To Make and fark Bauer for Winter
Use.
First of all, the milk must be skimmed
at the right time. The best butter makers
do not wait until the milk ha Jabbered,
but skim it when it is the leas jit sour to
the taste, which is easily ascertained.
When milk sourß before it is skimmed, the
cream appears thicker, but in reality it is
not. Sannet tried the experiment with two
equal quantities of milk. The one that was
skimmed just before souring—that is in
thirty hours—made thirty pounds of
butter; the other, allowed to stand sixty
hours, yielded twenty-seven pounds. When
a milk room has an even temperature, say
sixty degrees, all the cream that is desirable
for butter will rise in thirty to thirty-six i
hours. It never should stand an hour long- i
er. The cream after this period is deprived !
of the delicious flavor and aroma so essen- i
tial to the taste of good butter. Os one ,
thing we are certain, from many experi- j
ments, the sooner the cream can be made j
to rise, the better is its keeping qualities ,
All travellers informus that in London and
Paris the butter far exceeds ours. One of !
the chief points with their dairy women is
to skim the milk at the right time. The !
most celebrated butter in the New York |
market is from Orange county, and they
adhere strictly to the thirty-six hour rule.
Cream must be sour to make butter, this
is a fixed fact in our mind. In Winter,
when the cream foams and bubbles in the
churn, and refuses to come to butter, it is
because it has not experienced a change.
The weather has been too cold to allow of
it, and we add a table-spoonful of pow
dered allurn, to produce the desiredj-esults.
The cream which boiled and raged like a
mad creature is subdued, and in a few mo
ments the welcome plas t announces the
butter.
Tha Hammer has been cold, damp and
mouldy in its tendency. Cream is easily af
fected by the atmosphere. Our dairy con
sists of one lovely Alderney, Juno by name.
Hwectas.june roses in her milk, golden as
its buttercups her cream. But it must
stand a week before enough is c llectcd to
churn. Juno supplies a family of six with
milk and cream arid butter, though she is
but three years oil last June, and is far
row this year. Something must be done
to keep the cream fresh. On delibera
tion, we decided that if a table spelful
of powdered saltpetre must be to
every four pounds of butter put down for
Winter use, why not put one teaspoonful
of it into the first cream we put in the
pot, at and stir it up with every fresh addi
tion? It is done and the results are most
happy. We seek medical information. Are
its effects injurious? Not all; taken in large
quanties, likeepsom salts, it is poisonous but
like most poisons, efficacious in infinitesi
mal doses. All corned beef, hams, etc.,
are pickelcd with its aid. It cannot hurt
our butter; so we continue the process,
and our cream retains its fine aroma. The
butter-milk is prooouneed by connoisseurs
delicious. Wc beg our readers who are pre
paring butter for Winter use to put salt
petre in the cream as it collects. We make
all our table butter from this one cow;
its flavor and color are unsurpassed by
Philadelphia butter, and we add no color
ing matter now, while we know that the
far famed “Conlinental” butter is colored
with annotto. In Winter we color with or
ange carrots, grated or with yolks of eggs,
preferring the latter. The churns of the
present day are a groat aid in working out
the buiter-milk; still, butter paddles are
needed, few women having hands and
wrists strong enough to refuse their aid.
We think that butter paddles might be
manufactured like a large fork, or in imi
tation of four fiugers and a thumb, which
would greatly hasten the flow of butter
milk. Cannot some Yankee youth benefit
by our suggestion? When the butter is
waxen in texture, as all Alderney butter
is after a little moulding, and it ceases to
color the water which drips from the ice
(we never wash butter; the sugar of milk is
soluble, and the water takes away the
sweetness of the butter—that is our experi
ence,) then we work it into l ikes which
are placed in a stone jar containing a brine
made thus:
To one gallon of water add three quarts
of fine salt, one pound of saltpetre, one
pound of sugar. Boil and skim well, strain
through a cloth, and, when cool, turn
upon the butter.
This brine has ko-1 butter for us the
year round. We are now using butter for
cooking purposes made last September,
put down in a firkin, with tablespoonful
of powdered and sifted saltpetre, and of su
gar, for every four pounds, and it is better
than much of the butter that will be mar
keted this year. It has no odor or taste
which would indicate its age. It has been
kept in ao ice bouse since June, entirely
covered with brine.
