Cooking With Para

This is our son-in-law’s recipe
for THE BEST barbacoa ever,
complete with his comments
and suggestions. As my mama
used to say, “It’s so good that
you want to lick the plate . . .”
Jemal’s Barbacoa
4 lbs. Chuck Roast
15 oz. tomato puree
8 cloves of garlic, smashed
8 oz. diced green chiles
1 onion, chopped
1/4 cup chili powder
2 bay leaves
2 Tbsp whole peppercorns
Juice of 3 limes
1/4 cup apple cider vinegar
salt and pepper to taste
1. Season the meat with salt and
pepper, then brown in a skillet
(or a dutch oven if you want to
do all of your cooking in one
pot) with a little olive oil, then
place into a crock pot on low
with all of the ingredients down
to and including the vinegar.
Cook on low for 6 hours.
2. Enjoy a relaxing baseball/
football/basketball game. Cheer
your team on to victory. Watch
with a cute little boy or girl for
good luck.
3. Remove the meat and shred
with a pair of forks. Strain the
broth from the crock pot and
reserve it.
4. Discard the sadly flavorless
vegetables. Frown a little as if
you wish there were something
you could do with them.
5. Return the meat to the crock
pot and combine with the rest

Jerry McMillan won the Best Traditional in the annual Christmas
Decoration contest. Mandy Roberts and Freedy Murdock won the
Best Fantasy.
Col. Stephen Oliver presented the bronze star to Major D. Slade
Burke. Slade is a 1986 Millen graduate. He led a squadron in the
US Central Command’s second busiest aerial port processing
153,000 passengers and 112,000 tons of cargo on 11,000 missions
while reducing airlift mission delays by 66%.
Mike Lane was honored for his service to the county by Henry
Young, EMS Director, during the EMS Christmas dinner.

The Board of Education recognized Mr. C.H. Elmore for his 14
years of dedicated service.
Mr. and Mrs. Glenn Wilkerson, Jr., proudly announce the birth of
their son, Hunter Chase, on Nov. 18, 1996. Chase weighed 7 lbs 3
oz and was 19 %” long. Maternal grandparents are Mr. and Mrs.
Donnie Saxon. Paternal grandparents are Mr. and Mrs. Tommy
Dunham and Glen Wilkerson, Sr.
Lamar Black, manager of Tillmanstone Farms has been selected to
receive the High Cotton Award given by Southeastern Farm Press
magazine. This honor makes Lamar the 1996 Cotton Grower of the
Year for the state of Georgia.

Mrs. M.E. Davis won the Best Overall Decoration while Mrs.
Gene Tinley won Best Window and Mrs. Sammy Strickland won
Best Door in this year’s holiday decoration contest
Dr. and Mrs. Herbert Butcher of Tenton, NJ arrived last Thurs
day to spend the Christmas holiday with their mother, Mrs. J.Y.
Aycock.
Mrs. Nancy Coleman Hutchens died Thursday in a Millen hospi
tal following a brief illness. Funeral services were held at bishop
Chapel Baptist Church.

ates as the proprietors.
Mr. Styring V. Wallace, 81, died at his home in the county Thurs
day morning after an extended illness. He was a retired farmer.
Mr. and Mrs. Needham Carswell spent Tuesday of last week in
Dublin where they attended the funeral of their aunt Mrs. Laura
Brantley.

You don't have to have a little
sombrero shaped dish for dip
ping the glasses in salt, but why
wouldn't you?
7. Salt and pepper barbacoa to
taste.
8. Serve with fresh fried com
tortilla taco shells and your
favorite taco toppings: lettuce,
mild cheese, tomatoes, guaca-
mole, hot sauce, sour cream, or
some nice refried beans would
all be good.
The first area where you can
improve this recipe is to correct
what I was careless about. I just
poured all of the broth back into
the pot in step 4, but the end
result was a little soupier than I
meant it to be. It's supposed to
be juicy, but not soupy. If you
let the broth cool while things
are coming together, you could
skim off some of the fat, then
add as much broth as you need
to get the kind of consistency
you want.
The second area is seasoning:
I didn't want to blow anyone's
ears off with spices, but using
more or hotter chili powder
would be a good idea.
The third way to kick this up
is to switch the meat to goat. It's
the most traditional protein for
barbacoa and is tough enough
to survive and benefit from long
cooking times. I have an Indian
friend who says that he finds
goat at a local halal butcher
shop. If you don't have enough
Muslims in your area to support
a butcher, a stringy bit of an
older buck would be tasty as
well.

Thousands of Georgians
receive pre-Christmas
rent, utility assistance

Nearly 20,000 Georgians received assistance with rent or utility
arrearages through the Georgia Rental Assistance program. The
state’s Department of Community Affairs, which administers
the program, reports they have dispersed more than $56 million to
qualified tenants and landlords.
Among these funds is $1.3 million for utility assistance.
“Recently, our processing team posted record-setting
perfomiances. In October, we assisted 4,898 families, often
processing and paying out more than a million dollars per
day to landlords and tenants,” said Christopher Nunn, DCA
Commissioner.
Commissioner Nunn said he and the DCA team are committed
to helping qualified renters remain in their homes. “I encourage
Georgians in need to apply for assistance with the confidence that
we will continue to work diligently to provide up to 18 months
of past-due rent and utility payments, regardless of the amount. I
also encourage Georgians to take advantage of the recertification
process that allows for future rental assistance,” he said. Apply
