This week: two ground beef
dishes that are easy on the
budget:
Chili with hominy
1 lb. ground beef
1 medium onion, chopped
1 (1 lb.) can tomatoes
1 (1 lb.) can hominy
2 tablespoons chili powder
1 teaspoon salt
Cook ground beef fan onion
in' skillet until browned. Add
remaining ingredients. Simmer,
covered, 15 minutes. Serves 6.
Red flannel hash
2 lbs. ground beef (lean)
1 green pepper
1 small onion
1 can tomatoes
salt
Cut pepper and onion into
small pieces. Mix with tomatoes
and ground beef. Salt to taste.
Put into baking dish and bake
one hour at 350 degrees.

underwater, adult supervision
is always required during pool
usage. When infants or toddlers
are playing near a pool, an
adult should be no more than

Equipment:
Corning ware dish, should be
round with straight sides
Pastry brush
Ingredients:
Pie dough (your own or pre
pared)
6 apples peeled and sliced
1 cup sugar
5 oz. butter, melted
1 egg
Method -
Preheat oven to 350 degrees.
Prepare apples. Thickly butter
the dish. Sprinkle butter with a
generous layer of sugar. Lay the
apple slices over the sugar,
pressing them together as close
as possible. When surface is
covered, layer the remaining
apples evenly on top of the oth
ers. Sprinkle with the remain
ing butter and sugar. Cover the
pie with pie dough, and tuck
the dough down between the
apples and the edge of the dish
- all the way to the bottom if
possible. Brush the crust with
beaten egg.
Bake for 30 minutes. Keep an
eye on it and put aluminum foil
over it if it is browning too fast.
When done, remove from oven
and turn upside down on a
serving dish.

For many of you, cooking is a
sentence worse than any other
known to man. But there are
those of you who truly enjoy
being in the kitchen, men and
women alike, and cook for the
love of it.
They are the ones who will
understand this quote. I keep a
busy schedule as do most people
today so shopping and cooking
both suffer as a result. I don’t
by any means possess a perfect
kitchen. I forget to throw out
things from the refrigerator
occasionally. I sometimes run
out of bread or eggs. I maintain
staples because I start making a
list of items I’m low on as I use
them. It fascinated my daugh
ter, Jada Catherine, that I
always had the fixings for a
meal on hand. I used the term
“staples” for her and taught her
the basics of keeping them once
she married. I will, however,
come clean with one of my
major downfalls. I do have a
tendency to purchase bananas
and then, allow them to get too
ripe for eating. I read about
bananas recently, the growing,
shipping, ripening and cooking.
As a banana ripens, it turns
from green to yellow, and then
develops brown specks, and
eventually turns black and is
inedible. A green-tipped
banana should be cooked before
it is eaten. An all-yellow one

One of the most important
items in any patient’s medical
history is the list of drug aller
gies. It’s very important that all
of the health care professionals
involved in caring for you are
provided with an accurate, up
to-date list of medication aller
gies. This seems simple enough,
but do you know that many peo
ple are not aware of medications
that they are allergic to and
they often confuse side effects
to a medication with a drug
allergy?
All medications have the
potential to cause side effects,
even if a person has taken the
medication before or often. Side
effects may range from mildly
irritating symptoms such as
nausea, vomiting, and diarrhea
to more problematic symptoms
such as drowsiness or sun-sensi
tivity. While these can be annoy
ing to the point that they inter
fere with normal activities and
your physician may change the
medication, these are side
effects not allergic reactions.
An allergic reaction to a med
ication is a much more serious

Steak and Roasted
Vegetable Salad
Total preparation and cooking
time: 45 minutes
Makes 4 servings (serving
size; 3 3/4 cups salad and 3
tablespoons dressing)
Ingredients:
1 lb. boneless beef top loin
steaks cut 1-inch thick
Olive oil-flavored vegetable
cooking spray
1 medium zucchini cut diago
nally into 1-inch pieces
1 medium Japanese or baby
eggplant cut diagonally into 1-
inch pieces
1 large red, yellow, or green
bell pepper, cut into 1-inch
strips
1 medium onion, cut into 1-
inch wedges
16 small mushrooms
1/4 teaspoon salt
8 cups torn mixed salad
greens
3/4 cup nonfat Italian dress

