housewives to stock up for this
winter while the prices of foods
are still low. Right now there are
bargains in canned foods at al
most every chain and grocery
store, but the surplus stocks will
soon have disappeared.
If you own your own home, and
have a place to store them, it’s a
great economy just at present to
buy canned foods by the case.
Beans, peas, corn and tomatoes
are vegetable staples that you will
b® sure to use, so you can’t go
wrong on laying in a supply of
them.

try because this industry has

as its nutritive and epicurean mer
its have been increasing ever

Many Uses
Canned corn is in season all
year rounl. and, when heated and
seasoned, it is delicious just as it
comes from the can. There are
also appetizing recipes for its use
in conjunction with other foods.

grapefruit, plums and prunes
never come amiss.
Fish should form part of your
winter diet, and there is a vast
variety of delicious fish in cans.
Salmon is practically a necessity,

these with cod fish in various
forms, crabs, herrings, lobster and
shrimps. (
You’ll find it mighty convenient,
too, to have some meat in cans
available for last moment meals.
There are ready-made entrees, you
know, which you can heat in a
few minutes, such as beef a la
mode, chicken a la King, curries,
chop suey, Hungarian Goulash,
lobster Newburg and Irish stew.*

Hamburg and Corn Scramble:
Saute in two tablespoons butter,
one medium onion, chopped. Add
three-fourths of a pound of ham
burg steak and stir until brown,
add one can of corn, two tea
spoons salt and one-fourth tea
spoon of pepper, and heat. »
Breakfast Corn: Chop line two
large cold-boiled potatoes and
sautd brown in two tablespoons
fat. Add one cup of left over
canned corn, and brown again.
Season well with salt and pepper.
Break into this two whole eggs,
and scramble lightly together.
Broil eight slices of bacon and
serve with the prepared cor*.
Both these recipes serve eight. •

most expensive cuts offered by
the butcher, to provide a delicious
meat dish for the heavy meal of
the day. Less expensive cuts can
be turned into a feast if properly
prepared, and
in their prepa
ration the se
cret of success
lies largely In
the seasoning.
Salt, pepper
—and sugar—
all come into
play. Do not
b e surprised
by the men
tion of the su-
gar. Most housewives are familiar
with the functions of salt and pep
per. The sugar is an added cull
nary secret that has been known
for many years to foreign chefs
and cooks, and is now rapidly gain
ing favor with the American house
wife. Used as a seasoning, in quan
tities not large enough to sweeten,
the sugar blends and points up the
other flavors, giving to the whole
r. new subtle goodness that creates
a dish with an added appetite
appeal.
Here Is a recipe, calling for one
of the less expensive cuts which,
with proper seasoning, becomes a
savory morsel.
Savory Roast
4 pounds chuck roast
2 largo onions
pinch of sage
I’/i teaspoons salt
1 can tomatoes
2 tablespoons sugar
114 cups boiling water
Rub the meat • ith salt and sage.
Cut onions in medium slices and

Makes Tasty Salads

ATLANTA. — Mrs. Eugene Tal
madge, wife of the Governor of Geor
gia, enjoys a reputation of being one
of the South’s best cooks, and can
frequently be found in her modernly
equipped kitchen when official and so
cial duties permit. Following are two
of her favorite salad recipes:
Frozen Fruit Salad: 1 quart can
of fruit salad mixture; 3 tablespoons
flour; 3 tablespoons sugar; 2 table- I
spoons lemon juice; 14 cup may
onnaise; 1% cup whipped cream.
Drain off juice. Dice fruit. Bring
juice to a boll. Mix flour and sugar
together dry. Pour over this the hot
juice and bring to a boil until clear.
Cool. Mix with fruit again, add may
onnaise, lemon juice and cream.
Freeze, serve on lettuce leaf.
Frozen Cottage Cheese Salad; 1%
cups cream cheese; 14 cup chopped
pecans; ‘4 cup chopped green pep
pers; 14 cup chopped pimientos; %
cup mayonnaise; 14 cup whipped
cream; 2 tablespoons salad oil; 14 tea
spoon paprika; % teaspoon salt. Blend :
cheese with oil and other ingredients.
Add mayonnaise and then fold in |
cream. Place in refrigerator for three
hours or pack in ice and salt for
three hours. Slice and serve on let
tuce.
