Freezing desserts in your mechan
ical refrigerator save-, your time and
enables you to have many various
desserts with only a little effort on
the part of the busy housewife. In
order to obtain the best results I
would suggest that you follow reli
able recipes and recipes adapted to
mechanical refrigerators. To simplify
methods of freezing desserts we find
recipes grouped under three head
ings.
FarfaHs and Moassej
These mixtures require no stirring
wh*le freezing. They depend for
their smoothness of texture upon
the richness of mixture and air
beaten into cream during whipping.
Ice Creams
These mixtures contain less cream
than mousses and parfaits. Gelatin,
flour, o" cornsta r ch is usually add
ed for a base to make for smoother
frozen products. Good results have
been obtained by freezing to a mush
before whipping cream is added,
then stirring only once. To do this,
remove freezing mixture to bowl,
beat ana fold in whipoed cream (Do
not beat whipped cream stiff, just
till it thickens up as beating cream
to stiff causes flakiness in cream).
Sherberts
A special method has been worked
out whereby mixtures of sugar, wa-
milk. and fruits may be
frozen with excellent results. The
mixture is turned into a bowl when I
it lis partly frozen and beaten to |

for a smoother product and increas-

I would like to pass this finding

Freeze." You can obtain it in six
different flavors and it is very easy
make your ice cream with this.
Just follow directions on the can.
The length of time for freezing
desserts in your mechanical refrig
erator depends on several factors,
in fact on the type of dessert you
freezing. You want to freeze any
of the types just as quickly as you
however and with your mechan
ical refrigerator, your controls can
be set colder and after dessert is
frozen, return controls back to nor
mal and then store your cream in
trays in freezing unit.
White or Angel Parfait
3-4 Cup Sugar
1-4 Cup Witer
2 Cups Whipping Cream
2 Eggs Whites
1 1-2 Teaspoon Vanilla
Cook sugar and water, stirring j
till sugar is dissolved, then without
stirring until spins a thread. Beat j
egg whites until stiff and add syrup |
slowly continuing to beat. Add flav- j
oring and cream which has been.
beaten until thick (not stiff). Freeze 1
in dessert trav or papei cups without !
stirring.
Pastel Angel Parfait
Tint thirds of above recipe pink,
green, and yellow. Partially freeze
the first layer before adding the sec
ond. Cut colored marshmallows may
also be frozen in the white parfait.
1 1-2 cups medium v hite sauce
Cut eggplant into 1-inch cubes |
and cook until tender in small
amount of boiling salted water.
Drain and arrange in layers with
salmon and white sauce in a cass
erole. Top with buttered crumbs
and bake until crumbs brown or
until heated.
Fried Breaded Eggplant
1 small eggplant
1 egg
3 tablespoons flour
1 tablespoon milk
1 teaspoon salt
Bread crumbs
Pare eggplant and cut into 1-2-
inch slices, then cut in half. Dip in
egg and milk mixture and then in
breadcrumbs. Fry in deep fat.
Drain on paper. May also cook In
a small amount of fat until crisp
and brown. Serve plain or with to
mato sauce.
Staffed Eggplant
1 medium sized eggplant
1 cup buttered crumbs
1-2 cup chopped nuts
2 tablespoons butter
1 tablespoon chopped onion
Eggplant adds a bit of variety to
vegetable list. It is also

1 lb. can salmon
of water only until tender, 5 to 10
minuted.
2 cupa diced cooked eupluit
1 cap milk
Salt and pepper
2 tablespoons flour
2 tablespoons butter
Hake a medium white sauce of
milk flour, hotter and aoaaoninia.
Add cooked eMplant and serve hot.

Pour creamed eggplant into an
oiled baking dish, cover with but
tered crumbs and bake until crumbs
brown. . . _
Salmon snd Eggplant Csseerole
1 medium sized eggplant
J teaspoon salt
1 tablespoon chopped parslcv
1 egg well beaten
Salt and pepper
Boil eggplant in salted water for
15 minutes. Drain, cut In halves
lengthwise or i-emove a slice from
top. Remove pulp leaving shell 1-2-
inrh thick. Cook onion in fat and
add chopped puln and remaining in
gredients. Fill shells, cover with
buttered crumbs and bake 30 min
utes. Vary by using 2 tomatoes, 1
tablespoon chipped green pepper,
and increase the onion instead of
using nuts.
Scrambled Eggs with Eggptaat
4 teaspoons butter
1 teaspoon salt
1-4 teaspoon paprika
1-2 eggplant
1-2 cup flour
4 eggs
4 teaspoons milk
Peel and dice eggplant. Mix flour
and seasonings aud roll eggplant in
this mixture. Fry eggplant in but
ter until tender and brown. Add
eggs beaten with milk and season
ings. Cook, stirring occasionally.
Serve on buttered toast.
