HOW 'l‘g SELECT
AND BUY MEAT
There are many ways to
stretch the meat dollar.
Compare meat prices of
comparable advertised items
and sh:gl for the best bu¥s,
considering time available for
preparation and the tastes of
your famil!.
Take advantage of sgecial
ly priced meats by purchasing
enough for several meals, pro
viding refrigerator or home
freezer space is available,
Compare the cost per serv
ing rather than the cost per
ggund. Meats with minimum
ne and fat may cost more per
pound but less momifi &r ser
ving because there will be more
servings to the pound. For ex
ample, compare the total cost
)f the amount needed of
boneless chuck meat versus
short ribs.
Cook meat at a low
temperature to cut down on
shrinkage and loss of moisture
resulting in more meat to
serve.
Use the li%uid in which the
pot roasts and stews are cook
ed to prepare gravy or sauce to
serve with the meat, since the
liquid lfn'ovides food nutrients
as well as flavor.
Stretch ground beef and
sausage meats with pasta and
vegetgles such as dried beans,
lentils, peas and rice.
HOW DO YOU CALCULATE
COST PER SERVING?
Divide the cost fier pound
of the meat you are buying by
the number of servings you ex
pect to fit Ker %ound.
WHEN BUYING
UNCOOKED MEAT,
HOW MUCH MEAT
SHOULD BE ALLOWED
FOR EACH SERVING?
This depends upon the
amount of edible lean meat in
each cut after cooking and the
needed serving size. For a
3-ounce serving of cooked meat
allow:
Boneless meat — Y to
Ys-pound per serving (ground
meat, meats for stews and
soups, boneless roasts and
steaks, liver and other variety
meats).
Bone-in meat — % to
1/z~gound Eer serving (roasts
and steaks with moderate
amount of bone).
Bony meat — % to 1-pound
per serving (spareribs, short
ribs or tails, lamb riblets).
Three ounces of cooked
meat is considered a serving,
but more than one serving may
be desired by some %eople.
WHEN BUYING
FULLY COOKED MEATS,
HOW MUCH SHOULD
BE ALLOWED?
Fully cooked meats such as
franks, salami, bologna, cold
cuts and sausages are 100 per
cent edible. One or two links or
two slices are usually con
sidered a serving.
Secretary of Agriculture

he Food Security Act of
