Fattening Hogs.
A ho* will thrive according to ' ' food
you give it, and will make pork according
to the quality of the food. Thus, corn is
better than other grains, and old corn bet
ter than new. Beachnuta will make a soft,
oily pork, and it is said that hogs fattened
exclusively on acorns will produce bitter
tasted pork. Another matter to be ob
served in order to have sweet pork, is. to
have clean pens; that is, not the filthy,
muddy pens we often see. The hog must
have a* place where he can be clean and
dry. A separate apartment to sleep or
rest in is the surest way, and then with
proper f <od you will have sweet and solid
pork. Od tie subject of feeding hogs, the
American Stock Journal makes the follow
ing suggestions :
“The length of time required for fat
tening hogs is from three to five months,
dependent upon the feeder’s means, the
breed he adopts and the attention he be
stows upon them, as also the amount of
judgment brought to the assistance of the
work. When hogs are first put up they
should be io moderate condition, not con
fined until they are so, the food then
should bo somewhat better to that on
tfhieh they have already fed, but not at
once in too great a degree. It should be
improved step by step, - till the digestive
powers are adapted for that of the nu
tritious quality with which the fattening
is to he completed: over-gorging is sure
to cause indigestion, and the only remedy
for this is abstinence. It is essential that
pigs be fed at regular intervals ; any ani- i
rnal fed regularly thrives better than those ;
fed at irregular intervals, aud where the
diet is varied and not administered to
satisfy, the process is accompanied with
profitable results. The best period to
commence fattening is in the Autumn ;
then almost every Kind of food is
to be had in plenty as well as in per- 1
lection ; the weather is neither too hot j
nor too cold ; and the humidity generally j
prevalent at i his season generally acts bene- |
ficially upon the skin ami tissues, and as it ;
were lubricates the whole animal economy.
Besides, they are ready to be slaughtered
at the period when this can be done with
most ad vantage, when the iowness of the
temperature allows more time and conse
quently enables the owner to turn the flesh
to the greatest advantage; whereas in
warm weather the meat must he salted or
pickled, eaten or disposed of immediately, !
or it turns off and is spoiled. The best
kind bf food for fattening pigs are pastur- :
ages on clover' or lucerne, or a run in the
cornfield immediately alter the crop had
been taken in Milk or whey mixed with
corn, oats, barley, or pea meal, alone, or
in connection with each other or with boil
ed and mashed potatoes; peas given whole
or crushed, or in the form of soup and
either aloDe or mixed with potatoes or
meal; potatoes and rice; potatoes and
meal of any of the above kinds, or mashed
potatoes and whole grain.
“A small portion of salt should always
bo mingled in whatever food given, as it
tends to stimulate the appetite as well as
(he digestive functions ; it will also be
found advantageous occasionally to admin
ister a little sulphuror powdered antimony,
say about once or twice a month ; these
ten' 1 to purify the blood, as also to facili
tate digestion aud maintain the appetite.
(Small meals and many of them are prefer
able to few and large ones, for swine are very
apt to overeat and gorge themselves or, if
any be left in the trough to re urn to it by
fits and starts until it is all gone; in both
cases the digestive f unctions arc impaired
and the process is not fully and beneficially
performed. Regular hours of feeding
should he strictly observed; pigs soon learn
to expect their meals at certain hours, a:;d
their stomachs beinfc ready for it, indiges
tion follows irregularity and prevents much
beru tit being derived from the meal when
it does come.
“In the opinion oftho writer oe most
economical and advantageous form in which
grain can bo used is that of meal moistened
with situr or skim-milk or water, into a
kind of soup or porridge. Some authori
ties recommend when mixing with water
the proportion of five bushels of meal to a
hundred gallons of water, the mixture to
be stirred several times a day for two or
three weeks, until no imperfect fermenta-.
tion takes place, and it becomes ascescent.
In this state its fattening powers are claim
ed to bo groat ly increased. Says one who
has pursued this method in a large way,
. ‘The difference in profit between feeding in
this manner and giving the grain whole, is
very great, so greai that whoever tries it
once, will not be apt to change it for the
common method.’ Hogs put up to fatten,
highly fed and taking little exercise, are
very liable to acidity of the stomach; cal
careous matters remedy this evil and are
found in occasional feeds of ashes, cinder
or earth whicr. the animals champ and
swallow. Too many pigs should not be
fed iu the same pen; three are sufficient and
they should bo near as possible of the same
age.”
Winter Care or (Jolla, Calves and
. Lambs.
A correspondent of the Com try Gen
tleman makes tho following timely sug
gostions
“This being tho season when young ani
mals are injured by negloct so that no after
care can remove the effect, it may not be
amiss io say a little on weaning and the
treatment ot the weaulings. As lambs
have long been separated from tho ewes,
and calves ought to have been born early
enough to have forgotten milk, l will com
rnonce with colts, more especially as they
very particularly receive ill-treatment on
the approach of Winter.
