Keep Abreast of Times
Last April, Gov. Carl E. San
ders. as keynote speaker at the
Association County Commis
sioners of Georgia’s annual con
vention in Savannah, challenged
the association to establish
workshops designed to educate
the public to the need of merging
public services across county
lines. The ACCG accepted his
challenge.
The first of a series of ACCG
sponsored county service work
shops was held in Atlanta the
other day. The Governor was a
featured speaker among a num
ber of public officials appearing
on the program
“Now I know what my folks
used to mean when they said
something made them as proud
as an old hen with a new chick,
because I am unashamedly proud
to have been the inspiration for
this significant workshop and
all it portends for the future
progress ot our state." Sanders
said in his opening remarks, i
Then he went on to say:
“How can obsolete county
governments be reconstructed,
revitalized and modernized to
gear them to fulfill present-day
needs and to be adequate to.
the demands of future respon
sibilities? One thing is certain:

willingness to turn to the state
and national levels when it. is
not forthcoming from the local
I one. This means that if local
self-government is to survive . ..
then somehow we must work out
a more compatible arrangement
between needs and responses on
the local level.
Gov Sanders suggested that
there are “many areas which
offer golden opportunities” for
multi-county cooperation, such
as "school operation, road main
tenance. industrial development,
tourist promotion, development
of water and sewerage systems,
law enforcement, building air
ports and so on down the long
and growing list of modern so
ciety’s needs.”

SWEET POTATOES
Save those sweet potatoes!
One of the best ways of saving
this popular Georgia food is by
freezing.
You have three different
methods of putting the potatoes
in the freezer—baked, sliced, or
pureed. The size of the potato
is the main determining factor
in selecting a method.
In freezing baked sweet po
tatoes, select those potatoes up
to three and a half inches in
diameter. Grease the surface of
peeled or unpeeled potatoes with ;
fresh cooking oil or fat. Bake
unpeeled potatoes in a 375-de
gree oven until slightly soft or
until they are about three
fourths cooked This should take
about 15 minutes. Cool them and {
wrap individually in aluminum
foil or other moisture-proof ma
terial or enclose several potatoes
in quart-size polyethylene or'
mylar bags.
Three or four and a half inch i
diameter potatoes should be
sliced. In this method, cut the
peeled potatoes lengthwise into ■
slices one-half inch thick, scald

Job? Examinations Planned
Applications are now being
accepted for the 1964 Federal
Service Entrance Examination,
the U. S. Civil Service Commis
sion has announced.
This examination, open to col
lege seniors and graduates re
gardless of major study, as well
as to persons who have had
equivalent experience, offers the
opportunity to begin a career in
the federal service on one of 60
occupational fields. These posi
tions are located in various fed
eral agencies both in Washing
ton, D. C. and throughout the
United States. Depending on the
qualificiations of the candidates
starting salaries for persons ap
pointed from this examination
will be $4,690 and $5,795 a
year. A written test is required
except for those candidates who
have attained a sufficiently high
score on the Graduate Record
Examination Aptitude Test. Six
additional tests have been
scheduled. The closing date is
April 14, 1964.

minutes, cool and pack closely
in 16-ounce aluminum or pyrex
trays. Cover the slices with one
half cup sugar or with one cup
of cooled syrup. If the syrup is
used, mix equal portions of sugar
and water. Now, you can close
the containers tightly and
freeze.
In freezing pureed sweet po
tatoes, you’ll want to use those
over four inches in diameter.
Cook unpeeled sweet potatoes in
water or steam until they are
soft. Now, remove the peel and
put the potatoes through a sieve
or colander, adding one cup of
syrup to each five pounds of
potatoes. Again the syrup com
position should be of equal por
tion of water and sugar. Add one
tablespoon of lemon juice or
one-fourth teaspoon of citric
acid to each five pounds of
puree. This improves the color
and flavor of the final product.
Pack the cooled puree in freezer
jars or other rigid containers of
polyethylene, tin or waxed board
and then freeze.
Management Internships with
starting salaries of $5,795 and
$7,030 a year will also be filled
from this examination. An addi
tional written test is required.
Applicants for these positions
must file by January 16, 1964.