Seasoning:
2 tablespoons balsamic vine
gar
2 large cloves garlic, crushed

The brown-flecked fruit should
be eaten raw. And the black
ones, at least at my house, get
tossed away, as in ‘destroying
the evidence’. But, keeping in
mind that I hate to waste them,
before bananas become too
black, I use them in a variety of
recipes. Trust me, I now have
lots of recipes using these
bananas. Since I passed by
some on my way to get coffee
this morning, I have on my
agenda for the day to make
something banana. If anyone
out there is like me, then these
recipes are for you. Enjoy!
Banana Creme Brulee
2 ripe bananas
2 1/4 cups heavy cream
1/4 cup plus 8 teaspoons sugar
4 egg yolks
1 teaspoon vanilla extract
Preheat oven to 300 degrees F.
and have a pot of boiling water
ready. Peel 1 banana and cut in

is aware of all your drug aller
gies. Some medications have
similar properties to others and
can cause what is know as a
cross-allergy in sensitive
patients.
So what is a drug allergy? A
drug allergy occurs when the
immune system is triggered by
the presence of the medication

Heat oven to 425° F. Lightly
spray 15-x 10-inch jellyroll pan
with cooking spray. Place veg
etables in pan. Generously
spray vegetables ; with cooking
spray. Combine seasoning ingre

Roast in 425° F oven 30 to 35
minutes or until tender, stirring
once.
Meanwhile, heat large non
stick skillet over medium bent
until hot. To serve, place beef
steaks in skillet; cookl2 to 15
minutes for medium rare to
medium doneness, turning
once. Let stand 10 minutes.
Season steaks with salt. Trim
fat from steaks; carve crosswise
into thin slices. To serve, place
an equal amount of salad greens
on each of four dinner plates.
Arrange beef and roasted veg
etables over salad greens. Serve
immediately with dressing.

Beef Steak Caesar Salad
Total preparation and cooking

medium heat, combine cream,
cut banana and 1/4 cup sugar;
cook, stirring, until steam rises,
4 to 5 minutes. Let stand 10 to
15 minutes. In a bowl, beat
yolks and vanilla until blended.
Strain cream through a fine
mesh sieve set over a bowl; dis
card cooked banana. Pour
cream into yolks, a little at a
time, stirring constantly until
smooth; divide among four 6-
ounce ramekins. Line a 3” deep
baking pan with a kitchen
towel, place ramekins in pan,
and add boiling water to fill pan
halfway up sides of ramekins.
Cover loosely with foil and bake
until set, 30 to 35 minutes.
Remove ramekins from pan,
cool to room temperature and
refrigerate 2-3 hours. Peel
remaining banana and slice
crosswise into 1/8 inch thick
slices. Arrange 7 to 8 slices over
the top of each creme brulee
and sprinkle 2 teaspoons sugar
evenly over each surface. With
a kitchen torch, move flame
continuously in small circles
over surface until sugar melts
and lightly browns. Serve at
once. Makes 4.
Banana-Macadamia Madeleines
1 cup mashed ripe banana
1 tablespoon margarine, melt
ed
2 teaspoons dark rum, or 1/8
teaspoon imitation rum extract
1 teaspoon vanilla extract
4 large egg whites
3/4 cup plus 2 tablespoons
sifted powdered sugar
3/4 cup sifted cake flour
1 teaspoon baking powder
1/4 teaspoon salt

prostaglandins, and histamine
in an effort to remove the sub
stance from the body. With the
first exposure to the medica
tion, this hyper sensitization of
the immune system mas? pro
duce only mild symptoms such
as an itchy skin rash or hives.
Subsequent exposures may
cause more serious reactions
because the immune system
retains antibodies to the med
ication that caused the
response. It’s similar to the way
our immune system protects us
against infections we have had
before. The immune system
stores antibodies that “remem
ber” what we’ve been exposed
to previously so that it can
respond to eliminate the threat.
In this case, the immune system
reacts to the presence of the
medication rather than some
viral infection.
The more serious symptoms
that a true drug allergy can pro
duce may include shortness of
breath, wheezing or tachycardia

1 pound boneless beef top
sirloin steak, cut 1 inch thick
2 teaspoons olive oil
2 cloves garlic, minced
1/2 teaspoon cracked black
pepper
1/2 teaspoon salt
1 package (10 to 11
ounces) Caesar salad mix
Grated Parmesan cheese
(optional)
1. Cut beef steak length
wise in half, then crosswise into
1/4-inch thick strips. Combine
oil, garlic and pepper in large
bowl. Add beef; toss to coat.
2. Heat large nonstick
skillet over medium-high heat
until hot. Add 1/2 beef mixture;
stir-fry 2 to 3 minutes or until
outside surface of beef is no
longer pink. Remove from skil
let. Repeat with remaining beef.
Season with salt.
3. Combine beef with let
tuce and dressing from salad
mix in large bowl. Sprinkle with
croutons from mix and cheese,
if desired.
Makes 4 servings.

