Select two small, solid heads of
hard cabbage; divide them in halves
from the crown to stem; lay the spilt
side down*and cut downwards In thin
slices. The cabbage will then be iu
narrow strips or shreds. Put into a
saucepan a tablespoon of clean drip
pings or nice fat; when fat is hot
put in cabbage, a teaspoon of salt,
three tablespoons vinegar and one
cnion, In which three or four cloves
have been stuck, boil two hours and
a hadf; if it becomes too dry add a
