Family fare with a flair from Dawn Jerles
We’re always looking for
recipes from local cooks, and
“Keepers” will focus on
some of Houston County’s
best. These are from Dawn
Jerles of Perry, and include
her notes. (Thanks go to
Julie Evans for rounding up
a group of outstanding cooks
for this new weekly feature.)
Empanadas
Dawn’s notes: “I made
these several weeks ago and
while the ingredients may
seem like a strange mix,
they’re very tasty and easy.
The best part: they can be
made ahead and frozen
before baking!”
1 / 2 lb. bulk sausage
(mild or hot)
4 tablespoon finely
chopped onion
1/4 tsp. garlic powder
1/4 tsp. ground cumin
1/4 tsp. oregano
2 teaspoons chopped
stuffed green olives
2 teaspoons chopped
raisins
1 box frozen puff pas
try sheets
Cook the sausage and
crumble. Stir in the remain
ing ingredients. Allow to
cool. Thaw the puff pastry
sheets according to the
package directions. Roll out
dough slightly. Cut into 3”
rounds. (You should get 9
rounds per sheet of dough)
Place 1 Tbsp. of pork mix
ture in the center of each
round. Moisten the edges

requirement was that the
pipes would not come out
until my husband put on a
kilt. My husband good
naturedly granted his
request.
Scott generously provided
information on how a bag
pipe is played and invited
everyone to attempt a few
notes. Only a brave few took
him up on the offer. I can
now say that I have a new
found respect for bagpipers.
In the end, as your guests
prepare to leave, it is always
a thoughtful gesture to pres
ent a small token for them
to take home.
We wrapped Scottish
shortbread and butterscotch
candies in clear cellophane
bags tied with tartan ribbon.
As always a relaxed and
happy host makes for
relaxed and happy guests.

Use the tines of a fork to
seal the edges well.
You may freeze at this
point or bake at 375 degrees
for 20 minutes.
Simple Tomato Sauce
Dawn’s notes: “I found
this tomato sauce recipe on
foodnetwork.com and have
used it for everything from a
plain tomato sauce to chick
en parmesan. It’s easy, uses
simple ingredients, and
freezes well. Adding turkey
Italian sausage makes for a
healthy pasta sauce. ”
1 small onion chopped
2 cloves garlic,
chopped
1 stalk celery, chopped
1 carrot, chopped
2 (32 oz) can crushed
tomatoes (I use the Pomi
brand that is in a box)
4-6 basil leaves (or
dried basil)
2 bay leaves
Saute the vegetables in a
small amount of olive oil
until tender. Add the toma
toes, basil, and bay leaves.

Creamy Chicken
Enchiladas
Dawn’s notes: “My sister
in-law, Kim, sent me this
recipe. They are very rich,
but very good! It is a great
recipe to use when making a
meal for someone because it
can be made a day in
advance, refrigerated, and
then cooked just before tak
ing. ”
1 tablespoon butter
1 medium onion,
chopped
1 small can chopped
green chilies, drained
1 8 oz package cream
cheese, cut into cubes
and softened
3 1/2 cups cooked
chicken
8 (8 inch) tortillas
2 (8 oz.) packages
Monterey Jack cheese,
shredded

2 cups whipping cream
Saute the onion in butter,
add chilies, cream cheese,
and chicken and stir until
cheese melts. Spoon 2-3
Tbsp. of this mixture down
the center of each of the tor
tillas and roll up. Place the
rolled tortillas seam-side
down in a lightly greased
9x13 baking dish. Sprinkle
with cheese and drizzle with
whipping cream.
Bake at 450 degrees for 45
minutes. Yield 4-5 servings.
Note: Substitute low-fat
cream cheese and fat-free
half and half if you choose.
It won’t be quite as creamy,
but also a bit healthier.
Dark Chocolate Cookies
Dawn’s notes: “These
cookies have become a staple
at our house. You can add
chocolate chips, white choco
late chips, dried cherries,
nuts - Anything you think
goes in a chocolate cookie.
They are particularly good
dipped in a glass of milk!”
3/4 cup plain flour
3/4 cup cocoa
1/2 teaspoon baking
soda
1 / 2 teaspoon, salt
3/4 cup (1 1/2 stick)
unsalted butter, softened
1 cup sugar
2 eggs
1 tsp. vanilla
Whisk together flour,
cocoa, soda, and salt and set
aside.
Cream the butter and
sugar until fluffy. Beat in
