Pecan Pie
Muffins
A friend gave me this recipe
when she was visiting us. I tried it and have been
making it ever since. Everyone who eats it wants
the recipe, so I will just share it with everyone else
at American Profile. The secret, of course, is in using
real butter.

1 cup light brown sugar
1/2 cup all-purpose flour
2 eggs
2/3 cup melted butter
(I use salted butter.)
I cup chopped pecans
Preheat oven to 350 degrees.
Mix ail ingredients in a bowl
with a wooden spoon. Pour
into a greased mini-muffin pan,
filling each cup 2/3 full. Bake
12 to 15 minutes. Makes 2 1/2
to 3 dozen.
