There Are Two Kinds of Mustard.
There are two varieties of mustard—
black and white. Black mustard is the
most valuable for commercial purposes.
Its seeds are very minute, weighing not
more than one fiftieth of a grain each.
Its peculiar pungent taste is caused by
an essential oil. This oil can, like fruit
flavors, be exactly imitated by the chem¬
ists. Both as a table condiment and as
a medicine, mustard has been known
from a very remote period.
As now found in our grocery stores,
this spice consists of white and black
mustard seeds, mixed and ground fine.
The white mustard keeps better than
the black variety and is not so bitter.
A good deal of the mustard sold is adul¬
terated, sometimes with wheat flour, but
more often with tumeric, the pulverized
root of a common East Indian plant.—

How the Kiiiigaroo Fights.
The kangaroo fights with great ad¬
dress aud intelligence, and if he can find
a stream or water hole in which to await
his foes will station himself waist deep
in it, and pushing the dogs under one by
one as they swim out to attack him
either drown them outright or compel
them to retire for want of breath.
Against human enemies, armed only
with dubs or stirrup irons, the kangaroo
often shows himself a clever boxer, ward
ing off blows very dexterously with his
forepaws, and now and then making for
ward bounds, with rapid play of ids dan

How Some Men H*a<i« Money.
Peter Cooper had a hard time of it
getting an education. He was born in
New York 100 years ago, and at the
age of seventeen was ipprenticsd to a
shoemaker. He tried his hand at sev¬
eral trades, and got together a com¬
fortable fortune of about 86,000,000
through unremitting toil, conscien¬
tious devotion to duty and economical
habits.
August Belmont came to New York
poor, and lived to be worth some mil¬
lions. Prudence, acuteness and sagac¬
ity were the instruments by which his
wealth was accumulated. Ilis success¬
ful career is an illustration of the fact
that this country affords a line oppor¬
tunity for the intelligence, thrift and
industry not only of native Americans
but of the republic’s adopted citizens.
Austin Corbin began in moderate
circumstances. He took up the study
of the law, but soon forsook that field
for the financial world. He is a man
0 r s t r j c t probity, energetic and genial.
He has piled up his millions by con-
6tant effort and attention to all the lit
tie details of his profession.
Cyrus W. Field has been termed a
locomotive in trousers, Tiie
serves to convey an idea of tire indefat¬
igable energy of the man.
Vice President Morton received his
business training in the dry goods trade.
Then he became a banker. In his
youth he had to shift for himself. Ne¬
cessity is the stimulus that men of real
ability require.—Henry Clews in Ladies’
Home Journal.
Colonel Theodore A. Dodge makes the
startling statement that ‘'every shot
from a big gun consumes $1,000.” At
this rate war has become a very expen¬
sive luxury.
The father of a fretful baby consoled
himself with thinking that after all he
shouldn’t know how to get along with¬
out it—in fact, that it was “a crying ne¬
cessity.”
