Eating healthy isn’t
always easy, but the older
you get, the more impor
tant it is to add certain
vitamins to your diet and
watch your fat intake.
That’s why Dyann
Sullivan, Brenda Kirkland,
Sylvia Williamson and
Dana Lynch held a nutri
tion program for senior cit
izens at Parker Chapel
A.M.E. Church on Tuesday,
February 17.
Lynch, a Monroe County
extension agent, distrib
uted food guide pyramids
to the group and used visu
al techniques to show them
what each serving size
should look like. Lynch told
the group the importance
of limiting their intake of
foods such as cornbread
and biscuits and showed
them what lard could do to
a human heart. She also
talked about good fat ver
sus bad fat, and said that
water, milk and 100% juice
are all good drink choices.
To prove her point, she
then showed the group
how much sugar was in
sweet tea, Coke, sports
drinks and other soft
drinks by holding up bags
of sugar for each one. The

The Scrub Team, the
famed band made up of
local physicians, is re-unit-
ing Blues Brothers style
for a Relay for Life fund-
group saw what a pound of
fat looked like and one par
ticipant even tried on a 20
pound fat suit. Lynch said
that she usually has the
participant jump rope
without a fat suit, then try
to jump rope with it on,
but there wasn’t enough
room in the church’s fel
lowship hall for that.
At the end of the meet
ing, Lynch told the group

Hospital.
The big night is set for
6:30-9 p.m. at the Georgia
Public Safety Training
Center. Seating is limited.

All proceeds go to the
hospital’s Relay for Life
team to fund research for
cures for cancer.

Cooking with
Coca-Cola

Cola or
any of
the
several Coca-Cola
products, such as
Minute Maid Or
ange Juice, can
add wonderful dis
tinctive flavors to
your dishes.
My mother used
some of these
recipes. I even tried some
in my restaurant. I hope
you will want to try some
for really great additions to
your meals. Not all of the
recipes are for desserts.
There are recipes for
sauces, salads, main dish
es, side dishes, and more.
Here are just a few sam
ples of some of the great
dishes using Coca-Cola.
Please do not use Diet
Coke or any products using
NutraSweet or other sugar
substitutes. These do not
hold up in cooking like real
sugar.
Coca-Cola Salad
2 small packages of cher
ry gelatin
1 can (approximately 16
ounces) Bing cherries, pit
ted
20-ounce can crushed
pineapple
8 ounces cream cheese
12 ounces Coca-Cola
1 cup chopped pecans
Drain the cherries and
pineapple reserving juice.
Heat the juices and dis
solve gelatin. Stir well. Cut
the cream cheese into very
small chunks and add to
gelatin mixture. Add cher
ries, pineapple, Coca-Cola,
and pecans. Pour into
greased mold and chill.
Use either veg
etable oil or may
onnaise to prepare
mold for easy
removal of salad.
My family enjoyed
this Coca-Cola
salad at
Christmas time.
Quick Barbeque
Sauce
Equal parts of
ketchup and Coca-Cola.
Two cups each should be
enough for a family meal.
Add ? cup Worcestershire
sauce. Pour over chicken or
pork chops. Bake in oven
at medium temperature.
Keep covered with foil.
Super Barbeque Sauce
1 cup Coca-Cola
1 cup Worcestershire
sauce
1 cup tomato ketchup
1/4 pound butter
1 teaspoon salt
4 teaspoons sugar
1 tablespoon freshly
ground black pepper
Combine all ingredients
i n a heavy saucepan and
bring to a boil over low
heat. Cook, stirring fre
quently, at least 30 min
utes. Brush on foods as
they are grilled.
Chicken and Mushrooms
5 tablespoons butter
3-ounce can of mush
rooms, drained
Flour
Salt and pepper to taste
4 chicken breasts, halved
2/3 cup Coca-Cola
Sliced Swiss cheese
In a skillet, melt 2 table
spoons of the butter, stir in
the drained mushrooms
and cook for 5 minutes
over low heat. Remove the
mushrooms from the skil
let. Lightly flour, salt, and
pepper the chicken breasts.
Add the remaining butter
to the skillet and brown
the chicken. Remove chick
en from the skillet and put
in the Coca-Cola. Bring to
a boil while scraping sides
and bottom of the pan.
Return mushrooms to the
pan, stir and remove from
heat. Place the chicken
breasts, skin side down in
a casserole dish. Pour the
Coca-Cola and mushroom
mixture over the chicken.
Bake uncovered for in a
350 degree oven for 35
minutes. Turn chicken and
baste with mushroom
sauce. Cover with thin
slices of cheese. Bake 15
minutes longer, basting fre
quently.
Quick Additions
to Your Recipes '.
•Add 6 ounces of Coca-
Cola to your favorite baked
beans.
•Add 1/2 cup of Coca-
Cola to your pot roast.
•Let’s not forget the ever-
popular Coke Float.
Fill a tall glass with
vanilla ice cream. Pour
Coca-Cola over it.
