Thai Game
Of two eateries' quest for authenticity
Confusion regarding Thai cuisine is common, as many ele
ments of its rich palate of ingredients are not household cooking
ingredients in the United States. The average Western tongue
may not be familar with galango (Thai ginger with a sharp
lemon-pepper taste) or lime leaves (fresh or dried), or Thai tea
(traditionally made wirh cinnamon, vanilla, star anise and
coconut milk).
Thai food does share certain traits with Chinese food, such as
the use of rice and noodles as staples. And that rather vague con
cept ‘'curry" —which you'll find on menus from Belize to Bombay
— is a Thai restaurant regular. However, Ernie, a waiter at Thai of
Athens, described what makes Thai food distinct from the
Chinese: "Thai food uses more natural food, such as coconut.
basil, mint leaves, lemon grass, maybe lime leaves, curries — it's
more spicy." Chinese food is more sauce-oriented, he said.
The distinction is best illustrated by a trip to two Athens
restaurants, Khun Al Thai, located downtown at 149 North
Lumpkin St., and Thai of Athens, located at 2033 West Broad St.
Both serve authentic Thai fare. But how
authentic is authentic? That
depends on the
importance one
places on the origin of the ingredients
on your plate.
Paul Petchrawises, the manager of Khun Al Thai and a native
of Bangkok, will use only authentic Thai ingredients. If he can't
get them, he won't even attempt to create a dish with substi
tutes, he said. Petchrawises orders his ingredients twice a week
from a wholesale supplier in Atlanta, which in turn receives its
imported shipments direct from Bangkok. This ordering process is
convenient for Petchrawises; he lives in Atlanta. In fact, so does
his entire kitchen crew — everybody commutes, every day.
Luke Insixiengmay, the manager of Thai of Athens, has a dif
ferent approach to creating Thai meals when not all traditional
ingredients are available. Insixiengmay, who was bom in Laos,
near Thailand, will make subtle changes in the menu, such as
using basil for Thai mint, or mangos from Mexico rather than
Thailand, or Chinese ginger instead of Thai ginger.
Both Petchrawises and Insixiengmay go to Atlanta for many
of their needs. However, both have been able to find certain
’terns like lemon grass, coconut milk and anchovy sauce. Large
grocery chains occasionally carry the aromatic jasmine rice and
salty fish sauces, but the best local bet for genuine Thai ingredi
ents, according to both Petchrawises and Insixiengmay, may be
Oriental Grocery at 2019 South Milledge Avenue.
Both restaurants offer intriguing fare. Khun Al boasts mussels
cooked in a clay pot, as well as tasty mango ice cream. Thai of
Athens serves yum — a sour and spicy dish, Ernie explained,
that's served cold. Yum indeed.
