HUCKLEBERRY HAS MUCH TO
RECOMMEND IT.
Best Eaten With Cream or Served
at the First Meal In Cakes or
Muffins—Tea Cake Is One of
Old Virginia’s Recipes.
The huckleberry is not a highly fla
vored fruit. Containing very little acid,
it seems rather insipid to many tastes,
but eaten with good rich cream or in
the various delicious puddings, des
serts and cakes known to the country
hostess, w 11^ Increase your esteem for
this, especially wholesome berry. It
does not require cultivating. Ou hill
side and mountain clearing or in old
pasture fields, and bordering the bub
bling brooks, the prolific huckleberry
and the lighter-colored, sweeter and
softer blueberry are found in great
profusion, and often going to waste, so
far as we complaining, short-sighted
mortals are concerned. The fully ripe
huckleberry does not require sugar;
but providing for a very «weet tooth
you should not use more than half a
cup of sugar to a quart of the fruit.
Huckleberries for Breakfast. —Huck-
leberries are really the only fruit that
may be served for breakfast in cakes
or muffins. And they go so well with
the summer cereals. A bowl of flakes,
or even crisp soda crackers, berries
and rich new milk or cream, Ice cold,
and without sugar, will furnish an
ideal summer breakfast for any one,
and especially the children. It also
makes a very good and satisfying busi
ness lunch,
Huckleberry Griddle Cakes.—Pick
over a pint of fresh berries and wash
them well in cold water, then drain
dry. Mix together two cups of flour
two teaspoonfuls of baking powder
and half a teaspoonful of salt. Beat an
egg light and mix with a pint of milk.
Roll the berries in some flour until
they look like little white balls, then
add to tlie batter. Bake on a hot grid
dle that is well greased. If these are
served for luncheon or tea, dust pow
dered sugar and cinnamon over them.
Huckleberry Toast. —Pick over,
wash and stew a pint of berries, thick
ening a little with cornstarch or flour.
There should be plenty of juice, and
the berries sweetened a little. Put a
layer of buttered toast in a baking
dish, pour some of the berries over
this, put In another layer of toast and
more berries. Cover and let stand in
the warming oven or coal oven for
half an hour before serving time. This
makes a nice pudding if baked In the
oven and covered with a meringue
flavored with lemon or served with
whipped cream.
Virginia’s Huckleberry Tea Cake. — |
Cream a cup of butter with two cups
of sugar. Beat the yolks of five eggs
light, stir in, and add a cup of sweet
milk. Sift together three cups of flour,
three teaspoonfuls of baking powder
and a teaspoonful of nutmeg. Add to
the first mixture and beat to a smooth
batter. Then stir in gently the whites
of the eggs, beaten to a stiff white
froth. Wash a quart of ripe huckle
berries, pouring off all that floats on
the surface. Drain and roll in flour,
then stir into the batter with a wood
en paddle, so as not to break or bruise
them. Bake in a loaf or deep biscuit
pan, fn moderately hot oven of steady
heat, until a broom straw comes out
clean from the center of the cake.
Goldenroo Toast.

until hard, then put the yolks and
whites separately through a sieve.
Have ready slices of hot toast and
fn the center of each put two spoon
fuls of the yolk, surrounding the edge
with the white. Over the whole pour
white sauce and serve hot. This Is a
delicious breakfast dish. —Mother’s

Roast Duck, Olive Sauce.
Dress, clean and truss two ducks;
place on rack in dripping pan, sprinkle
with salt and pepper and cover breast
with thin slice of fat salt pork; bake
about one hour in a hot oven.
Olive Sauce.—Melt one and one-half
tablespoons butter and stir until well
browned; add two tablespoonfuls flour,
and pour on gradually one and one-halt
cupfuls brown stocks take ten pitted
olives, cover with boiling water and
cook five minutes; drain and add to
sauce; season with salt and pepper.
Whitening Floors.
To whiten hardwood floors add two
tablespoonfuls of paraffin to the hot,
soapy water used for washing the
floor. This is an old remedy, but a
good one, for it not only cleanses the
boards, but also destroys any insects
that may be lurking in cracks of the
floor.

what Annoyed the British
Ambassador.
The conflict between England and
Germany recalls an incident of an
illuminating character between the
Crown Prince Frederick William and
the British ambassador at Berlin, Sir
Edward Goschen, which almost
brought to a sudden end a brilliant
dinner given In honor of the kaiser’s
heir at the embassy in the German
capital last February-
Over the coffee Crown Prince Fred
erick William turned to Str Edward
Goschen and demanded brusquely:
“Where are your spies?”
"Spies?” exclaimed the astounded
diplomat. "I cannot understand what
your highness means.”
"Why,” returned the heir to the
throne of the empire, "your two spies,
your military attache, Colonel Russell,
and your naval attache, Captain An
derson.”
"Neither the military attache," firm
ly replied Sir Edward Goschen, "nor
the naval attache has anything to do
in the nature of spying. I can assert
that in the most energetic fashion.
The British government has formally
prohibited spying on the part of its
representatives and the attache has
not sent u single report to London
which has not been examined by me.”
"Well,” insisted the crown prince,

treat of.”
The British ambasador went on to
argue the point, but the crown prince,
not even half convinced, changed the
conversation and spoke of horses.
