Flavor is certainly one of
the things I remember most
after a special meal. Herbs
provide us with flavor as
well as fragrance for our
cooking and gardens. Three
of my favorite herbs to grow
and cook with are basil, sage
and mint. I have had won
derful success with each of
them. Basil is essential for
Italian dishes and pork and
poultry are perfect when
paired with sage. Mint is
fabulous in many desserts
and when used with lamb.
With the upcoming
Kentucky Derby plan on
using a variety of mint
called Kentucky Colonel.

Sweet Basil
Basil is a perennial in mild
climates, but an annual in
northern states. You may
start seeds six to eight
weeks before transplanting
outdoors or sow the seeds
after the danger of frost
passes. Basil grows well in
average soil and in sun or
part shade. I most often buy

The arrival of Easter (and
the yellow pollen of the pine
trees) has always meant the
true beginning of spring to
me. And with spring, more
and more people venture out
to participate in outdoor
activities from gardening to
soccer practice to softball. A
great many of these people
will experience seasonal
allergies.
The American Academy of
Allergy Asthma and
Immunology reports that an
estimated 35 million
Americans currently suffer
from seasonal allergies, and
since allergies can lead to
other chronic conditions,
such as asthma, they should
not be taken lightly.
The most common symp
tom of seasonal allergies is
allergic rhinitis. Allergic
rhinitis is the inflammation
of the membranes lining the
nasal cavity and the accom
panying symptoms of sneez
ing, runny nose, nasal con
gestion, post-nasal drip and
itchy eyes. The most effec

degrees F., add asparagus to
oven. Roast about 30 min
utes more or until asparagus
is tender and ham registers
140 degrees F.
For lemon sauce, in a 1
1/2-quart saucepan combine
cornstarch, sugar, bouillon
granules and pepper. Stir in
water, lemon juice and
lemon peel. Bring to boil;
reduce heat. Cook and stir
until mixture is bubbly.
Cook for 2 minutes more.
Stir in butter and snipped
thyme or parsley.
To serve, slice ham. Serve

add a great deal of flavor to
any tomato dish. At the end
of the season, you can pull
the leaves and store in jars.
As they are quite fleshy,
basil leaves need a few more
weeks drying time than
other herbs.
Sage
As a perennial, this hardy
evergreen shrub grows well
in a sunny, well-drained
spot. Seeds can be planted
outdoors in early spring. To
develop more plants, take
cuttings in spring from the
heels of growing stems. The

allergic to.
Besides, how can you
avoid allergens when they
are everywhere, even in the
air we breathe? Anyone who
has been in Georgia in the
spring knows that it’s pretty
hard to avoid pollen.

1 cup hot cooked grits
2 tablespoons butter

scent and taste and is won
derful used in poultry dress
ing or pork suusage. While
the flavor is powerful, the
looks of the shrub is not con
sidered very attractive.
Sage has gray-green foliage
and is a relative to the west
ern sagebrush. The fuzzy
leaf protects ugainst drying
out making sage a perfect
desert plant.
Mint
This herb is a perennial
with prefers rich soil and
light shade. It requires little
care other than removing
flowers and checking that it
doesn’t overtake other
shrubs. Though mint pro
duces no seeds, the plant
propagates itself easily from
stolons. It is sometimes bet
ter to plant mint in a pot or
in a bucket set in the
ground. To provide a supply
of fresh mint during the
winter, place a few plants in
pots and stand them indoors
on a window sill. Or you can
dry the leaves and store in
jars for winter use.

Although these things
may minimize your expo
sure, most people will still
experience some symptoms
of seasonal allergies. The
symptoms are caused by the
release of a chemical in the
body called histamine.

Preheat oven to 375° F.
Combine grits and butter,
stir until butter is melted
and grits are smooth and
creamy. Add country ham
and mix well. Pour mixture
into pie shell, set aside.
In medium bowl, beat
together eggs, whipping
cream, pepper and cheese.
Pour over grits mixture.
Bake until knife inserted
near center comes out clean.
(About 30 to 40 minutes).
Let stand 5 minutes
before serving.

