No class cf men have been ridiculed go much, and none have done |p muoh good,as those who are denominated fan-* oy farmers. They have been, in all times and countries, the benefactors of the men who have treated them with de rision. They have been to farmers what inventors have been to manufacturers. They have experimented for the good ct the world, while others have simply worked for their own gain. They tested theories while others have raised crops for market. They have given a dignity ana glory to the occupation of farming it never had before. Fancy farming has changed the wild boar in the .Berkshire ; the wild bull of Britain into the Short-horn, the mountain sheep with its lean body and hair fleece, into the Southdown and the Merino. They brought up the milk of cows from pints to gallons. They have lengthened the sirhon of the bullock, given strength to the shoulders of the ox, rendered finer the wool of the sheep added to the speed of the horse and made beautiful every animal that is kept in the service of mn. They have improved and hastened the development of all domestic animals, till they hard ly resemble the creatures from which sprung. Fancy farmers introduced irrigation and under-draining, grinding and cook ing food for stock. They brought guano from Peru and nitrate of soda Iron Ch li. Thev introduced and domesticated all the plants we have of foreign origin. They brought out the theory of rotation of crops as a natural means of keeping up ana increasing the fertility of the soil. They frst ground up gypsum and bones and treated the latter with acids to make manures of peculiar value. They first analyzed soils as a means of determining what was wanted to increase their fertil ity. They introduced the most approve! methods of raising and dist.ibuting wa ter. Fancy farmers orfmey horticulurhts have given us all our varieties of fruits, vegetables and flowers. A fancy farmer in Vermont a few years ago originated the early Hose potato which added mil lions to the wealth cf our country and proved to be a most important accession iu every part of the world where it was introduced. Another of those same fan cy meu originated the Wilson strawber ry and another the Concord grape. It was a r’aucy farmer that brougho tno Osage Orange from Texas to the Northern States. Among the men in this country who were classed as fancy farmers at an early day, Washington Franklin Jeffersoa and Livingston. The first introduced mules the second the cultivation of improved rice the third the use of land plaster ; the fourth, the raising of lueerne. More than any men of their time did they add to the wealth of the country. After them came another race of fancy farmers who introduced Arabian horses, Span ish sheep, and the improved breeds oi English cattle aud swiuo. These fancy farmers added immensely to the wealth of the practical farmers of the coun try. What we want to develop the agricuh ture and horticulture of the couutry to their fullest extent, is a large number of fancy farmer men who work for pleas ure rather than for private gain. These ure the men who will perform experi ments and give the world the benefit of th m. These are the men who will carry on investigations for the sake of investigating. These are the men who will biingin new gains, and fruits, new vegetables, and new varieties of ani mals. These are the men who will devote their time and money to the improvement of old varieties aud the creation of new ones. Tne coun try is sadly in need ol more fancy farm ers. Orange Cake eor Brekfast.— One quart of flour one cupful of but ter, four eggs, two table-spoonfuls of yeast. Make into a stiff batter at night with milk. Next morning add a tea-cupful of corn meal. Beat all well together and put iuto cups to rise be. fore breakfast. Mock Cream —Boil a pint and a half of milk, sweeteu aud flavo r to taste. — Beat three eggs very light ; add to them three heaped teaspoonsful of salt. Stir this, into the boiling milk. Spread this when cold, between two leaves of the cake, and you have a nice cream pie. Potato Puffs. —One pint of milk boiled, one-fourth pound butter or lard one tablespoonful of sugar six good po tatoes mashed hot, Hour to make a thick batter. Let rise very light, then knead into soft dough, roll them, put two to gether ; let rise two hours aud and bake in hot oven. The Germantown Telegraph says: The-e is no mode that we ever tried so effectual in transplanting tomato cabbage contaloupe. or any other tender plant from the hot-bed, or from one place to another, as to prepare a vessel filled with manure-'water aud rich soil, about the consistency of thin mush with which the roots should be well coated and set in a hole made wade with a sharp round piece of wood or dibble. After being rather firmly planted moisten again with mauure-water. - Nice Muffins. —One pint of flour, two eggs well beaten, two ounces of butter, one pint of milk, one tea-spoon ful of Balt, one gill of yeast.
