Saving Meat in the South
There are certain established rules among
rooß t farmers for putting up Beef and Pork,
and any innovations upon those rules would
he as bad as altering the laws of the Medes
and Persians; and the result is, that at least
one-third of the meat attempted to be cured
here is either tainted or lost entirely. Some
few years since we found a receipt for saving
beef in the summer months,in an agricultural
paper, and as we had an unruly steer that
had not civility,enough to wait for the gather
ing of the crops before he roamed the pea
field, we were constrained to put him into
the barrel, although it was the hottest weath
er of August. We followed that receipt, and
never saw finer and sweeter meat from the
famed Fulton market. We have never hesi
tated since, summer or winter, whenever we’
wanted beef, to kill and pack away, and have
never had any but the sweetest meat. Here
is the method, try it, you who have fine young
beeves that are falling away daily, waiting
for weather cold enough to kill:
Cut the meat into convenient pieces for pack
ing, and wash each piece in clear cold water
taking care to extract all the blood. Now*
let is drean well, and to every hundred
pounds of meat, take four pounds of pulver
ised RockJSalt, and four pounds, of the best
New Orleans Sugar, mix these well together,
and rub each piece of meat well with the mix
ture. Have now a barrel perfectly sweet, and
commence packing the piecea into it as com
pactly as possible, layer upon layer, until the
cask is full. Npw apply a follower on the
top, with some weights to keep the meat in
its place, and either with a close head or good
cloth, cover over the barrel. In twenty-four
hours it will be filled with pickle, and will
keep as well in J uly as January. Families in
towns and cities, that wish only to pickle a
small quantity, may put it down in jars, tak
ing the same proportionpf salt and sugar as
to the hundred pounds. ,
And now as winter opens so mild, what is
to be done with our porkers ! Corn a dol
lar a bushel, and the weather too warm to
kill. Hogs will sat the value of their carcas
ses in a short time, what is to be done? We
answer, kill your hogs whenever you are ready
especially if there is a white frost. Ail the
pork requires for safe keeping i 3 once to get
COi \d to the bone, this it will do in one night.—
Rub 'be hams and shoulders well with fine
salt ana sugar, pack them close in a tight
cask, and vour a pickle strong enough to bear
am egg ever them. They may be taken out at
the proper and smoked, and may be re
tured to the pickle again or not. The sides
may be made into Piekled Pork , or may be
pickledjfor smoking. For pickled pork, noth
ing but the clean sides should be taken, this
should be cut into small convenient pieces for
packing, and should be packed in rock salt.
First give a layer of salt to the bottom of the
cask, and then pack pieces of ~ pdrk in edge
ways, as close as they can be packed; now an
other layer of rock salt, and so on until the
cask is full. Now make a pickle strong
enough to bear an egg, skim as it is scalding,
adding half a "gallon of molasses to it, and
when perfectly cool pour it over the pork.—
When the sides are to be smoked the same
process will answer, except that Liverpool
salt will do in the place of rock. Meat thus
cured will neyer_ be subject to flies or bugs,
and is safer and uctter every way than the
ordinary way of curing. It is well to draw the
pickle some two or three times' in the year,
saold and skim it, and then return it, this
will be certain to preserve it. Doubters, try
it.
Duelling in France. —The National As
sembly has just given proof of its determina
tion to maintain the practice of duelling a
mong its members. This crime is punished
very severely under the French laws, and the
ordinary citizen who kills his man is in danger
of passing a few years and perhaps his whole
life in the galleys. But no member" of the
Atsembly can be arrested without the special
permission of that body. And as party pas
sion runs high, that body has thought it ne
cessary to establish the practice of duelling, in
order to insure decency of conduct among its
members. Already we have had some forty
duels among them, and what figure the num
ber will attain can only be guessed at. Pierre
Bonaparte fought five in one afternoon, and
hurt nobody, much to his own regret, for he
is a regulor fire eater. M. Thiers was out
.once; that dumpy little man crossed swords
■with the long and lanky M. Bixio, who might
.have trussed him up like a lark if he had wish
ed, but who was s > much amused by the fun
ny motions of his adversary that he disarmed
Jaim and let him go scot free. — Paris Letter .
Distressing Occurrence. —The Florida
"RepuOlica.’t gives an account of a most dis
tressing occurence in Ware county, Geor

