I’m in the midst of one of
my most anticipated times
of the year. No, not football
season, nor fair time, but
that of apple harvesting.
Apples have been one of my
truly favorite fruits for as
long as I can remember.
Perhaps it is because the
fair began here yesterday
reminding me of the
scrumptious caramel and
candy apples available that
made me want to write
about them.
Apples show up in many
fall and winter meals in my
home. I make applesauce,
stewed apples with pork
chops and baked apple pies,
cobblers and turnovers. I
love the scent of cooking
apples laced with cinnamon
and nutmeg. While Golden
Delicious are my favorite,
others such as Fuji, Gala,
Granny Smith, Jonathan,
Lady, Mclntosh and Red
Delicious have found them
selves in my recipes.
Depending on the variety,
apples can taste sweet or
tart, juicy or dry, flat or
sharp. Whatever apple you
select for cooking, almost
all of them have a purpose.
When cooking apples, the
green to yellow, firm and
tart varieties are the best.
When using them raw, use a
less tart red apple. As a
general rule, the greener
the apple, the tarter the
taste. The Golden Delicious
when green, however, is
very sweet and is an excep
tion to this rule. When cal
culating how many apples
are needed for a recipe,
about 3 medium apples will

Dear David, I have
been taking Fosamax
once a day for osteoporo
sis. My doctor wants me
to swap to a once a week
dose. Will that work as
well and how does
Fosamax work?
Dear Reader, Fosamax
works to prevent osteoporo
sis, which is the thinning
and weakening of the bones
due to calcium loss as we age
(especially in post
menopausal women - but it
is also seen in males), in sev
eral ways.
It reduces the activity of
the cells that cause bone
loss. It also decreases the
increased rate of bone loss
that occurs after
menopause. And lastly, it
increases the amount of cal
cium deposited into the
bones thereby making bones
stronger by increasing bone
density.
However, taking Fosamax
alone won’t help. In addition
to taking Fosamax, calcium
supplementation of at least
1200 milligrams per day is
also needed. For Fosamax to
work most effectively, it
needs calcium in the body.
And the calcium supplement
you take should contain
vitamin D, which is needed
to further enhance calcium
absorption and deposition
into bone.
There are quite a few cal
cium supplements available
and your pharmacist will be
glad to assist you in select
ing a product. I usually rec
ommend the calcium citrate
(Citracal, for example) form
of calcium because it is
absorbed a little better and
seems to have fewer gas-

pounds yields approximate
ly 9 cups of sliced apples.
Apple Sorbet
6 red apples (such as
Idared, Cortland or Rome)
1 tablespoon lemon juice
4 cups water
3/4 cup granulated sugar,
or to taste
1 teaspoon vanilla
Wash the apples and cut
them into quarters with
their skin and seeds. Place
the apples in a nonreactive
saucepan and mix with the
lemon juice. Add the water
and sugar and bring to a
boil over high heat. Reduce
the heat, cover and simmer
for 45 minutes, or until the
apples are soft and mushy.
Stir in the vanilla. Strain
the mixture into a bowl
through a food mill and dis
card the skin and pits.
Refrigerate until cold. Pour
the mixture into an ice
cream machine and freeze
according to the manufac
turer’s directions. Makes
about 1 quart. Note: Apple
sorbet is a refreshing
entremet at any special din
ner and an especially festive
dessert when served with
warm caramel sauce or
sauce anglaise.

select, try to purchase the
lower priced store brands.
They’ll work just as well.
And it’s best to avoid calci
um supplements that con
tain either dolomite or that
say they are obtained from
oyster shells. These supple
ments have been noted, in
some instances, to be con
taminated with toxic chemi
cals such as lead.
This can be misleading
because some calcium sup
plements may say “Oyster
Shell Calcium” by which
they mean calcium carbon
ate. Check the label to see if
it reads simply calcium car
bonate or calcium carbonate
obtained from oyster shells.
In addition to calcium
supplementation, there are
some lifestyle changes that
can be made to help prevent
the loss of calcium from the
bones. These changes, like
calcium supplementation,
should be started well before
menopause or osteoporosis
is diagnosed.

Caramel Apples
4 to 5 Mclntosh apples
1 cup granulated sugar
3/4 cup dark corn syrup
1 cup heavy cream
2 tablespoons unsalted
butter
1 teaspoon vanilla
Wash and dry the apples,
remove the stems and stick
a wooden skewer into each
stem end. Set skewered
apples aside. In a small
saucepan, combine the
sugar, syrup, cream and but
ter and place over high heat.
Bring the mixture to a boil
for 3 to 5 minutes or until it
registers 245 degrees F. on a
candy thermometer.
Remove from the heat and
swirl in the vanilla. Quickly
dip the apples, one at a time,
into the caramel and spoon
over the apples to cover
completely. Hold the skew
er between the palms of
your hands and spin for a
moment to cool. Place
upright on waxed paper.
Makes 4 to 5 candied apples.
Apple-Mint Chutney
3 tamarind pods or 1/2
cup canned tamarind
6 tart apples, peeled,
cored and sliced
1/2 cup raw brown sugar
1/3 cup cider vinegar
1 teaspoon chili powder
1 teaspoon salt
2 teaspoons dried mint
Soak the tamarind pods in
warm water for 30 minutes.
Use your fingers to squeeze
the pulp from the pods and
seeds, Strain through a fine
sieve. Place the remaining
ingredients, tamarind paste
and 1/3 cup water in a non
reactive pot. Bring to a boil,
reduce the heat and simmer
uncovered for 30 minutes,
or until the apples are ten
der and mixture is thick.
First, stop smoking.
Smoking appears to increase
risk of osteoporosis (as well
as the risk of quite a few
other ailments). Second,
exercise regularly. Like mus
cles, bones are strengthened
by exercise. Third, minimize
alcohol and soda intake.
Frequent alcohol use
appears to increase risk of
osteoporosis as can too
many sodas (most of which
contain phosphoric acid
which can contribute to cal
cium loss from bones).
Lastly, eat a more balanced
diet to ensure better nutri
tion and metabolic function.
As for the once a week
dose, I think that is an excel
lent recommendation from
your physician. Fosamax
must be taken first thing in
the morning with a glass of
water (not mineral water,
juice, coffee, tea or soda, all
of which may interfere with
absorption of Fosamax). To
further ensure absorption,
nothing else should be con
sumed for thirty minutes
after taking Fosamax. And
since Fosamax can be very
irritating to the stomach
and esophagus, it’s impor
tant to not lie or sit down
during those thirty minutes
after taking your dose.
Doing this every day is a
pain in your schedule. Who
wants to put up with the
hassle every morning?
Besides the aggravation, it’s
shown that daily dose (even
in patients who follow the
dosing recommendations)

