot

fourthg of a. cupful‘of orange juice
and onethird of a cupful of lemon
Juice. Strain into a punch bowl over
a large plece of ice and just before:
serving add one pint of lithia, a
pint of ginger ale and a few slices
of orange with one dozen maraschino
cherries,
Chocolate Souffle,—Melt two table
spoonfuls of butter, add two table
spoonfuls of flour and when well
blended add three-fourths of a ecup
ful of milk. Bring to the boiling
point, Melt one and one-half squares
of chocolate, add one-third of a cup
ful of sugar, two tablespoonfuls of
hot water and stir until smooth, Com.

Serving Swiss Cheese,
These suggestions for using cheese

fruit, using care not to break the sec
tions, arrange them on very thin slices
of Switzerland cheese, petal fashion,
border with cress or lettuce. Garnish
with a cube of currant jelly or a ripe
dressing made with fruit juices.
Cheese which is our most concen
trated food has been called hard of
digestion; the reason for this is that
it Is not well masticated or is eaten
after the stomach has been well filled
with food. Cheese 1s a food and
should be treated as such. It con
tains no waste, is highly nutritive and
will take the place in the diet of alt
meats. Being compact, it is harder of
digestion unless It Is eaten with
coarser food like crackers ‘which need
to he well chewed,

appeared in knitted ensembles are
promised for this fall.

ensemble here pictured in that it is
trimmed with crepe de chine im solid

Soup Without Meat Stock
Soup without meat stock can e
made from vegetables and rice water,
with meat flavor supplied by salt pork
Those who cook rice frequently wiil
often have on hand a sufficient amount
of the water that has been drained
from it to make this good soup, The
bureau of home economics describes
the method of making it:
1 pint rice water % cup finely
%) cup milk chopped celery
2 carrots, medium tops
' size, grated 1 rounded ths,
2 Ilhbu"er * salt pors, diced
5; onion, chopped very small

- Qook the salt pork in a skillet un
,h very crisp and then remove it
Add the butter to the pork fat and
then the onions, celery tops, and ear
rots and cook for 5 minutes, stirring
to keep them from becoming too

in a saucepan and stir in the cooked
vegetables. Season with salt and a
small amount of pepper. Allow the

Among charming knitted themes for
fall is that of knitted velours. Many
a handsome two-piece frock will grace
the autumn scene, their skirts of plain
knitted velours, topped with knitted
velours jumpers, showing an elaborate
patterning,
Color effects that will be highlight
ed include blues, such as middy blue,
also light powder and intermediate
shades. English violet, gray tones
like pigeon and silver-wing, also rose
glow, a beige shade, are also registered
among coming important colors.

An easily made treat for luncheon
or supper, in combination with pre
serves or cream cheese or both, is nut
biscuits, These are ideal if served
hot, but you will find that any left
over biscuits will not go begging, (if
your household includes one or two
active boys who come around in the
middle of the afternoon or at the
end of a game of tennis or baseball,
looking for a liftle extra snack to re
store the energy they have given out,
Make some, too, for the picnie lunch,
The directions are from the bureau
of home economics. "
2 cups sifted soft- 1 tablespoon fat
wheat flour % cup ground
4 teaspoons baking nuts
powder % cup milk, or
3, teaspoon salt enough for scft
dough
Sift the dry ingredients and cut
in the fat and nuts A(‘] the milk
and stir from the center With a fork,
until a soft dough is formed. Toss
the dough on a iightly floured board,
and press into a sheet about one
fourth inch thick with the palm of
the hand. Cut in small rounds, brush
the top with butter, and place one
round over the other. Bake in a quick
oven until lightly brown. Serve hot
with marmalade or cheese and jelly.
