ONION CULTURE IN GEORGIA.
For Union-Recorder.
The U. & R. asks my opinion as to
whether the onion may be profitably
grown in Baldwin county. Having
an opinion upon the subject, I liave
no reluctance in giving it, having
had occasion to express it frequently
heretofore. 1
So far aa climate and soil are con
cerned, we can grow as fine onions ae
are grown in New England or the
Middle States, Adopting the varie
ties best suited to oor climate and
meeting the necessary conditions of
proper manuring and cultivation, it is
not difficult to produce Just as large
yields as are produced anywhere. Of
course It is a crop requiring much
“wiser” management than our ordi
nary staple crope, demanding also
gri-uter judgment in harvesting and
marketing it than any of the crops

HONEY AS MEDICINE-
Chicago Journal.
Last year a French tourist, M. Gull-
nietli by name, paid a visit to Tastua
nia. and being much interested in its
indigenous vegetation, examined tlie
numerous varieties of the eucalyptus
which flourished in that island. His
investigations brought him into con
tact with a small black bee, which
stores its honey in the E. globublus.
He found that this honey emitted u
strong odor of gum leaves. Collect
ing some, lie carried it to Europe for
the purpose of having it analyzed,
and of ascertaining whether it pos
sessed any special qualities.
It was carefully studied by M.
Thomas Caraman, a well known
chemical analyst, and Le Temps of
February 3 said that he had discovered

ing influence on the action of the
heart; it is antithermic—that is to
, it lowers the temperature; it fa-
tates the respiration, for it is anti-
catarrhal; it is a febrifuge and para
siticide, and it has been found effica-
oious in overcoming obstinate cases
of bronchitis and even of whooping
cough. It is almost unnecessary to
add that the various preparations of
eucalyptus make an important figure
in the French pharmacopic, add its
tliereapeutic value is far from being
fully ascertained at the present time.

storing them and are harvested in
proper condition. This difficulty does
not exist in the north where the
onion grown from the seed sown in
Muy and June continues its growth
until cool weather.
There is no difficulty in growing
the crop, the trouble with us ft in
keeping them in good condition. Jt
is a vegetable that is not very much
in demand for consumption until cold
weather. Onions grown from sets,
do not keep well like those grown
from seed sown here in January or
early February, the time we have
found Best for sowing in this lati
tude. *• , ..
There are a great many varieties of
the different white, yellow and red
kinds and it depends upon which kind
is chosen, whether the result will be
a success or failure.
What are known as the “Italian
varieties are the kind that we can
grow most successfully from the seed
in Southern latitudes and are about
a* easy to grow as the beet or carrot,
the requirements being thoroughly
fresh seed, sown on well enriched,
thoroughlv fine soil and kept perfect-
Iv clean of grass and weeds.
' Such conditions observed the pro
duct may be anywhere from 75 to
four or five hundred bushels per acre.
To supply a local trade those grown
from the “sets” are still more easy to
grow and October is the time to set
them. These are ready for the mark
et ill May and June, and for local
market in April, selling them while
vet green, a considerable demand ex
isting for them in the spring in this
green state before other vegetables
come into market.
Tlie “Tree” onion and the various
kinds of shallots are suitable for sup
plying a local trade for seasoning and
for use by the poor, but there is no
general demand for such, and are not
the onion of commerce. There is a
vast difference between the ordinary
onion grown from seed and the so-
called “Tree” onion and its kindred,
and the market could be very easily
overstocked with the latter. 1 am
surprised that more onions are not
grown in the county. Our local de
mand ought to be fully met by home
growth, at least, and with care after
a little experience, we could easily
compete with New England, if we can
learn to preserve them safely. To
any that are interested in the sub

ered by the above hasty remarks. ^

Southern Fried Chicken.—
Put in a frying pan equal parts
of laril and butter; roll the pieces
of chicken in cracker-dust and
dipin egg; then dust again; drop
into the boiling fat and fry brown.
Mince parsley and put in the
gravy with a cup of cream.
Fried Chicken and Tomatoes.
—Fry chicken in boiling lard;
when done, put in sliced toma
toes and fry; take up; season with
salt, pepper and a little sugar.
Fried Chicken a la Italienne.
—Cut up a chicken, dip in a bat
ter which has mixed in it chop
ped tomatoes, one onion, thyme,

and sene with tomato sauce.
