the first hint of cooler weather begins to be felt in the old
bones, it’s time to produce sorghum.

SOME FOLKS like watching football in the autumn.
Pollard likes to make sorghum.
The 58-year-old craftsman always gathers up a few close
friends and they head to his sorghum cane patch.
There are several steps involved in making sorghum ac
cordir:ig to Pollard. Specialized equipment that is difficult
to find is needed.
Pollard made or converted other equipment to his own
use.
He has made four of his own sorghum cookers, also
known as an eva?orator an. The eavporator pan is about
eifht to nine feet long an(F is about four feet wicfiz, It's divid
ed into smaller compartments and the bottom cooking sur
face is copper. Copper has no effect on the taste of sorghum.
Pollard arso converted his sorghum press from one that was
mule-powered to one tl}at is motgrized.

HE GROWS his own cane.
“The entire process is done mainly by hand including
the harvesting,”’ Pollard said. The sorghum cane takes
about three to four months to mature and then it is ready
to be harvested.
“You pull the leaves or blades off each cane, which is
known as stripping it. Then you cut the tops of the cane
