Celebrating
their 64th
Valentines
BY VICKI SMITH
ith so
much
emphasis
placed on
love this
month, I want to intro
duce you to a very spe
cial couple that
have lived in
Bolingbroke all
their lives and
recently cele
brated their
58th wedding
anniversary. I
admire the
commitment to
one another,
the love, and
time tested endurance it
takes to claim bragging
rights of almost six
decades of wedded bliss.
Joe and Marion Peters
are a great example of
what marriage is all
about. Recently, I had
the opportunity to visit
with them at their home
to discuss the “secrets” of
a good marriage. I had
allotted about 30 min
utes and was very sur
prised when I glanced at
the clock and realized I
had “visited” over 3
hours. Time sat still as
they reminisced of the
good ‘ole days and I
enjoyed every story.
The former Miss
Marion Callaway grew
up in Bolingbroke, the
daughter of a railroad
employee. She explained
that she attended Mary
Persons High School with
Joe’s younger siblings
(Joe is six years her sen
ior) and considered him a
family friend. As she was
completing high school,
Joe left to serve our
country in World War II.
After returning home, he
went to work on his fam
ily’s dairy farm on
Rumble Road. One
evening a few months
later, their paths crossed
and this friendship soon
blossomed into
love. Marion
and her
friends were
all dressed up
headed to the
picture show
and stopped by
what was then
Walt’s General
Store in
Bolingbroke.
Sitting on the bench out
side was none other than
Joe. He took a second
look at the lovely Miss
Callaway and asked if he
could tag along. The
answer was yes and his
tory was made. After six
years of courtship, they
were married on Dec. 2,
1951 at the Bolingbroke
United Methodist
Church. They have two
children, four grand chil
dren and two great grand
children.
I asked Mrs. Peters to
share her advice on love
and marriage and with
out hesitation, she said
just be yourself, live a
simple life and trust in
the Lord with all your
heart. Live accordingly,
understand and respect
one another and never
form an opinion quickly.
Good advice. I believe
she knows what she is
talking about.
Happy Valentine’s Day!

Lovin’ from your oven
V alentine’s Day is coming up
this weekend. Perhaps you
are thinking about prepar
ing that special meal for two
that says “I love you.” Maybe
it’s a great steak with a stuffed baked po
tato and an extra-special red or pink
dessert. In the meantime, consider mak
ing several batches of cookies to show all
your friends and family how much you
love them.
Sour Cream Sugar Cookies
1 cup shortening (Crisco
solid)
1 cup sugar
1 egg
1 cup (8 ounces) sour
cream
1 1/2 teaspoons vanilla
4 cups all-purpose flour
1 1/2 teaspoons baking
soda
1/4 teaspoon salt
In a large mixing bowl,
cream shortening and sugar
until light and fluffy. Beat
in the egg, sour cream, and
vanilla. Combine the flour,
baking soda, and salt.
Gradually add the dry mixture to the
creamed mixture and mix well.
Cover or refrigerate for one hour or
until easy to handle.
On a lightly covered surface roll
dough to 1/4 inch thickness. Cut with
a floured 3 inch heart-shaped cookie
cutter.
Place cookies 2 inches apart on
baking sheets lightly coated with
cooking spray. Bake at 350 degrees
for 8-10 minutes or until set. Cool for
one minute before removing to wire
racks to cool completely.
Butter Cookies
1 cup Land O Lakes butter, soft
ened
1 cup sugar
1 egg
2 1/2 cups of all-purpose flour
2 tablespoons orange juice
1 tablespoon vanilla
1 teaspoon baking powder
Combine 1 cup butter, sugar, and
egg in large mixing bowl. Beat at
medium speed until creamy. Reduce
speed to low, add flour, orange juice,
vanilla, and baking powder. Beat
until well-mixed. Divide dough into
thirds and wrap in plastic food wrap.
Refrigerate until firm (2 or 3 hours).
Heat oven to 400 degrees.
On lightly floured surface
roll out dough, one-third at
a time (keeping remaining
dough refrigerated) to 1/8 -
1/4 inch thickness. Cut
with 3 inch heart-shaped
cookie cutter. Place 1 inch
apart on ungreased cookie
s heets. Bake for 6-10 min
utes or until edges are
lightly browned. Cool com
pletely.
Frosting
This is a really easy frosting for
both the Sour Cream Sugar Cookies
and the Butter Cookies.
1 cup butter, softened
9 cups confectioners’ sugar
3 teaspoons vanilla
2/3 to 3/4 cup milk
In a large mixing bowl, cream but
ter until light and fluffy. Using a low
speed, beat in the confectioners’
sugar and vanilla. Scrape the bowl
often. Heat the milk carefully in a
small saucepan. Do not allow to come
to a boil. Be careful not to scorch the
milk. Add the milk, a little at a time,
to achieve the right consistency. You
may not need all of it.
Use about half the frosting on as
many cookies as you wish. Tint the
remaining half with red food color to
a soft pink color and frost the rest of
the cookies. If not planning to frost
many cookies, the recipe can be cut
in half.
Decorate cookies as desired. All
kinds of decorations for Valentine
cookies can be purchased at Ingles or
Freshway.
Old Fashioned Tea Cakes
1 stick butter
1 egg
1 3/4 cup self-rising flour
1 cup sugar
2 tablespoons milk
1/2 teaspoon vanilla
Cream butter, sugar, egg, milk,
and vanilla. Add flour to creamed
mixture.
Wrap the cookie dough in a sheet of
waxed paper. As you fold the paper
over the dough, you can press out
ward toward both ends to make a
nice log. Wrap over the waxed paper
with foil. This will chill nicely in the
refrigerator for a few hours or even a
few days until you are ready for bak
ing. Slice the dough as thick or thin
as you wish and bake in a 375
degree oven about 8 minutes. This is
a recipe that has been a favorite in
my family for many years, but it is
too rich and buttery to hold a shape.
Sprinkle with red or pink sugar dec
orations to match the holiday.
