Silted bread crumbs 2 wineglasses of Nogv Pial Dry Vermouth
4 medium-large fillets of flounder, cut abouf^Snch thick
Season fillets well, dip them m melted butter and roll in bread crumbs. Place them
in a well buttered dish and add 2 wineglasses of Noilly Prat Dry Vermouth or
enough to cover the fish. Put dish in a very hot oven (about 400*F.). When fillets
are golden brown in color, pour the sauce into a separate pan, reduce a little,
and add some fresh butter When well absorbed, pour tbe sauce over the fish
