Columbia was formed from Richmond County in 1790 to be¬
come the 12th county in the state. This central northeastern
Georgia county covers 306 square miles. Appling, now the
county seat, was important in America’s early struggle for
independence from England. Here, around 1772, Daniel
Marshal] successfully defied British law dictating religious
form, opening the way to new types of worship in this country.
Today, Columbia County is known for its dairy and poultry
farms and for the enormous Clark Hill Dam and reservoir.
The dam, which cost $46,000,000, stretches 200 feet across the
Savannah River and controls 70,000 acres of water. This lake
has become a popular recreation center. Other towns of note in
Columbia county are Harlem, Evan, Grovetown and Martinez.
In Georgia counties where the sale of beer and ale is legal,
the United States Brewers Foundation works constantly to
assure their sale under pleasant, orderly conditions. Believing
that strict law enforcement serves the best interest of the
people of Georgia, the Foundation stresses close cooperation
with the Armed Forces, law enforcement and governing officials.

Ted Van Dyke, Manager of Jas¬
per Park Lodge, celebrated moun¬
tain resort in Jasper Park which
is larger in area than the State
of Connecticut, has come up with
an Alberta specialty which does
honor to a province where beet
and steak dishes are a specialty.
Here’s Van Dyke’s recipe for
Alberts style charcoal broiled
steak:
t sirloin strip steaks
1 tablespoon dry mustard
1 tablespoon drops Tabasco butter
3 sauco r
V, tablespoon teaspoon garlic salt
1 small bay teat, vinegar crushed

very fine
Place steaks on an outdoor grill

quettes. For rare steaks, broil six
to ten minutes on each side.
Spread mustard sauce over steaks
wh|le last side is broiling.
To make mustard sauce, com¬
bine mustard, Tabasco sauce, gar¬
lic salt, vinegar and bay leaf. Mix

baked fresh salmon recipe. And
here is what they came up with:
t Rub six-lb fresh (scaled) salmon
With mixed salt, pepperand a

dish melt
six tablespoons butter, add the
salmon to the melted butter and
turn it in the dish to coat.
. Add three cups light cream, two
bay leaves, eight thin slices onion,
two cloves, garlic, and a few
sprigs of parsley. Peel four large
cucumbers, cut them into strips,
and place around the fish.
Bake the fish, covered, in oven
850* F., forty minutes, or until
fish is tender and center bone
can be pulled away easily.
■ Correct the seasoning and serve
in the baking dish, discarding bay
leaves, onjon slices, parsley and
garlic,