Ladle the chutney into ster
ilized hot pint or half-pint
jars, leaving approximately
1/4-inch headspace. Seal
the jars with canning lids
according to manufacturer’s
directions and process in a
boiling water bath for 10
minutes. Cool, tighten lids,
and store. Or, cover tightly
and keep in the refrigerator
up to 2 weeks. Makes about
1 quart. Note: Tamarind is
mainly used in the cooking
of India and the West Indies.
As the tamarind is tart
sweet, it adds authentic fla
vor to this dish.
Swiss Macaroni with
Melted Gruyere and
Apple Compote
4 to 5 firm apples, peeled,
cored and sliced
1 teaspoon grated lemon
zest
1 tablespoon granulated
sugar or to taste
6 tablespoons unsalted
butter
1 tablespoon vegetable oil
4 medium onions, thinly
sliced
3/4 pound small elbow
macaroni
8 ounces Gruyere, grated
Salt and freshly ground
black pepper to taste
4 tablespoons snipped
fresh chives
In a nonreactive pot, toss
the apples with the lemon
zest and sugar. Add 1 to 2
tablespoons of water if the
apples are dry. Cover and
place over low heat and cook
for about 10 minutes, or
until the apples are soft.
Shake the pan form time to
time to prevent the apples
from sticking. Set aside and
keep warm. In a large
heavy skillet, melt 3 table
spoons of butter with the
vegetable oil over medium
high heat. Add the onions
and saute until crisp and
may still cause gastric and
esophageal irritation. The
once a week dose appears to
cause fewer stomach and
esophageal side effects, only
interferes with your morn
ing once a week, and seems
to work just as well as the
daily dose.
It’s important to remem
ber that even though you’re
taking Fosamax once a
week, you should continue
to take your calcium supple
ments every day. You need to
try to maintain relatively
consistent blood levels of
calcium to maximize the
effectiveness of Fosamax.

and Encoders will begin at 10:00 a.m. on Wednesday, October 15, 2003. The Logic

the macaroni according to
package directions. Drain
the macaroni and toss with
the remaining 3 tablespoons
butter and cheese; salt and
pepper to taste. Divide the
macaroni among 4 warm
plates. Top each plate of
macaroni with the onions
and generously sprinkle the
chives on top. Serve the
apple compote on the side.
Serves 4.
Fresh Apple Cake
3 cups flour
1 teaspoon salt
1 teaspoon baking soda
1 teaspoon baking powder
2 cups sugar
1 cup vegetable oil
3 eggs
3 cups peeled, cored,
chopped apples
1 cup chopped pecans
1 teaspoon vanilla
Combine flour, salt, bak
ing soda, baking powder and
sugar. Add oil and eggs and
beat to combine. Stir in
apples, pecans and vanilla.
Batter will be stiff. Put bat
ter in an ungreased 10-inch
tube pan. Bake 1 hour at
350 degrees, cool in pan 20
minutes before turning out
onto wire rack to cool com
pletely.
Glaze:
1/4 cup butter
1 cup brown sugar
Pinch salt
3 tablespoons whipping
cream
1/2 teaspoon vanilla
In a saucepan, melt but
ter; add sugar, salt and
cream, stirring to combine.
Cook 2 minutes. Add vanil
la. Pour over cooled cake.
Note: This was one of my
Mother’s favorite fall cakes
to bake and is just so deli

Key Lime Pie
4 egg yolks
1 can sweetened con
densed milk
1/2 cup lime juice
grated lime rind
a few drops green food col
oring
Beat yolks of eggs until
until lemon color. Add
sweetened condensed milk
and beat lightly. Add lime
juice, food coloring, and beat
for a minute or two until
smooth and thick. Pour mix
ture into baked pastry shell
or graham cracker crust,.
Top with meringue. (Grated
lime rind may be mixed with
filling or sprinkled on top of
meringue.)
Meringue:
4 egg whites
1/4 teaspoon cream of tar
tar
2/4 cup sugar
A few drops of lime juice.
Beat egg white until stiff.
Add cream of tartar, sugar
and lime juice. Swirl on top
of the lime custard. Bake for
about 15 minutes at 350
degrees.
