lecting meats. If you know noth¬
ing about purchasing meat, a
good butcher is your best friend

If you shop where meat is pre¬
packaged, these basic facts may
help you: Animals dressed for
market are divided lengthwise
through the backbone into two
parts, each called a “side.” Each
side is again divided in two parts,
the forequarter and divided hindquarter. into
Each quarter is
smaller cuts which are sold in
the retail market.
Price is based on tenderness,
grain of the meat, convenience general for ap¬
pearance and
cooking. Cheapest cuts are
shanks, plates and chuck. Many
good cook books have charts
showing the names of retail cuts
and how they should be cooked.
