It is an art. It requires
instinct and taste rather
than exact measurements.

Those close to me know
how much I love cookbooks
and that I have quite a num
ber of them. I have collected
books for years. I never
seem to tire of reading and
re-reading the recipes con
tained within the pages. I
received two new cookbooks
this Christmas and will
share their contents in my
column. In this article I
want to write about a collec
tion called “In the Kitchen
with Countybank.” This
book is composed of recipes
from the employees of
Countybank which was
founded in Greenwood, S.C.
It was a gift from a dear
friend, Kay Reeves, who is
my son-in-law’s stepmother.
Kay is in trust services. All
of the money collected from
the book sales is donated to
United Way of Greenwood

WASHINGTON - The gov
ernment last week urged
most Americans to eat fewer
calories and exercise 30 to
90 minutes a day, updating
guidelines that advised peo
ple to lose weight but gave
few specifics on how to do it.
The new dietary guide
lines will be used to update
the familiar food pyramid,
which most people recognize
but few heed. That revision,
expected in the next couple
of months, would be the
pyramid’s first since it was
created 12 years ago. Among
the possibilities: the pyra
mid could give way to a dif
ferent shape.
Federal officials acknowl
edged that much of the
advice will not be new to
Americans, who spent mil
lions on diet books trying to
lose weight.
“It’s really common sense.
Do you want to look better?
Do you want to feel better?”
Health and Human Services
Secretary Tommy
Thompson said. “You lower
your calorie intake, you
lower your carbs, your fats.
You eat more fruits and veg
etables, and you exercise.
That’s as simple as it can be.
That is not too hard.”
Thompson noted that two
in three Americans are over
weight or obese and suggest
ed that the guidelines are
well timed, coming in
January, soon after many
have made New Year’s reso
lutions to live healthier
lifestyles.
The guidelines, developed
by HHS and the Agriculture
Department, strengthen the
government’s advice on

People should also eat a
lot more vegetables and
fruit, particularly whole
fruits and vegetables rather
than juices, the guidelines
said. And they recommend
three one-ounce servings of
whole grains each day, such
as certain unsweetened
breakfast cereals, to reduce
the risk of heart disease and
help maintain weight.
Agriculture Secretary Ann
Veneman said the popularity
of diet books and products
shows that “Americans are
interested in leading health
ier lives, but they want cred
ible, consistent and coherent
information to help them
make the best possible
choices.”
Thompson added that peo
ple should not assume that
researchers at the National
Institute of Health are going
to come up with a miracle
diet pill.
“Every American is wait
ing for NIH to come up with
that pill,” he said. “It’s not
going to happen.”
The government’s advice
is not really new, but offi
cials see the guidelines as an
opportunity to change peo
ple’s ways.
“It has been a big problem
in the past that basically, the
federal government has pub
lished a booklet and then
crossed their fingers and
hoped that Americans ate
better,” said Margo Woo tan,

1/3 cup cider vinegar
Break up noodle mix with
slaw, sunflower seeds and
almonds. Mix dressing and
pour over salad. Toss every
thing together and let set for
24 hours.

8 ounces macaroni,
boiled
3 cups sharp Cheddar
cheese, shredded
1 can Pet evaporated
milk, large
1 1/2 cups skim milk
2 eggs
3 teaspoons butter

13-member panel of scien
tists and doctors who spent
nearly a year reviewing
Cheddar cheese. Repeat
with layers of macaroni and
cheese until all macaroni

1 can (10 3/4-oz.) con
densed cream of mush
room soup, undiluted
1/2 cup sour cream

6 pork loin chops
In a greased 13x9x2 bak
ing dish, layer half of the
potatoes and onions; sprin
kle with salt and pepper.
Repeat layers. Combine the
soup and sour cream and
pour over potato mixture.

brown pork chops on both
sides. When potato mixture
is done, place chops on top of
casserole, cover and return
to oven for 45 minutes,
uncovering the last 15 min
utes.

1 can sweetened con
densed milk
1/4 cup lemon juice
1 (12 oz.) container of
Cool Whip
1 small package straw
berry Jell-o mix
1 quart strawberries,
mashed and drained
2 graham cracker
crusts
Mix all ingredients togeth
er and pour into 2 small gra
ham cracker crusts. Put
into refrigerator for at least
4 to 5 hours or overnight
before serving.