“Every coif should be brought to eat
oats and bran before it is weaned, so that
when the marosis takou from it the food
will not be new, and by judicious choioe
of other food there need be no loss of con
dition whatever. It is altogether wrong
to shut the colts up in the day time; thoy
should run out all day when the weather
is mild, and be fed out doors, for every
one who has been a successful stock-raiser
is aware how much better food is relished
in the open air. Tho hay, the oats and
bran, and the carrots, should be given in
such quantities as%ill be eaten at ,once,
which can be soon found out, and if while
ascertaining the greatest amount which
can bo given to be cleared up, any bo left,
it should be immediately removed iand a
loss quantity fed next time-
“When the weather becomes too se
vere to feed outside with the carrots od
account of frost, it will be well still to
give hay, unless storming, and then even
itcau be done if there is spacious open
shedding, and the colts will always have
an appetite by being treated in this nat
ural manner, for it is entirely unnatural
for them to be shut up all the time. No
change of food is requisite if the bran is
sweet and unadulterated, and asto quanti
ty there is no limit so that they eat it up
dean from tho rack ajd manager, tor ot
course the more the colts eat the faster
they grow, the fatter they are, and the
better they pay for tho food; it would be
about as wise to expect an old woman to
knit a pair of stockings after robbing her
of half her worsted, as to expect colts to
come out fat in Spring on short allowance
of food. ,
“When carrots are not grown, the best
substitute is boiled flax seed, and this is
oueoftbe best descriptions that can be
given. Flax seed, boiled in water, suffi
cient to make a jelly, is a wonderfully
good nourishing food, and it appears
extraordinary that it is not used much
tmore extensively in this country, because
the climate is adapted for tho of
flax, and for cattle feeding long ou dry
food it is a flue equivalent for young
grass and very healthy in its effect

coarse corn stalks, etc., cut into chaff;
Imt without any wetting mix this flax-seed
jelly with hay cut into chaff, ana, it the
hay was made from grass in blossom in
stead of iu seed, no stock of any age. but
will thrive to a degree tar beyoud what
they would with any food without the aid
of this jelly.
I should feed colts with oats twice per
day dry—say just belore eating the flax
seed and chaff—because if oats are eaten
with any moist mixture they are not
ground up by the teeth, and this an ob
jection to all sloppy food; for in addition to
the imperfect mastication, there is the
saliva lacking in the digestion. Animals
eating hay or o;her dry food which is of
good quality, do better than if it is wet,
because the saliva is natural and the ab
sence of it is not, the chewing is natural
and the “bolting” of sloppy food is not.
If colts are dropped late, it is a help to
them to be allowed to suok later than
others, especially if the mares are fed
with milk-producing forage, etc.; and if
colts ..re not of suflicient value to be fed
well, and for the dams to be treated well
too, it is not worth while to rear such ani
mals.
“Calves need not suck a cow: they can
be raised on skimmed milk. But to succeed
in making them come to early maturity,
roots should be grown for their Winterfeed;
common turnips arc best for the Autumn;
and Swedish turnips for the 'Winter ard
Spring till grass comes. In the absence
of roots there is nothing better for them
than flax seed jelly or oil-cake; but with
roots I would not give flax-seed, as that j
is very opening, and roots beiug so like- i
wise, it would be better to have something
more astringent. Barley and corn meal arc
all very well for ealves, but more expen- j
sive it given to try and feed as fat the I
former will force them to be. '
“Lambs will do better on turnips in Au- i
tutnn. and swedes in Winter, accompanied
with hay and some white peas, than on
aught else—-the extra weight of wool and
carcass paying most remuneratingly,! for
*“ e nutriment. I noticed a New
Lngland article wherein the writer said
“sheep were useful animals to be kept, as 1
they could be made to eat up the inferior
hay!” O, ye ghosts of old English tann
ers! Rise up and face the New England
ones! Ted them you have lain in your
graves half a century, and yet New Eng
land is behind your grandfathers!”
Wise Making.—A discovery in rela
tion to ft r.xeotation-oi e applying equally
to cider and other liquids—hag been made
in California, which, according to accounts
given, w:li be of the greatest importance
to the wme makers of this country. By the
ordinary process of fermentation it takes
many raoDths to complete the process,
and then the wine has to stand one or
more years to ripen, subject all the time
to various accidents and diseases. In the
usual method the contact of the air is at
the surface of the liquid in the vat or cask
only; by the new process, which has
been patented, air is at intervals forced
through the liquid from a perforated tube
placed at the bottom of the vessel. It is
claimed that the whole process of fer
mentation, without any second working,
can be completed in about five days, and
that in from two to four weeks after fer
mentation has ceased, the wine or cider
will be clear and ripe, and not liable to
undergo any further change-

Ever resjiectful and faithful, he held his
position with Christian fortitude and
patience amid the disasters and changes
thst attended his latter years. Exhibiting
always rare virtues of mind and heart
that endeared ism more with those he
had be -n so I ng associated, and winning
the re pt-rtt of alf with whom lie came in
contaf In his death, his race in this
community has lost anoble example of an
industrious, • honest Christian character,
and to those he has served so long and
faithfully, his loss is irreparable.
