Apples are not expected to I
be as plentiful this year, but
they are beginning to come in, j
and many homemakers will be
canning and freezing them.
Here is a recipe for Apple !
Chutney, which may be used as
a catsup.
APPLE CHUTNEY
2 quarts apples
1 quart brown sugar
2 quarts cider vinegar
2 pounds seeded raisins
1 small onion
Wash, peel, and core the
apples. Cook them with the
brown sugar and vinegar until
they are smooth. When the
mixture is thick, place it in a
crock and add the raisins
chopped fine, the onion, an
ounce each of white and black
mustard seed, two ounces of ;
ground ginger, one tablespoon
of salt, and two or three red '
peppers chopped fine. Mix the
ingredients thoroughly, heat
them, and let them stand I
overnight. In the morning place :
the chutney in scalded jars and
seal them.

Wash and cut apples into
quarters, without paring or |
coring. Place them in a preserv- :
tng kettle with just enough
water to cover, and cook
slowly until tender. Press
through a colander or sieve.
Measure the strained pulp. Add
% as much sugar as pulp to the 1
juice in which the apples were
cooked. Bring to boil, add pulp
and cook until mixture is thick ;
and smooth, stirring to prevent ;
burning. Spices may be added .
if desired. Pack into clean, hot
jars. Seal immediately.

corn relish to eat with dry
beans and peas during the
coming winter. This is an old
favorite and makes 12 pints:
CORN RELISH
12 cars of corn
5 large red peppers
2 stalks celery
2 medium size onions
5 large green peppers
2 tablespoons salt
1 pint water
I pint cider vinegar
1 cup sugar
1 tablespoon mustard seed
1 tablespoon ground mustard
Remove seeds from peppers
and chop them fine. Chop
celery and onions also.
Combine with seasonings,
vinegar and water and cook 15
minutes. Cut corn from cob
and add to mixture cooking 10
minutes more. Seal at once in
sterilized jars.

Another favorite is this:
PICCALILLI
1 peck green tomatoes
5 pounds cabbage
6 peppers sweet
4 onions medium
1 cup salt
Chop and mix tomatoes,
cabbage, onions and peppers.
Add salt and let stand over
night.
3 pints vinegar
1/3 pint sugar (according to
taste) '/i pound mustard
seed
2 tablespoons celery seed
1 tablespoon ground horse
radish
Boil vinegar and seasonings
and add the other ingredients.
Heat but do not boil and pack
hot into jars. Sea) at once.
Makes 1 2 pints.

Two additional Chattooga
High School seniors have been
notified that they will be in
cluded in the seventh annual
edition of Who’s Who Among
American High School Stu
dents, 1972-73.
Dixie Blanchard, daughter
of Jack Blanchard, 105 River
side Drive, is active in the FTA
Club and the student council.
She also participated in many
church and community activ
ities. She serves as secretary of
the Training Union Class of the
youth choir at Summerville
First Baptist Church.
She plans to attend Atlanta
Business College.
Linda Dale Hogg will also be
included in the annual publica
tion. She is the daughter of Mr.
and Mrs. Robert Hogg of
Menlo.
The student is active in
church, school, and com
munity activities. Her occupa
tional goal is in nursing.
Students from more than
18,000 public, private, and
parochial high schools through
out the country are recognized
for their leadership in aca
demics, athletics, or com
munity service. Less than two
percent of the junior and
senior class students nation
wide are awarded this recogni
tion.
In addition to having their
biographies published in the
book, each of the students will
compete for one of ten SI,OOO
scholarship awards funded by
the publishers, and will be
invited to compete in the
firm’s annual “Survey of High
Achievers” later in the aca
demic year.

('over with boiling water and
let stand for 5 minutes, and
dram. Add vinegar, sugar and
salt and boil mixture 5
minutes. Pour into clean, hot
jars and seal immediately.
