Sweet-Sour Flavor Favors Franks

for newlyweds as well as career
girls who want to entertain.
What's more, the main dish
for this menu can be exotic,
states Reba Staggs, meat author
ity. Far Eastern Frankfurters
contain the vegetables for the
meal. The meal Is balanced by
lettuce and cottage cheese salad
and a hot bread with butter or
margarine; fruit - filled gelatin
with cup cakes makes the des
sert with coffee, tea or milk.
This is also a new guise for
frankfurters, a meat popular
with almost everyone. These
come packaged eight or ten to
a pound.

Yourself to Death
Scientific evidence has
been accumulating that diet
may be a factor affecting
not only the risk of heart
attack, but also the death
rate from heart attack.
A team of physicians from
the Atherosclerosis Research
Center in Montclair, N. J.,
recently reported on a five
year study of 200 men, half
of whom were placed on a
low-fat, cholesterol-lowering
diet The other one hundred
ate whatever they liked, pre
sumably a typical American
diet. The two groups were
carefully matched in all
other factors, including age.
At the end of five years, the
men in the unrestricted diet
group had a heart attack re
currence rate IVi times
higher than the fat-con
trolled-dlet group and an
overall death rate 2*4 times
higher.
In light of this and
other studies, the American
Heart Association has rec
ommended an eight-point
program of dietary control
to lower the risk of heart
attack:
1 Eat less animal (satu
rated* fat.
2 Substitute vegetable
oils and other polyunsatu
rated fats for animal fats
wherever possible.
3 Eat less food rich in
cholesterol.
4 If overweight, reduce
caloric intake
5 Apply these dietary
principles early in life.
6 Make sound food habits

7. Seek professional advice
if needed to avoid nutri
tional deficiencies when
changing the diet,
8 Adhere consistently to
the altered dietary patterns.

per, cut into julienne-style, *i
cup raisins and 1 cup water.
Cook slowly 5 minutes. Combine
■4 cup brown sugar and 2 table
spoons cornstarch; add an addi
tional *4 cup water and mix
well. Add to frankfurter mix
ture and cook, stirring occasion
ally, until clear and thickened.
Add ’4 cup vinegar and 1
package (9 ounces) Italian green
beans which have cooked ac
cording to package directions
and then drained well. Continue
to cook briefly until ingredients
■ have heated through and flavors
i are blended, from 3 to 5 min
utes. Serve at once, so green
beans do not lose their tempting
; color, surrounded by 1 can (3
ounces) Chinese noodles. This
' recipe gives four servings.

question, then, becomes:
Will changing the fat con
tent of the diet lessen the
risk of heart attack?
The complete answer is
not yet available. Numerous
studies, involving thousands
of people, are now underway
to provide the answer
Dr Menard M. Gertler of
New York University, re
cently reported on a four
year study of 490 men. His
findings lend additional
support for the general be
' that elevated levels of
cholesterol in the blood in
crease susceptibility to heart
attack. At one point in his
study. Dr. Gertler designated
groups of men on the basis
of gradually higher choles
terol levels. With other fac
tors fixed, he calculated risk
rates of all groups. The rates
rose with cholesterol levels.
In its 1965 statement on
diet and heart disease, the
American Heart Association
said "additional scientific
data have accumulated
based principally upon many
different kinds of research
studies These findings indi
cate that appropriate die
tary control may contribute
to the retardation or preven
tion of coronary heart dis
ease.”
The connection between
obesity and coronary disease
is an Indirect rather than a
direct one. Obesity aggra
vates two conditions, hy
pertension and diabetes,
which have also been iden
tified as heart attack risk
factors While overweight
cannot be called the cause of
heart and blood vessel dis
eases, physicians are firm on
this point—overweight is a
health hazard, whether you
have heart disease or not.