Baking spray with flour
2 tablespoons powdered sugar
Preheat oven to 375 degrees.
Place banana in a food proces
sor; process until smooth. Add
margarine, rum, vanilla and egg
whites; process until blended.
Combine 3/4 cup plus 2 table
spoons powdered sugar, flour,
baking powder and salt in a
bowl, and add to food processor.
Pulse 2 to 3 times or until com
bined. Add nuts; pulse 2 times
or until well blended. Spoon 1
tablespoon batter into each of
12 madeleine molds coated with
baking spray. Bake at 375
degrees for 15 minutes or until
puffy. Remove from pan imme
diately; let cool on a wire rack.
Repeat procedure with remain
ing batter. Sift 2 tablespoons
powdered sugar over
madeleines. Makes 2 1/2 dozen.
Note: A madeleine pan, with its
shell-shaped indentations, is a
must for these French cakes.
The pans can be purchased in
cookware stores.
Banana-Stuffed French Toast
1 cup mashed ripe banana
1/2 teaspoon lemon juice
4 (1-inch-thick) slices Italian
bread
1 cup skim milk
2 tablespoons brown sugar
2 teaspoons vanilla extract
1/2 teaspoon ground cinna
mon
1/4 teaspoon baking powder
4 large egg whites
2 large eggs
2 teaspoons margarine, divid
ed

serious symptoms of drug aller
gies may be life threatening and
require immediate medical

Some of the more common
medications that cause allergies
are antibiotics (penicillin,
cephalosporins, sulfa drugs),
barbiturates (phenobarbital,
butalbital), iodine (often found
in contrast dyes used for X
rays), local anesthetics (lido
caine, novocaine) and medica
tions that may have an animal
component involved in their
production (certain types of
insulin). It’s important to
remember that any medication
can cause an allergic reaction at
any given time; these are just
some of the more common aller
gy producing medications.
One medication that people
frequently believe they are
allergic to is codeine. While true
drug allergy to codeine and its
derivatives does occur, what
most people think is an allergy

Mediterranean Beef
Steak Salad
Total preparation and cooking
time: 30 minutes
Marinating time: 25 minutes
1 well-trimmed boneless
beef top sirloin steak, cut 1 inch
thick (about 1-1/2 pounds)
1/4 cup prepared Caesar or
zesty Italian salad dressing
8 cups torn romaine let
tuce (10 ounces)
1 medium cucumber,
peeled, seeded, chopped
1/3 cup sliced red onion
3/4 cup prepared Caesar or
zesty salad dressing
1 to 2 cans (14 ounces each)
quartered artichoke hearts,
drained
1-1/2 cups chopped tomatoes
1/2 to 1 cup crumbled
feta cheese
1/4 cup prepared Caesar or
zesty salad dressing
Red onion rings (optional)
1. Place beef steak and 1/4
cup dressing in food-safe plastic
bag; turn steak to coat. Close
bag securely and marinate in
refrigerator 25 minutes.
Combine lettuce, cucumber and
1/3 cup sliced onion in large

1/2 cup maple syrup
Combine banana and lemon
juice in a small bowl. Stir well;
set aside. Cut bread slices in
half crosswise; cut a slit
through cut sides of each piece
of bread to form a pocket. Stuff
2 tablespoons banana mixture
into pocket of each piece of
bread. Combine milk and next
6 ingredients (milk through
in a large shallow dish,
and stir well with a whisk.
Arrange stuff bread pieces in a
single layer in dish, turning to
coat. Cover and chill 45 min
utes or until milk mixture is
absorbed, turning bread over
after 20 minutes. Melt 1 tea
spoon margarine in a large non
stick skillet over medium heat;
add half of bread pieces. Cook 4
minutes. Carefully turn bread
over; cook 3 minutes or until
browned. Repeat procedure
with remaining margarine and
bread pieces. Serve with maple
syrup. Makes 4 servings of 2
bread slices each.
Banana-Strawberry Frozen
Yogurt
2 ripe bananas
1 cup sliced strawberries
1 cup plain fat-free yogurt
1/2 cup sifted powdered sugar
1 teaspoon vanilla extract
Place ingredients in a food
processor; process until smooth.
Pour into freezer can of an ice
cream freezer; freeze according
to manufacturer’s instructions.
Spoon into freezer-safe contain
er; cover and freeze. Makes 4
one-cup size servings.
Bon appatit
(extreme nausea) is actually a
side effect. Codeine can be very
nauseating, especially when
taken on an empty stomach.
This point illustrates the need
to effectively communicate with
both your pharmacist and
physician what happens when
you take medication. This helps
them both treat you more effec
tively. An accurate and up-to
date medical history is an essen
tial tool in providing healthcare
and in an emergency situation it
could save your life.

mixture on each plate. Arrange
artichokes on one side of beef
and tomatoes on other side.
Sprinkle salads with cheese;
drizzle with remaining 1/4 cup
dressing. Garnish with onion
rings, if desired.
Makes 4 servings.
