It is said that children are
a gift from God. There are
occasions when parents may
doubt this, but that feeling
passes quickly. I have often
said that I begin missing my
son and daughter being
‘ small around Halloween
because of all the things we
made in the kitchen and the
decorating. Kids are so
amazing especially in these
times. I have two wonderful
young nephews, Thomas
and Nathan, two beautiful
great-nieces, Shelby and
Jillian, and a terrific great
nephew, Jonathan all of
whom I get to enjoy and
watch grow up. I also have a
man in my life with two
small daughters, Ellen and
Callie, whom I get to spend
time with and who like to
cook with me. I have kept
all of the cookbooks I used
when Stephen and Jada
were small and re-read them

Gout - ways to help prevent attacks
My Mom called me at work
this week and, like it always
does, it scared me for a
minute. Money was very tight
when I was growing up and
there was just no reason to
call anybody long-distance
during the day unless some
thing was seriously wrong.
Old habits die hard and my
Mom still rarely calls during
the day. And she usually
laughs at me when she does
call and the first thing I say
(after she has to tell me “This
is your Mother) is “Hi Mom,
what’s wrong?”
She laughs because she
knows that she has scared me
and she knows it’s usually
nothing serious. Much to my
relief, it was nothing serious
this time. My Dad had a flare
up of his gout and his physi
cian had given him a steroid
dose pack to take.

daily doses of medication,
usually tapering down)

desired. Bake in hot oven
(425 F) 10 to 15 minutes.
Microwave
Prepare as directed above
for baking and microwave
on high (100% Power) 3 to 4
minutes for four halves; 5 to

halves.

is called Amazing Magical
Jell-0 Desserts. It contains
a variety of recipes using
packaged gelatin and pud
ding. In 1845 Peter Cooper
invented a gelatin dessert
which failed when it didn’t
find a market. However,
later a cough syrup manu
facturer added it to his line
renaming it Jell-0. A little
girl named Elizabeth King
became the advertising
spark the product needed to
become a mothers’ answer

instructed my Dad to start
taking tablets with breakfast.
My Mom was calling (since
even though it was my Dad’s
medicine - she’d be telling
him how to take it) because it
was late afternoon and she
wanted to know whether he
should go ahead and start the
medicine or wait until the
next morning.
I told her to go ahead have
weigh about 1 pound. 1
pound of fresh tomatoes,
peeled and seeded, will pro
duce about 1 1/2 cups pulp.
Serving Tips
• Use ripe, red tomatoes
first; they have the most fla
vor.
• Fully ripe tomatoes will
be firm, but will give slight
ly to gentle palm pressure.
• To peel, submerge toma
toes in boiling water for 30
seconds, then plunge into
cold water, drain and slip off

history of gelatin goes back
to a 17th century
Frenchman, Denis Papin,
who found a way to remove
the glutinous material from
animal bones by boiling. It
wasn’t until 200 years later,
after Charles B. Knox’s
invention of a granular
form, that gelatin became
popular. Unflavored it is
used in many main dishes
and salads, but when fla
vored, it is used in making
delicious desserts. I thought
some of the recipes from my
book might be useful in
bringing little ones in from
the heat of summer and cre
ating a memory for you
both. Enjoy!
Sunny Whip
1 package (3 oz.) Jell-O
Brand orange flavor gel
atin
1 cup boiling water
3/4 cup cold orange
juice
Dissolve gelatin in boiling
water. Add orange juice.
Chill until slightly thick

how my Dad wants things. He
doesn’t like to take medicines
and he likes to eat whatever
he wants.
“He’s been working outside

and getting real sweaty a lot”
my Mom replied. I didn’t tell
Mom to tell him that, at 66
and living in southwest
Georgia, it might not be a
good idea for him to be work
ing in the yard in July. I’m
still their child and he’s going
skins.

fluffy and thick, about dou
ble in volume. Spoon into
dessert glasses. Garnish
with halved orange slices,
decorated with cloves and
maraschino cherries, to
make faces, if desired.
Makes 4 cups or 6 servings.
Enchanted
Chocolate-Cherry
1 package (3 oz.) Jell-O
Brand cherry flavor gela
tin
1 cup boiling water
3 tablespoons cold
water
1 1/2 cups chocolate ice
cream
1/2 cup thawed Cool
Whip topping
Dissolve gelatin in boiling
water. Measure 1/4 cup, add
cold water and set aside.
Blend ice cream into
remaining gelatin and spoon
into 4 dessert glasses. Chill
until set but not firm.
Spoon reserved gelatin over
creamy gelatin in glasses.
Chill until set. Top each

I then asked a question to
which I already knew the
answer. “Has he been drink
ing a lot of water?” I asked
(my Dad can’t stand plain
water). “Diet soda and tea
mostly,” my Mom answered.
It was just as I suspected; los
ing fluid from sweating, and
the tea and soda had led to
this attack.
“Have him drink water -
lots of water” I told her “and
make sure he takes his medi
cine.” She assured me she
would and when I checked
with them a few days later he
was much better. When I
related this conversation to
one of the pharmacists with
which I work (whose husband
also has gout) she got a chuck
le.
I’ve told her before how my
Dad doesn’t like to follow the
necessary guidelines to help
reduce the frequency and
severity of gout attacks. After
seeds contain significant
nutritional benefits.

Lemon Honey Yummy
1 package (3 oz.) Jell-O
brand lemon flavor gela
tin
1 1/4 cups boiling water
1/3 cup honey
3 tablespoons lemon
juice
1 teaspoon grated
lemon rind
1 envelope Dream
Whip topping mix
2/3 cup vanilla wafer
crumbs
Dissolve gelatin in boiling
water. Stir in honey, lemon
juice and rind; chill until
slightly thickened. Prepare
whipped topping mix as
directed on package. Beat
gelatin, with hand mixer
until fluffy, then fold in
whipped topping. Spread
half the crumbs in bottom of
a 8-inch square pan. Spoon

should write a column on
gout.”
Gout, or gouty arthritis, is
a metabolic disorder in which
uric acid levels in the body are
elevated. This is from either
an increased production of
uric acid or a decreased abili
ty of the kidneys to remove
uric acid. The excess uric acid
can lead to formation of
sharp, needle-like crystals in
various joints (toes, knees and
ankles usually).
This is what happens in an
acute gout attack. The uric
acid crystals form in one or
more joints (often at night
and often very rapidly) caus
ing inflammation, swelling, a
warm or hot feeling, and pain
which is often excruciating.
The medications prescribed
to treat gout (Allopurinol,
Colchicine, Probenecid) work
to reduce the amount of uric
acid in the body by either
reducing production or

brand peach flavor gela
tin
1 cup boiling water
1 container (4 1/2 oz.)
Cool Whip topping,
thawed
14 double graham
crackers, separated
Dissolve gelatin in boiling
water and chill until slightly
thickened. Fold in whipped
topping. Spread gelatin
mixture about 1/2 inch thick
on 14 of the crackers, top
with remaining crackers,
pressing lightly and smooth
ing around edges with spat
ula. Freeze until firm, about
3 hours. Makes 14 sand
wiches.
