David Snow will be offering a
Tennis Camp beginning Mon
day, Jul.l‘y 21, and going
through Friday, July 25, from
9:30-11 o'clock each moring at
the Summerville Recreation
Department courts. The fee for
the camp will be S2O. For that
fee, the students will receive
seven to eight hours of tennis
instruction consisting of
stretch exercises, how to grip
a racket, the forehand, the
backhand and the serve. They
will also receive instructions on
how to keep score, tennis rules
and how to develophthe winn
ing edge. Alongl with all the in
struction, each student will
receive a certificate along with
a camq T-shirt. This camp is
for girls and boys ages exght
through 13 years of age. For

scheduled for Saturday, July
12, and the Mayor's Second
Annual Old Timer's baseball
game. Starting at 1 p.m. the

INFORMATION IN
HOME CANNING
The first publication on
home canning was issued by
the U. S. Dept. of Agriculture
(USDA) in 1809. We've come a
long way since then, thanks to
continuing research.
When we use up-to-date
home-canninge recommenda
tions, we can be confident that
our products will be safe to eat.
However, many home canners
are usitgg old instructions with
outdated methods. A good ex
amgle is oven canm:;s. which is
no longer considered to be a
safe canning method.
Likewise, old instructions
for water bath processing low
acid foods (Vegetables, meats,
fish, poultr{,) are not safe. To
destroy the bacteria that cause
botulism poisoning, these low
acid foods must be processed in
a pressure canner.
Recent research has led to
changes in USDA canning
recommendations just within
the last few years. For exam
ple, the recommended process
ing time for e?plesauce has
been lengthened, and there are
no lon%er any recommenda
tions for canned strained
s?uash and pumpkin because
of safety concerns.
Tomato canning recommen
dations have undergone many
changes in recent years. Until
researchers can determine ade
quate processigg times, the
raw pack method is no longer
recommended. Processigfi
times for the hot pack meth
have been lengthened.
Because, home canning
recommendations continue to
change, it is crucial to have cur
rent instructions. Check the
date on the references you are
using. The Ball Blue Book was
last revised in 1985. Look for
a 1983 copyright on the latest
Kerr Home Canning & Freez
ing Book, and a ‘‘Revised Edi
tion” on the front of the Ber
nardin Home Canning Guide.
The Georgia Cooperative
Extension Service pubfigations
were revised in 1984. So Easy
to Can and So Easy to Freeze
have been replaced by a more
accurate, 275-page book, So
EasY to Preserve. It is
available for $6 through your
county Extension office. l'?’,ood
preservation pamphlets were
also revised in 1984 and 1985.
They are available free from
your county Extension office.

Many pieces of canning
equipment are a one-time in
vestment. Pressure canners
and water bath canners fall in
to this catefi:ry. Watch for
sgecials on these two items in
the coming weeks.
A pressure canner is need
ed to process low acid
vegetables such as green
beans, butter beans and
squash. Two basic types are
available. One has a dial-type
%auge to regulate the pressure.
he other has a weighted
device. Both work satisfactori
ly when directions are careful
ly followed.
A boiling water bath canner
is needed for canning fruits,
pickles and jams. Be sure to
take a pint or quart jar
(whichever size you will be can
ning in) along when makit(xigbg
gurchase. The canner shoul
eep enough to allow two or
three inches of water to boil
over the top of the jars. A
pressure canner (without
gauge) can double as a water
ath canner if it's deep enough.
Take a i'lar inventory and
decide whether or not you need
to purchase new jars this
spring. Inspect canning jars on
hand for nicks and cracks,
especially around the top edge.
A nick could prevent a good
seal. Also remember that ver
old canning jars become brittg
with age and can break under
pressure and heat. If you need
to purchase more Lars. watch
for specials or look for stan
dard canning jars at garage
sales.
A “must’ each season is
new lids. Throw away used lids.
The screw bands are reusable
if they are not bent or rusted.
Also ge sure of having reliable
canning instructions before
you begin.