Cotton. —The sales to-day were 1700 bales
at 124 to 134 cents. Former prices were sus
tained.
Augusta Market: January 3—P- M.
COTTON.—The Market has been quiet to-day
and the sales reach 3 or 400 bales at easier prices.
Most holders have withdrawn their offering stocks
rathei than submit to any decline, and all parties
seem anxious to receive the next steamers advices
before operating further.
THE RlVEß.—Continues in excellent boating
order.
CHARLESTON, Jan. 3. Colton—' The ac
counts b_v the Africa which reached us in the
earlier part of the preceeding week, exercised
quite a favorable influence over our market, which
prior to their arrival, was in a most languid and
depressed state. A fair demand sprang up almost
immediately on the receipt of these advices, which
wasjpllowed by a decided reaction in pr ces, and
when we closed our inquiries, preparator to our
report of the 27th ultimo, an adrauce of |c. was
established in prices, bringing Fair quality up to
13c. The market opened on Friday last with a
good demand, and purchasers seemed disposed to
operate, to a moderate extent at leas', at this im
provement, but the advancing tendency in prices
did not mee < their views, arid tUey consequently
bought sparingly. The article was also m good re
qeston Saturday, but dealers, as on the preceed
ing day, were unable to agree about prices; the
position ofholders, however, was strengthened iu
ring the day, buyers having in some instances paid
prices they had previously refused to give. The
transaction s on Monday showed a general yielding
to the terms of holders, prices liav ng been more
decidedly in their favor. Thus stood the market
when the trade were put in possession of the Bal
tic’s news, which reached here on Monday night.
At the opening of the market on Tuesday, holders
immediately advanced their rates, and at the
close ot business on that day, they had realized
an improvement of* to gc. The market has
been very quiet during the last two days, owing
to the inciement state of the weather, and
the very hLh prices demand for the article.—
We have changed our quotations to correspond
with the position of the market at the close of the
week, and it will be seen on comparing them with
those published m our review of the 27th ult. that
prices are § to *c. higher than they were at that
time. The business of the week may be summed
up as follows, viz : Friday, 1028 bales; Saturday,
1500; Monday, 1623; Tuesday, 1600; Wednesday,
500; and Thursday 327—making an aggregate of
6578 bales, against the receipt in the same tune
of 6636 bales. The transactions comprise 11 bale '

Corn.— I The receipts of Corn during tb ® n !J r * ek
reach 16,500 bushels Baltimore, about 10,JW bu

not been sold when we closed our report. Some
5 000 bushels were sold in the fore part of the
week within the range of our quotations—7o a
73c.—but it remains to be seen whether the mar
ket will su-tain these priees, under the accumu
lation in the supply. Some 2,000 buffiels came to
a dealer. There have been no arrivals from
' North Carolina, and as we have bo transactions to
report, our preseat quetations must be considered
nominal. . , ,
Bacon. —The transactions of the week have
been very limited. There is no stock on the mar
ket to operate with, and our quotations for Sides
and Shoulders must for the present be considered
nominal. , , .
Freights. —The current rate to Liverpool during
the week has been |d. for Ootton in square bags;
a vessel, however, was engaged at a fraction un
der n consideration that she was to receive quick
despatch. The Havre rate is the same as form
erly, viz : square bags Cotton |; Rice 2,A0. The
New York rate is 5 16th for U : otton, and $1 for
Rice; and to Boston 5-16ths for Cotton and $1 per
tierce for Rice.
Cotton Receipts.—The amount of Cotton re
ceived in Griffin from the beginning of the season
till Ist inst. is 22.928 bales. Less Cotton was made
in this vicinity iasl year than in the preceding,
yet the receipts exceed the preceding year sev

CHATTANOOGA. Jan. I.— Cot'on —The re
ception of the news brought by the steamer Afri
ca has given our Cotton market consider ble ani
mation, and prices on all descriptions, have ad
vanced * a cent on prices pf id immediately pre
ceding her arrival. Sale was made yesterday of
100 bales, at 11* aU| cents. There is
rable quantity on the market which could be sold
at the above rates, bet holders in most instances,
ask a higher figure. A . .

Pneumonia .
This very common disease, if taken in the out
set, it cured in a day or tiro by giving a fuli dose
of Dr. E. Cook's Pills, to be followed every three
or four hours with the Anot ne Cough Drops, reg
ularly, until relieved.
The Rev. Mr, Stevens gives the following case:
Macon, December, 1818.
Dr. Little— ear Sir : Your Anodyne Cough
Drops answered me a very valuable purpose. One
of my servants, of full habit, was most violently
attacked with pleurisy together with a sore throat
and cough, although a serious case, I was not
informed of it for ten hours ; when 1 began giving
your Cough Drops very freely, and applied a hot
pepper poultice to the chest. After a few doses
the pain and couijfy were relieved, and a free ex
pectoration established, which was followed by
a speedy recovery.
