Coffee Beans Made of Dough.
Albany, X. Y., Feb. 17.—Sena¬
tor Ambler has introduced a bill to
provide for the general investiga¬
tion of all food adulterations. The
suggestions for this bill came from
the work already done by Chemist
Wheeler, of the agricultural de¬
partment. That department non
lias one hundred and twenty-five
samples obtained from manufac¬
turers and retailers, which give a
faint idea of the extent to which
food products in daily use are doc¬
tored.
One interesting exhibition con
sists of half a dozen samples of
counterfeit coffee beans. Most of
these, upon examination, have been
found to consist of dough pressed
into the shape of the coffee bean
apd baked or stained until the eolor
Of roasted coffee is obtained.
In the ground coffee exhibit
ground and wasted peahulls occupy
the most conspicuous place.
A jar of plaster of paris extracted
from a sample of flour is another of
the specimens, and talc and white
clay are other popular adulterations
of fiour.
There is a sample of tomato cat¬
sup. The actual ingredients are
ground pumpkin and a flavoring
acid.
A sample of tea dust worth about
10 cents a pound is shown as a mix¬
ture for teas that sell for forty and
fifty -cents a pound.
A strip of paraffine was obtained
from a sample of butter in another
exhibit.
There are several exhibits of col¬
oring matter used in various food
products, such as “sugar yellow,”
“sugar orange” and others which
the department chemist has added
to the collection. *
Senator Ambler received a tele¬
gram announcing that the Mercan¬
tile Exchange of New York had
adopted resolutions unanimously en¬
dorsing his bill to prevent the use
qf artificial preservatives in dairy
products.

Sav^dust as a Disinfectant.
It has been claimed by»a famous
Italian doctor that burning sawdust
is one of the finest disinfectants
known to science. He himself has
made a number cf experiments, and
has come to the conclusion that no
microbes can exist more than a few
hours if brought within reach of the
smoke from burning sawdust. To
thoroughly disinfect any room,
place about four pounds of sawdust
on the hearthstone and light it with
a match. Occasionally smoke from
sawdust has a blackening effect on
the surroundings. To prevent this
slightly moisten it with water, then
start it burning by means of light¬
ing one or two* dry pieces of wood
and sprinkling the sawdust over
them until the whole is well started.
