heating for serving may result
in soft textures and loss of
flavors or warmed over flavors.
Quick cooling is very impor
tant as this will stop the cook
ing and help retain the natural
flavor, color, and texture of the
product. It will also retard the
growth of bacteria that may
cause spoilage. Packaging and
freezing should immediately fol
low cooling.
Packaging material should be
moisture and vapor resistant.
Many foods can be packaged in
a container in which they can
be reheated. Those containing
broth or sauce should be packed
in rigid containers with wide
mouths. In such containers the
food is easy to get out, even be
fore it is completely thawed.
Here is a good hint to remem
ber if you are making pies to
freeze. If you use paper pie
pans, turn an empty one over
your pie and it makes wrapping
easier.
Is your measuring tape crum
pled and wrinkled with age and
use? If so, you can smooth and
restiffen it by ironing it between
sheets of waxed paper.
If juice from a fruit pie runs
over in the oven when you are
cooking it, shake some salt on
the stain. This will make the
juice burn to a crisp so that it
can be removed easily.
Here’s a suggestion for mak
ing an unusual dressing for
lettuce hearts. Add a little chili
sauce and perhaps a bit of
chopped sweet pickle to may
onnaise.

Speed kills, according to the
National Safety Council, because
it increases the forces which, in
an accident, turn useful equip
ment such as metal and glass
into deadly weapons.
And it kills because it in
creases the likelihood of an ac
cident. The greater the speed,
the less time you have to react
in an emergency. And. naturally,
it takes longer to halt a fast
moving vehicle than one moving
slowly.
