Send some Christmas lovin’ from your oven
I f you have family or
friends who are far
away this Christ
mas season, send
them special pack
ages of homemade treats.
For mailing, first choose
a sturdy container, as a
shoe box, heavy plastic
container, or
other package
that will stand
up for mailing.
You will not
have to wrap the
container if you
use a plain, stur
dy cardboard
box.
Line the con
tainer with foil
or plastic food
wrap. Pad the
sides and ends with
crumbled napkins, paper
towels, or newspapers.
You can also use popped
popcorn for packaging
material.
If sending cookies, wrap
and seal the same size
cookies together. Do not
wrap more than four to
six together in a stack.
Put heavier items, such
as fudge, on the bottom.
Pack crumbled napkins,
paper towels, or wax
paper around and
between the various food
items. If using a plastic
or decorative tin contain
er, it will need to be fitted
into a cardboard box. You
will want to pack every
thing as air-tight as pos
sible. A good idea would
be to use inexpensive
plastic containers with
lids.
After making sure you
have filled in all spaces,
seal the outside of the
box with durable tape.
Write "perishable food"

on a prominent label.
Here are a few recipes
for cookies and candies
that will (hopefully) hold
up better than some oth
ers:
Christmas Lizzies
1/2 pound candied
green pineapple, chopped
1 pound can
died red cher
ries, chopped
2 (8 ounce)
packages
chopped dates
2 cups
chopped pecans
1 1/2 cup all
purpose flour,
divided
1/4 cup butter
or margarine,
softened
1/2 cup sugar
2 eggs
1/2 teaspoon baking
soda
1 teaspoon ground cin
namon
1/4 teaspoon ground
cloves
1/4 teaspoon ground
nutmeg
1 1/2 tablespoons milk
3 tablespoons bourbon
Combine fruit and
pecans; dredge in 1 cup of
flour and set aside.
Cream butter; add
sugar, beat at medium
speed with electric mixer.
Add eggs; beat well.
Combine remaining 1/2
cup flour, soda, and
spices; add to creamed
mixture, mixing well. Stir
in milk and bourbon. Add
fruit mixture; mix well.
Batter will be stiff. Chill
dough at least 1 hour.
Drop chilled dough by
heaping teaspoonfuls
onto lightly greased cook
ie sheets. Bake at 300
degrees for 20-25 min
utes or until lightly
browned. Cool on wine
racks. Yield: about 8
dozen
Chocolate-Peanut
Butter Fudge
2 1/2 cups sugar
1/4 cup cocoa
1 cup milk
1 tablespoon light corn
syrup
1/2 cup butter or mar
garine, divided
1/2 cup peanut butter (I
like Jif, smooth)
1 cup chopped pecans
2 teaspoons vanilla
Combine sugar, cocoa,
milk, and syrup in a
large heavy saucepan;
cook over medium heat,
stirring constantly, until
sugar dissolves. Add 2
tablespoons butter and
stir until melted. Cover
and boil mixture 3 min
utes.
Remove cover, and con
tinue to cook, without
stirring, until mixture
reaches soft ball stage
(232 degrees). Remove
from heat. Add remaining
butter, peanut butter,
pecans, and vanilla. Do
not stir. Let cool for 10
minutes.
Beat until butter,
peanut butter and pecans
are blended into choco
late mixture. Pour imme
diately into a buttered 9-
inch square pan. Cool
and cut fudge into
squares. Yield: 3 dozen
Chewy Molasses
Cookies
1/2 cup shortening
1 cup sugar
2 eggs
1 cup molasses
4 cups all-purpose flour
2 teaspoons baking soda

tric mixer. Add eggs and
molasses; mix well.
Combine flour and next
flour ingredients; add to
creamed mixture alter
nately with buttermilk,
beginning and ending
with flour mixture.
Drop dough by rounded
teaspoonfuls 1 1/2 inch
apart on lightly greased
cookie sheets. Bake at
350 degrees for 10-12
minutes. Cool on wine
racks. Yield: 8 dozen
cookies
White Christmas
Fudge
1 teaspoon plus 1/4 cup
butter, divided
2 1/2 cups confectioners'
sugar
2/3 cup milk
12 squares (1 ounce
each) white baking choco
late, chopped
1/4 teaspoon almond
extract
3/4 cup sliced almonds,
toasted
1/4 cup dried apricots,
chopped
1/4 cup dried cherries
1/4 cup dried cranber
ries
Line a 9-inch square
pan with foil and grease
the foil with 1 teaspoon
butter; set aside. In a
heavy saucepan, combine
the confectioners' sugar,
milk, and remaining but
ter. Cook stir over medi
um-heat until combined.
Bring to a boil; boil for 5

Pictured is Alvin, he is the Frisbee and ball king. He is up for
