The least watery and most albumi
nous part of the potato lies directly
under the skin and as this is the best
part of the vegetable, potatoes should
be boiled in their jackets and peeled
after cooking.
A little stiff hand brush is a big
help in preparing the tubers for cook
ing.
A few sprigs of mint cooked with
small new potatoes that are to be
served plain with butter give them a
tang.
New Potatoes in Egg Sauce.
Eight or 10 small potatoes. 1 1-2
cups milk, 1 egg yolk. 2 tablespoons
butter, 1 dessertspoon flour, 2 tea
spoons minced parsley, 1-2 teaspoon
lemon iuice (optional), salt and pep
per, 3 TOrd boiled eggs.
Scrub potatoes and cook in skins.
Peel and keep hot. Make a sauce by
melting butter, stirring in flour and
adding milk slowly till sauce thick
ens. Let boil five minutes. Then add
yolk of egg, parsley, lemon juice, salt,
pepper and chopped hard boiled eggs.
Cook until the yolk thickens the
sauce. Add potatoes and reheat over
hot water if necessary.
This dish might be served for lun
cheon with a fresh salad to form a
well-balanced meal.
Scalloped Potatoes.
Five medium sized potatoes, 2 ta
blespoons butter, 2 tablespoons flour,
salt and pepper, mustard, 1-2 small
onion. 2 cups milk.
Pare and slice potatoes. Put a few
slices of onion in the bottom of a
well buttered baking dish. Add a lay
.er of potatoes. Sift over about two
flour, a dash of musthrd,
salt and pepper. Dot with bits of
butter. Add another layer of pota
toes. flour and seasoning. Continue
until all the ingredients are used.
Pour over milk and cook one and one
fourth hours in a moderate oven.
Potato Ribbons.
Potatoes, fat for deep frying, salt.
Pare potatoes and cut a strip round
and round one-hftff inch wide anti as
thin as a paring. Cut this into six- |
inch lengths. Tie in loose knots and
fry in deep fat to a golden brown.
Drain on heavy paper and sprinkle
with salt. These ribbons may be pre- {
pared in the morning and served cold j
or reheated in the oven for dinner.
New Potatoes Creamed.
Little potatoes are best. Wash and
scrub or scrape off skin. Drop into
boiling salted water. Allow 1 table- (
«poon salt to 2 quarts water. Boil
until tender, but not overdone. For '
8 little potatoes, allow 4 tablespoons |
of butter and 1-2 cup cream or top >
milk. Melt butter, add cream and 1
when hot. but not boiling, add pota- j

toes. Cook over hot water for ten
minutes.
Potatoes With Cheese.
Two large potatoes. 2 eggs (whites),
1 yolk of egg, 1 1-2 tablespoons grat
ed cheese. 2 tablespoons milk, 2 ta
blespoons butter, 1 teaspoon salt,
oepper. \
Scrub potatoes and bake in skins.
Remove from oven, cut in halves and
scoop out inside. Put in small sauce
pan and mash. Add cheese, butter,
yolk of egg. milk, salt and pepper.
Mix well while heating. Beat the
whites of the eggs till stiff and dry
and add to first mixture. Fill the
skins with the mixture and bake 8 or
10 minutes in a very hot oven. If
the potatoes are not big enough for
each half to be “a serving.” use four
potatoes and cut off the tops. The
other ingredients are the same as for
2 large potatoes.