We consider butter made in September
and October much more desirable for
table use in Winter than that made in
June. The reason is obvious—it has not
had to endure tho Summer’s heat.—

readiness before tho weather becomes too
cool, and the plants put into them.
In less than a dozen years we shall do
our plwing, cultivating, harrowing, etc.,
t y steam, (Jut in the meantime, farmers
who keep six, eight, or ten horses, want
implements that can be used with four
horses abroast.
Some people seem to doubt the ability
of the insect that stings our plums, to fly.
If they will cut oft' the head of one, his
wing caps will he so loosened that they
may be pickod up with a knife. Under the
caps will be found wings.
The kitchen is more important than the
parlor. It should be kept perfectly clean,
well lighted, properly ventilated, and sup
plied with ueoessary conveniences. Dry
wood and a brisk fire, aud abundant supply
of soft water, will greatly facilitate the
labor ofhousowilo or servants.
Do not put in grain of any kind if not
cured. It will surely sweat and mould.
Good-bye to your fodder then, and you
will have musty grain. There is nothing
so line as to havo your barn filled with
bright, solid grain, and bright, fragrant
hay. Begin in time and watch your
opportunity; work now if never.
Make tho farm earn its own improve
ments aud you will be happy. If you know
an investment must pay at least 10 per
cent, go in for it. If it will pay 20, you
may borrow money to make it. If you.'wish
to make farming pay, spend no money lor
extras; or. if you do so, do not charge
it to the farm.
The colorless vinegar known as “wine
vinegar,’’ so much used by the pickle
makers, is prepared from diluted alchohol,
usually iu the form of whiskey. It is
quite as wholesome as any other vinegar,
but far less agreeable than that made irom
cider, as it lacks the pleasant aromatic
qualities derived from the fruit.
There are various kinds of trees, which,
when out in the Winter, are liable to in
jury from the ravages of minute worms,
causing powderposting. These worms find
in the Winter-stored starch, sugar, Ac.,
abundance of ready-prepared food. But
the same kind of trees cut iu July would
not be infested with these same minute
worms—they would find no food for
them.
If a horse is at all inclined to kick in har
ness listen to no excuses made for his I
having done so. He may go quietly for j
a week, month or yt ar ; but unless he is a
mere inexperienced colt, agtiin he will, so 1
sure as he is a horse. If, after knowing I
what harness means, horse kicks, he is not -
to be radically cured of the p- jpensity; be- ,
lieve no breaker who prorni es “take it
out of him.’’
The depth of plowing for wheat should
not be less on good soils than eight inches,
and the best depth for seeding the grain
is from oue to two inches—shallower seed
ing preventing the coronal roots from
starting freely, thus and assisdnethe pro
duction of seminal roots, whilst deeper
seeding than two inches tends to retard
germination of the grain.
Every farm should have one good or
chard, thesiae varying according to the
size of the farm; and this orchard should
contain a choice assortment of all leading
fruits. The farmer who to-day has on his
place a thrifty, middle aged orchard,
should not wait until those trees begin to
fail before he sets out another one, but
should have one started and growing
There was a time when it took ten men
to harvest an acre of wheat in England,
and even a modern period when the usual
day’s work was to reap, with a sickle,
bind and put up half an acer of wheat a day,
which many of the older class of farmers
will remember; whereas we now find that,
with one reaper suitably manned, there
need be no difficulty in cutting and put
ting in shock an acre an hour.
There are two objections to the use ot i
Petroleum as a paint—lst, it will not .
dry; and 2d, it gives out an odor that to .
some people is far from agreeable. A :
farmer who had an old buggy from which
the paint and varnish had cracked off ;
in spots, ptiuted it over with Petroleum, i
aud while it stood in the carriage house it |
looked “as good as new;" but the first!
time he drove out it happened to be a ;
dusty day. and when he returned the buggy i
was "a sight to behold. And no amount !
of subsequent washing and rubbing has !
removed the dust.
Tj keep potatoes for seed. When first !
dug let them dry off well by lying several
days spread out thin on the barn floor; if
they are greened by the sun it is a double :
advantage, for no careless cook will take of j
them twice for boiling. Then place them in
a 000 l dry part of the cellar, on a floor of :
boards, and not more than two feet deep.
Never keep them in barrels. Examine
them occasionally during the Winter,
and il't'i 'y how a tendency to grow, rub
the eyes off and spread them out thin
ner.
