Macon, Ga.—"“Look here,”” said one

hours. The pistol was pulled while

Caulifiower is a vegetable which ap
peals to all tastes, and it is also one
of the most nourishing of our vege
tables, and in price practically within
the reach of all. Like all vegetables
for boiling, it requires care in cook
ing. First soak the caulifiower in
salted water for an hour, drain and
leave it whole cr break it into sprigs
if preferred, removing the outer
leaves. Then put it into & large pan
full of boiling ‘salted water and bolil
till the green parts are soft.
Root vegetables, among which are
included sea kale, celery, artichokes,
turnips and carrots, are best boiled
in unsalted water and the heat must
not be too fast and furious, or the veg
etable will become tough. Parsnip
{s one of the many vegetables which
are unappreciated, because it is rare
ly cooked in a fashion which makes
the most of its flavor. It should not
be watery when served, but sent to
table thoroughly dry with butter
sauce.
Beef Rolis.
The remalins of cold roast or boiled
b?t seasoning to taste of salt, pepper
a md herbs; puff paste. Mince
the beéf¥tolerably flne, with a small
amount of its awn fat; add a season
ing of pepper, salt and chopped herbs;
put the whole into a roil of puff paste
and bake for half an hour or rather
longer should the roll be very large.
Beef patties may be made of cold:
meat by mincing and seasoning beef
as directed above and baking in a
rich puff paste in patty tins.
! Apple Butter.
Pare and quarter apples and cook
them in just enough water to keep
them from burning; about a pint of
water to four quarts of apples; cook
until very soft, then run them through
a sieve and add half as much sugar
as pulp. To four quarts of apples use
/half a teaspoon of whole cloves and
cinpamon tied in a bag. Cook until
gnod and thick. y

Benator John Sharp Willlams tells
of a negro lad in a southern town who
was not the least zealous of Uncle
Sam’s servanis. One day when the
mall bag. for that town was thrown
{from the trals the pouch was caught
up by this diminutive courier, who
started off, as was his wont, on a brisk
trot to the post office.
As he was rounding a corner of the

Millions for Anti-Tuberculosis Work,
Money to the amount of over §l4,
500,000 was spent in anti-tuberculosis
work duricg the yoar 1511, according
to the third annual statement of ex
penditures in the war against con
sumptiion issued by the National Asso
clation for the Study and@ Prevention
of Tuberculosis. The statement i 8
bated largely on reports received from
anti-tuberculosis agencies in all parts
of the United States.
By far the largest item of expense
was that for treatment in sanatoria
and hospitals, and for the eretction of
institutions of this kind, over SII,BOO,
000 being spent for this purpose
alone. Dispensaries for the examina
tion and treatment of tuberculosis
spent $850,000, and associations and
committees in their educational cam
paign against tuberculosis spent $500,-
000. The remaining $1,300,000 was
spent for treatment {in open-air
schools, prisons and hospitals for the
fnsane, and also for the work of
state and local boards of health
against tuberculosis.
