Butterscotch Pound Cake
My family grew up with this cake, it is great for breakfast,
lunch, dinner-well it’s great anytime. If you’re breathing,
then it’s time for cake!
1 package Yellow Cake Mix, that’s right, straight from
the box.
1 cup Sour Cream
1 package Instant vanilla pudding mix
Vi cup Vegetable oil
4 Eggs
1 package Butterscotch chips
First, we need to get that oven hot. It needs to be at 350
degrees. Then we are going to combine everything except
the butterscotch chips, mix it all for at least 4 minutes.
Gently, because we don’t want to break them, add the
butterscotch chips.
We like to say, “fold them in”. Pour into a well, and I mean
very well, greased and floured bundt pan and bake for at
least an hour. The time we saved in mixing, will be used
in baking. Check to make sure it’s not getting too brown.
Some of the butterscotch chips will drop and form crusty
bits on the surface of the cake. Warning: this is a rich cake,
so you might want to serve a slice with ice cream. This is
an easy recipe, one that you will make again and again.
Whole Roasted Cauliflower
1 large cauliflower
The Magic sauce:
1 Cup mayo- the mayo is the sauce base
1 T Dijon Mustard , if you don’t have Dijon, plain old
yellow will be just fine
Vi t salt
Vi t black pepper
Vi lemon, juice 5 zest, the lemon adds another layer
of flavor , if you can’t get any zest, use the juice of the
whole lemon.
Vi cup grated parmesan cheese, Parmesan helps thicken
the sauce and keeps if from sliding off the cauliflower.
2 t smoked paprika
2 t chili powder
Look for a large cauliflower ( once you start eating it,
you will be grateful that you did ) When you start cook
ing, gently wash it, and dry completely, moisture is the
enemy of baking. Trim off any leaves.
Take the dry, trimmed cauliflower and put it in one of
your cast iron pans, sprinkle with salt and pepper, bake
for 30 minutes at 385. Once the cauliflower has roasted
for 30, using a spoon, cover that head in our magic sauce.
If you have a bbq brush, really get in there and work it in.
Roast for another 30 minutes, uncovered, until browned
and ready to eat.
You can slice the cauliflower like a cake , and serve
with lemon wedges. Once you master the roasting of
the whole cauliflower you can change your seasonings.
Mexican version with cumin, taco seasoning.
Fall flavors: poultry seasonings and sage
Indian inspired with curry, gram masala and Garlic
Lemon Alfredo: 2 lemons, Alfredo sauce and Italian
seasonings.
Greek: serve with a tangy yogurt sauce with lemon, dill
oregano, mint and feta .
Buffalo: add your favorite buffalo sauce to the mayo,
and serve with blue cheese or ranch.
This is a wonderful substitute for potatoes! Those who
want to watch carb intake will love the versatility of
Cauliflower.

I have come to the conclu
sion that the current emotional
state all of us are experiencing
is “covid-weary.” I’m copying
that phrase from somewhere,
but I think my fictitious defi
nition is appropriate for these
days. Covid-weary (KOH vid,
wihree) - adjective
1. feeling or showing tired
ness, especially as a result of
the neverending coronavirus
2. feelings of anxiety, wish
ing the coronavirus would go
away
We in the Jenkins County
School System have been
working especially hard since
August to keep our schools
healthy and safe. Our data
from August to December
shows a definite trend - the
numbers of sickness and posi
tive cases were higher in Au
gust and December - both
times after a “holiday.”
Those numbers went down
in Jenkins County and in our
schools as the holiday surge
eased. We were in school that
whole time. The schools have
actually been safe places for
staff and students! We typi
cally only had 1 or 2 isolated
positive cases at a time for staff
and/or students from Sept-Dec.
Our hope is that similarly we
will have very few (or zero)
cases again as our student and
staff population gets back into
the school routine.
However, as the numbers
of cases are rising as a result
of the holidays again - in our
county, state, and country - we
are diligently watching and as
sessing for signs that the virus
is spreading in our schools.
Our parents are our first
line of defense! All caregiv
ers please continue to look
for symptoms and keep your
children home if they are sick
or if anyone in the home is sick.
If there is even a “suspected”
case of the coronavirus, keep
your children home until test
results are received.
Several safety measures
are in place to help keep our
schools safe. We sanitize on a
schedule every day and every
evening! Have you seen the
lights on at night at the school?
That is more of our team -
cleaning our schools.
Our staff has a temperature
check as they enter the school.
The students have temperature
checks in the morning and
during the day. Our staff and
students are encouraged to
wear masks, clean their hands
frequently, and socially dis
tance when it is possible.
Parents are notified if any
student needs to watch for
symptoms or quarantine - that
is how we contain any spread
of sickness, whether it be the
flu or a virus.
Please be assured that our
mission is not to have an envi
ronment where the coronavirus
is spreading. The first sign of
spread among students or staff
will be a signal that we may
need to move to Learn From
Home for a couple of weeks.
There were several positive
cases and/or close contacts
over the break for staff and
students - those affected will
not return until the end of their
quarantine. If, because of this
surge, we have absences of a
significant number of staff such
that nutrition, academic classes
and/or transportation cannot be
conducted for the school, then
we would have another reason
to move to LFH for a couple
of weeks.
Prepare a daycare plan
for your students in case we
have to close the schools. Our
schools are prepared for the
possibility of a LFH schedule.
We have Chromebooks for
every student and they can
access and complete assign
ments at home. Teachers and
administrators will be available
during any possible closure for
questions via email.

Monday, Jan. 25: The Jenkins County BOE will hold their
January meeting at 5 p.m. in the BOE office.
Tuesday, Jan. 26: The Shepheard Community Blood Center will
hold the first blood drive of the year from 2-6 p.m. at the Jenkins
County Medical Center. Masks are required.
Tuesday, Feb. 2: The February meeting of the Millen City Council
will be held at 6 p.m.
Tuesday, Feb. 9: The Jenkins County Commissioners meeting
will be held at 4 p.m.
Monday, Feb. 22: The Jenkins County BOE will hold their
February meeting at 5 p.m. in the BOE office.
Saturday, Feb. 27: County Auction to be held at 10 a.m. at the
County Maintenance shop. Cars, trucks, and equipment will be
