How to Improve Chocolate.
To tliose who study the niceties ot
in the preparation of e»en a
dish, it may be suggested that
used as a drink is much im¬
proved if blended several hours be¬
forehand. It is better even to break
the lumps of unsweetened chocolate
into an earthen bowl the night before,
adding cold water and covering close¬
ly. In this way the flavor of the
chocolate is best extracted.
Roast Beef Uor a Small Family.
In buying a roast of beef for n small
family do . not try to buy too largo a
one, ae the family will tiro of it be¬
fore it is eaten. A one-rib roast of
the second or third cut will usually be
quite sufficient. Have the ribs re¬
moved, skewer or tie in a round
shape, season with salt and pepper,
dredge with flour; brown quickly on
each side on the stove or in a hotovon,
and fiuish the process in a cool oveu.
Forty minutes will browned suffice for the
whole operation. If potatoes
are to accompany the roast, cut in
halves, cook in boiling, salted water
until nearly done, then lay in the
dripping pan with the roast and finish
there, basting frequently with the
drippings.
Philosophy of Bolling.
Advanced cooks who study into the
philosophy and physiology of cooking,
with its accompanying effects upon
the digestive organs, object to the
close covering of any kettle or stew
pan while its contents are cooking.
All will recall the frequent deadliness
of the chicken pic, when tbe crust
has been made without a vent to al¬
low for the escape of the steam and
grass generated. The same effect, in
lesser degree, may bo noticed in the
cooking of many, if not all, vegetables,
in the boiling of beef, or in any other
closed cooking. The free circulation
of air is an admirable thing in cook¬
ing, as, witness, the broiling of steak,
or the old-time roasting of beef on a
Spit—the most delicious and whole¬
some ing way of cooking. While in boil¬
it is not expedient to leave the
cover entirely off, on account of its
reducing the temperature too much, it
should be left far enough off to allow
for the freo escape of the steam. Cab¬
bage, cauliflower and spinach cooked
iu this way retain their natural color,
and are much more digestible.—

Salad Cream—Mix oue-half a table
spoonful of salt ami the same quantity
of mustard with ona tablespoonl'ul of
sugar. Add one egg, slightly beaten,
two and one-half teaspoonfuls of melted
butter and three-fourths of a cup of
vinegar. Cook over hot water until
it thickens, strain and chill.
Lambs’ Tongues—Boil till they are
tender. Put them into cold water and
take off the skius; scald enough vine¬
gar to cover them, season with oloves
and a|mmmon. put them into a jar,
poiarovcr tho vinegar, hot, and keep
them well covered with vinegar ail the
time. A careful aud faithful adher¬
ence to the recipe will iusuro success.
Waffles -One quart of warm milk,
one-half cup of yeast, oue teaspoonful
of sugar, one tablespoonfnl of melted
butter, a little salt, aud flour euough
to make a batter thick ns cream. Rise
over night. In tho morning add two
well-beatenj Take eggs. Bake in waffle
irons. cave that the eggs are
well beaten into the batter. It often
happens that a considerable “lump”
of egg will bo encountered if oue is not
careful.
Tomatoes a la Julienne—Peel; cut
in halves, and press out the seeds
from six tomatoes, and then chop
them tine. To ,

pint of bread crumbs, a teaspoonful of
salt, a teaspoonful of oniou juice, a
saltspoonfui of chopped parsley.
Form into croquettes, dip iu eggs,
then iu crumbs and fry. The mixture
may bo too soft to handle. In that
case simply add broad crumbs till the
right consistency is obtained.
Golden Nuggets—Mix together one
ouuce of sweet almonds, blanched and
sliced; two ounces of bitter almonds,
blanched and powdered; three table¬
spoons of apricot jam, two ounces of
very fine bread crumbs, and two well
beaten eggs. Finally, add an ounce
of creamed butter, aud pour the mix¬
ture into fancy molds and bake for
twenty minutes in a moderate oven.
When removed from the molds serve
them in separate fancy paper cases.
Tomatoes a la Julienne—Peel, cut

them fine. To each pint allow one
pint of bread crumbs, a teaspoonfnl of
salt, a teaspoonful of onion juice,
a saltspoonfui of pepper and a table
spoonful of chopped parsley. Form
into croquettes, dip in eggs, then in
crumbs, and fry. The mixture may
be too soft to handle. In that case,
simply add bread crumbs until the
right vonsisteney is obtained.
“Apple Cooken”— The apfel kucheu
you enjoyed so much in Germany, or
apple cooken, as it is called here. 1"
made as follows. Linen shallow tin
with tart paste or l,cad dough. Peel,
quarter and oore ac many apples as
you require. Then cut them in halves
and quarters. Lay thorn close to¬
gether sideways on the paste till it is
covered. Mix a custard of a half pint
of milk, two eggs, a teaspoonful of
corn starch, some grated lemon peel
or nutmeg aud sugar enough to flavor.
Hotch Potch Pie—In a deep pie
dish place a layer of cold cooked real,
then a layer of boiled potatoes, sliced
thin; next some slices of ham, followed
by a layer of hard boiled eggs, sliced,
aud so on, until the dish is lull.
Cover the top with potatoes, cut into
rather small pieces. Pour a teacupful
of stock into the pie, cover with a
crust, with small openings in it to
let the steam aud gas escape, and hake
for three-quarters of an hour in a
moderate oven. Season each layer
separately aud serve hot.
Fricassee of Beans—Soak over
night one large cap of dried lima
beaus; draiu, put ou the fire in one
quart spoonful) of boiling salted (one tea¬
water and simmer for two
hours until thoroughly done, but not
broken. When they are cooked, in
another saucepan put two tablespoon¬
fuls of butter, one tablespoonful of
lemon; parsley and the juice of ■
when the butter has quite
melted throw iu the drained beaus,
aud lightly toss for a few moments.

An index is moved to that number and
the car is started up. When the -car
reaches the proper floor, the elevator

car itself. Thus as the car passes each
floor the door into the elevator shaft Is
unbolted automatically for an instant
until the car begins to rise past the
floor. It is possible for a person to open
the door at this time and fall Into the
elevator shaft. lie seldom does, how¬
ever; they move more cautiously on the
other side cf the water than on this.
