Gelatine Presents Turkey Anew

Turkey left over from the holiday meal and cranberry jelly make a
new and festive reappearance in a two-tone gelatine salad. Both layers
of the cranberry turkey salad are prepared with unflavored gelatine,
the kind that allows maximum enjoyment of natural flavors and colors.
One envelope of gelatine combined with mayonnaise and left-over tur
key makes a creamy layer, and the second envelope molds the cran
&erry jelly to supply brightness and tartness to the dish. Serve salad on
cabbage slaw and surround with bread and butter sandwiches cut with
turkey cookie cutter.
Cranberry Turkey Salad
Layer I
1 envelope unflavored gelatine
U cup cold chicken bouillon
lacup hot chicken bouillon
% teaspoon salt
% cup diced celery
Soften gelatine in cold chicken bouillon. Add hot bouillon and salt and
stir until dissolved. Cool, add lemon juice and mayonnaise. Stir in tur
key, green pepper and celery. Pour into large mold ; chill until almost
firm. While this mixture is chilling, prepare the following cranberry
mixture.
Layer II
1 envelope unflavored gelatine ■
’2 cup cold water
% cup hot water
Soften gelatine in cold water. Dissolve in hot water, stirring thor
oughly. Add salt and lemon juice. If desired, cut a %-inch thick slice
from jellied cranberry sauce; cut with scalloped cookie cutter; reserve
for garnishing finished mold. Crush remaining sauce with a fork. Add
to gelatine mixture; beat with rotary beater until smooth. Turn on top
of first layer. Chill until firm. Unmold and surround with cabbage slaw.
YIELD: 10 servings.

Facts about Plants, Biscuits
Like most housewives, Martha
White, a typical Southern home
maker, likes her household plants
as well as the tempting-food she
serves. So, she writes about both.
“Not being noted for a ‘green
thumb,’ ” a recent article started,
“I’m always eagerly looking for
ways to protect my plants from the
dangers of everyday, indoor life.
Somehow, I seem to water them
too often, or not enough, and the
results are equally disastrous.
“So, I was really happy to get a
tip from a good friend, whose
plants are always so healthy and
beautiful. She‘takes a shallow pan
and puts her potted plants in the
pan. Then, she heats water almost
to boiling and fills the pan to with
in one inch of the top with the very
hot water.
“The plants are left in the water
over night to absorb both the water
from below and the steam rising
from it.
“And now,” her writing con
tinued, “I have just 15 minutes to
get my biscuits ready for supper.
But that is easy when you use self
rising flour, as I always do, be
cause it makes biscuit baking so
little work. Here’s how it’s done:

DEAN MARTIN, were accosted
on the Paramount lot where they
were just finishing their latest
picture, .“Scared Stiff.” When
asked for their favorite dish,
Dean quipped, “Dorothy Lamour.”
“Serially speaking,” cut in Jerry,
“I like snowballs. You take a
snowball, add a pinch of salt and
bake in a hot oven." But it turned
out that Jerry was half right.
Snowballs ARE one of his favorite
desserts and-also one of the favorites at the Paramount Studw
Commissary where they are served. Here’s how to make them.
JUST FOR FUN-SNOWBALLS
1 quart vanilla ice cream
1 cup shredded coconut, cut
Currant Jelly Sauce
Scoop ice cream into balls. Roll balls in coconut. Place in
freezing tray of automatic refrigerator for about 1 hour. Serve
with Currant Jelly Sauce. Makes 6 servings. Currant Jelly
Sauce: Place % cup currant jelly in a small bowl. Add table
spoons hot water and stir until blended. Makes % cup sauce.

Hot Biscuits
2 cups self-rising flour
3 tablespoons fat
% cup sweet milk
Sift flour once before measuring.
Cut fat into flour until texture of
coarse corn meal. Add liquid all at
once and stir until all flour is well
dampened, just 20 strokes. Knead
lightly six strokes. Roll to %-inch
thickness and bake in ungreased
pan in hot oven (450°F.) for 12 min
utes.

8 ounces elbow macaroni .
2 or 3 medium green peppers
2 tablespoons butter or mar

1 large onion, chopped
% pound ground beef

% cup butter
1 cup sugar
2 eggs
1% cups self-rising flour
% cup sweet milk
• 1 teaspoon vanilla
Melt the 4 tablespoons butter in
10-inch skillet and sprinkle evenly
with the brown sugar. Arrange
pineapple slices on top of sugar
and place pecans between and on
top of pineapple slices.
Cream the % cup butter, add
sugar gradually, and beat until
light and fluffy. Add eggs, one at a
time, beating well after each addi
tion. Add sifted flour alternately
with the milk and vanilla, begin
ning and ending with the flour.
Pour into prepared skillet and bake
in moderate oven, 375° F., 30 to 35
minutes. Let cool for 10 minutes.
Turn out onto serving plate. Cut
into 6 wedges.
1 lOVz ounce can condensed
cream of mushroom soup ,
1 cup milk
114 cups grated Cheddar cheese ;
Salt and pepper to taste
Cook macaroni according to
package directions. Cut peppers
crosswise into halves; remove
seeds. Cook uncovered in rapidly
boiling salted water until tender
(5 to 10 minutes). Drain. Melt
butter in skillet over low heat.
Add onion and beef; saute until
tender. Add soup, milk, one cup
cheese, cooked macaroni and sea
sonings. Fill pepper halves with
mixture, placing remaining por
tion in individual casseroles.
Center each casserole with filled
pepper half. Top with remaining
cheese. Cover and bake in mod
erate oven, 37520 minutes.