To make pesto, put basil,
garlic and half of the pine
nuts in a mortar and pound,
gradually adding the grated
Parmesan until it is a paste.
Stir in the olive oil. If you
prefer, you can use a
blender. I find this quicker
and more effective. Season
the scallopini with salt and
pepper, heat half oil and half
butter in a skillet until hot
and sautd the scallopini for 1
1/2 minutes on each side.
Remove from the skillet and
keep warm in a serving dish.
Drain oil and butter from
the skillet and add pesto
paste. Bring to a boil for one
minute and add the brown
sauce or demi-glace. Stir
until it comes to a smooth
sauce. Pour over the meat
and sprinkle over the pine
nuts. Makes 6 servings.

tions for allergy symptoms
usually contain antihista
mines, which work by block
ing the effects of histamine.
The older antihistamines
Benadryl. ChlorTrimeton,
and Tavist) make people
drowsy and/or dizzy, but the
newer antihistamines
(Claritin, Allegra) are very
safe and effective and cause
little or no drowsiness. The
non-sedating antihistamines
used to be prescription only.
However, Claritin is now
available over the counter.
Nasal sprays containing
an anti-inflammatory’ med
ication. called a corticos
teroid, are also used to treat
the symptoms of allergic
rhinitis. Just as hydrocorti

A good handful of
leaves and flowers of
sage
6 cups eau-de-vie (100
proof)
1 8/4 cups sugar
2 1/4 cups water
Place the sage leaves and
flowers in a wide-necked
bottle or jar and add the
eau-de-vie. Cover and leave
in a warm place for eight
days then strain into a bot
tle. Dissolve the sugar in
the water over low heat,
then bring to a boil. Cool
the syrup and add to the
eau-de-vie. Seal the bottle
and store in a cool, dark
place, or drink immediately.
Serve in a small glass as an
appetizer or digestive.
Rack of Lamb Dljonnaise

1 (4-pound) split rack
of domestic lamb
1/4 cup oil
1/2 teaspoon salt
1/2 teaspoon ground
pepper
1/4 teaspoon fresh rose
mary
1 bunch fresh mint
1/4 cup red vinegar
1/4 cup water

prescription only and the
only drawback to these
inhaled corticosteroids
(Flonase, Nasonex,
Rhinocort, and Beconase) is
that they take a few days of
use to begin to work. They
do not provide the immedi
ate temporary relief that
one gets from ‘over-the
counter nasal sprays such as
Afrin.
The difference between
the products is in the way
they work. Afrin merely con
stricts the blood vessels of
the nasal passage, which
temporarily relieves conges
tion, but does nothing to
alleviate the cause of the
congestion, which is the
allergen. And when the drug
wears ofT, the blood vessels
refill with blood; often
becoming more swollen than
before use of the medication.

1/4 cup Dijon mustard
2 tablespoons butter
6 tablespoons bread
crumbs
1 clove garlic
1/4 teaspoon fresh rose
mary

Have butcher scrape all
fat from lamb and remove
connective tissue form
bones down to tenderloin.
Brush with oil and rub in
salt, pepper and rosemary
leaves. Let stand for a cou
ple of hours. To make mint
sauce, finely chop fresh mint
and mix with vinegar, water,
sugar, salt and pepper to
taste. Preheat oven to 450
degrees F. Cover lamb with
foil and roast for 3 to 5 min
utes. Baste with mustard
and pan drippings. Reduce
oven temperature to 325
degrees F. and cook for 5 to 7
minutes for rare. Saut£
bread crumbs in butter with
mashed garlic, additional
rosemary and chopped pars
ley. Before serving, coat
lamb with seasoned bread
crumbs and brown under
the broiler on all sides. Slice
rack of lamb just before
serving. Serve with mint
sauce on the side. Makes 2
servings.
