BANANAS FOSTER
Bananas Foster is an
American dessert that
was invented in 1951 in
New Orleans, Louisi
ana, made with cooked
bananas served in a but
ter, brown sugar and rum
sauce. It was named for
Richard Foster, the chair
man of the New Orleans
Crime Commission and a
friend of famed restaurant
owner, Owen Brennan of
Brennan’s Restaurant.
14 cup butter
1 cup brown sugar
Vi tsp cinnamon
!4 cup banana liqueur
4 bananas, cut in half
length wise
!4 cup dark rum
4 scoops vanilla ice cream
Combine the butter, sugar
and cinnamon in a flambe
pan or skillet. Place the
pan over low heat and
cook, stirring, until the
sugar dissolves. Stir in
banana liqeur, then place
bananas in the pan. When
bananas begin to soften
and brown, carefully add
the rum. Continue to cook
the sauce until the rum is
hot, then ignite the rum by
tipping the pan or using
a flame starter. When the
flames subside, lift the
bananas out of the pan
and place four pieces over
each portion of ice cream.
Generously spoon warm
sauce over the top and
serve immediately.
