Wlnen Which Are “Sick.”
[Popular Science Monthly ]
The paternal tenderness with which wine
is regard: d, botu by its producers and
consumers, is amusing. They speak of it
as being "sick, describe its "diseases’ 1
and their remedies as though it were a
sentient being; and its diseases, like our
own, are now attributed to baccilli, bac
teria. or other inicrobi-i.
I‘asteur, who has worked out this ques
tion of the origin of diseases in wine, as
be is so well known to have done in ani
mals. recommends (in papers read before
the French academy in ffay ami August,
1H65) thatthea mierobia be “killed* by
flllingtheixitilesclo.se up to the cork,
which is thrust in >ust with sufficient
firmness to allow the wine, on expand
ing, to force it out a little, but not en
tirely, thus preventing any air from enter
ing the bottles. The bottles are then
placed in a chamber heated to tempera
tures ranging from 45 degrees to lot) de
grees ('. (113 to 212 delirees l ahrenheit,
where they remain for an hour or two.
They are tbe i set aside, allowed to cool,
and the cork driven in. It is said that
this treatment kills the mierobia, gives to
tbe wine an increased bouquet and im
proved color —in fact, ages it considera
bly. Both old and new wines may be
thus treated.
The “Turk’s Head” Gone.
[California Letter.]
The road which connects Cloverdale
with the geysers furnishes some of the
most r maul ic and beautiful scenery to
the touri-t s e_te of any im untiiin road in
Caliiornia. Ihretofure there lia'e bei-n
several natural curiosities which were in
teresting to look at, tbe mfist wonderful
of these being a perfect profile of a
Turk s head projecting from the top ot
a ledge of rocks several hundred feet
high " Turk s Head, ”as it was called,
has been viewed by many thousand peo
ple from all parts of the world, and nu
merous artists have taken pictured repre
sentations of its stony features, and .it
was said to be one <-f the most cutiousj
rock formations known in the state. Lur
ing the heavy rainstorm of the past week
the “Turks Head,” made shaky aid
crumbly by the storms and winds of hun
dreds ot Winters, came down with a ter
ible crash, nun red-, ot tons of ror-k
found their level in the bed of rulpbur
creek. The crash a d jar was so beavv
that it shook te.e window glass in tbetoll
house, whicu is situated several hundred

Individuality of thn Violin.
[Louise Andr-’w- In The O rrettt )
Entliusia-t c violinists have related
mar.emu* ii.ings of the capricious violin
and its lemmine coquetries <de Bull
used lo say that he frequently had to
coax and w heedle bis violin Without stint,
and to woo it by the geutiest caresses.
When it would obstinately refuse to utter
accordant notes, he was wont to rub it
mildly with good humor with a flannel
cloth, or to put it aside until its coquet
tish mood had pissid away. Others have
related their inability to control its chords
at times, and have declared the utter sub
jection of their wills to its own capricious
sweetness.
Toe indestructibility of the violin is un
para deled in the history of musical in
struments. It can be cracked and glued
again without injury it can have its
strings broken and be entirely dismem
bered and put together again without los
ing its individuality peculiarities of
which other musical instruments cannot
boast
Uthographie Stone*.
[Chicago Times.]
The discovery in ( alifornia lately of
considerable quantities of the peculiar
stone used by lithographers is tbe subject
of much remark in the papers of that

stones ha e been found at Kelheim and

Hanube, in La aria; but they have been
found also in Silesia, Eng and, France,
C anada and tbe West Indies They are
found in beds, commencing with layers of
the thickness of | aper till they reach tbe
dimensions of one and sei era! inches in
thickness, when the, are easily cut. being

Swallowing a Chicken's Heart.
fChicago Tribune.]
A romantic young waiter-girl at a hotel
tn Ontario, - an., came near losing her
life tbe other day by trying a foolish ex
periment She had heard an old saying
that any girl who swallowed a chicken’s
heart raw would have for a husband the
first male person she shook hands w.th,
tud believing the proverb, attempted to
twallow a chicken's raw heart, but failed.
The heart stuck in her throat and would
tot move either way, down or up. A
lector was railed in’ and arrived only in
ieason to save the deluded girl from M
