Gingersnaps are excellent
when spread with a bit of cream

combination with baked halves
of squash.
Occasionally add sliced stuffed
j olives or a few spoonfuls oi pea-
I nut butter to white sauce to
make the flavor more interest
ing.
Chocolate nut candy bars may
be chopped and used as a top
ping for plain custard or tapicoa
of cornstarch puddings.
Trim crusts off stale bread and
tuck the slices in muffin pans.
Brush with malted butter and
bake until golden toasted. Fill
with creamed vegetables, meat
or fish.
Dried fruit and nuts may be
ground fine, flavored with or
ange rind, rolled into balls and
served as candv.
RECIPE OF THE WEEK
Meatball Pancakes
(Serves 6)
1 pound ground beef
1 teaspoon salt
1-8 teaspoon pepper ,
1 tablespoon grated onion
j i/ 2 teaspoon baking powder
6 eggs, separated
1 tablespoon chopped parsley
3 tablespoons melted fat
Combine meat, salt, pepper
and onion. Beat egg yolks, add
baking powder and parsley.
Blend with meat mixture. Fold
in stiffly beaten egg whites. Drop
by spoonfuls into hot fat. When
brown around the edges, turn
and brown other side.

TREND IN POLIO STILL UPWARD
Recent years have brought an
upward trend in incidence of the
mysterious and crippling infan
tile paralysis disease, A. B. Ham
mond, chairman of the Chattoo
ga County March of Dimes cam
paign declared today. He added
that 1948 marked the sixth con
secutive year of unusually high
polio incidence and urged greater
support than ever before for the
March of Dimes drive to replen
ish funds of the local chapter
and the National Foundation for
Infantile Paralysis.

nation. Further, these charts,
which have been published by
the National Foundation as-part
of its education service, indicate
that an epidemic in a given area
a year or two ago does not im
munize that area during next
summer’s polio danger period.
“A war does not end with the
■Signing of an armistice,” Mr.
Hammond said. “Neither is an
epidemic of infantile paralysis
over when the last new case of
the prevalent disease has been
recorded. There remains the
grim reality of the aftermath.
The greatest cost is yet to come—
the cost of after-care and re
habilitation of the stricken.”
Mr. Hammond cited various
instances throughout the coun
try where local chapters had
paid out record amounts for pa
tient care last year despite low
local polio incidence. Even with
out epidemics, many such chap
ters found it necessary to apply
for additional aid froth the
emergency fund of the national
headquarters, to care ipr those
stricken’ in previous ydffs-

mond declared. “Treatment of
last year’s stricken requires rec
ord funds in 1949. That’s why we
here in Chattooga County must
give 50% more to the 1949 March
