Too hot to cook. Time to
think sandwiches, salads
and anything that takes no
longer than 15 minutes to
prepare. Are you with me?
This week we are sharing a
few recipes that may seem
a bit unusual, but given a
try, I’ll bet you’ll love them.
To get a jump on pasta sal
ads, the box type is very
tasty. Use your imagination
and add shrimp, salmon,
chopped ham or diced cooked
chicken - or any left-over
meat - to the boxed, cooked
salad and you’ll be surprised
how hearty they are. Don’t
forget to chip a tomato into
pasta salad servings. Don’t
add to the whole bowl unless
you have a crowd and it will
all be consumed because the
tomato will get soggy if there
are left-overs.
SHRIMP-MACARONI
SALAD
1 8-ounce box macaro
ni, cooked and drained
1 pound salad shrimp
1 small green bell pep
per, diced
1 small Vidalia onion,
diced
2 ribs celery, diced
1 tablespoons minced
fresh parsley
2 tablespoons sweet
pickle relish (optional)
1 small jar pimento,
chopped
1 small can black olive
slices
1 teaspoon Malt Vinegar
or apple cider vinegar
Mayonnaise to taste
Salt and pepper to taste
Mixed salad greens
Mix all salad ingredients
together. Cover and chill until
serving time. Serves eight.
Serve with a hard roll or
toasted pumpernickle bread
slices which have been but
tered and toasted. Good!
DATE-CHEESE OPEN
FACE SANDWICHES
Combine equal amounts of
chopped dates and softened
cream cheese. Moisten with
mayonnaise to spreadingcon
sistency. Spread on buttered
whole wheat bread rounds.
DRIED BEE,
CREAM CHEESE
SANDWICHES
1 small jar dried beef
1 8-ounce block cream
cheese, softened
Mayonnaise
1 green onion, minced
or 1 Tbsp minced white
onion (optional)
2 tbsps toasted pecans
(optional)
Rinse dried beef slices in
cold water and pat dry with
paper towels. Chop finely and
place in a mixing bowl. Add
all other ingredients, mixing
well. Spread between white
bread rounds. Great for par
ties or munching. For a great
change, leave off the nuts
and add about 2 tablespoons
grated cucumber. Tasty!
CUCUMBER
SANDWICHES
1 medium cucumber
4 hard-boiled eggs,
chopped
1 tsp minced onion
Salt and pepper
Paprika
Mayonnaise.
Peel cucumber and cut
lengthwise, remove seeds.
Chop cucumber. There
should be 1 cup of pulp. Add
onion, eggs, salt and pep
per to taste and mayonnaise.
Spread on buttered slices
of white bread and sprinkle
with paprika.

It’s all well and good to
try gourmet dishes or to be
adventurous and creative in
the kitchen but any cook,
from beginner to grandpar
ent, needs a supply of easy
no-fuss recipes.
Here’s a sampling of fam
ily-friendly recipes.
Easy Chickb\i Bake
This is easy to assemble
but takes two hours to cook,
so plan ahead.
6 boneless, skinless
chicken breasts
1 can cream of chick
en soup
1 can cream of mush
room soup
Va cup milk
1 cup instant rice,
uncooked
1 package Lipton’s
Onion Soup Mix
Preheat oven to 325
degrees. Combine canned
soups, dry soup mix and
milk. Stir well to blend.
Grease a 9x13” glass baking
dish. Spread rice on bot
tom of dish. Arrange chick
en pieces on rice, and pour
soup and milk mixture over
all. Cover tightly with foil
and bake for at least two
hours, or until chicken is
done.
Hamburger Upside-
Down Pie
Kids love this.
1 lb. lean ground beef
Va cup celery, chopped
Va cup onion, chopped
Va cup green pepper
chopped
Va cup tomato sauce
1 teaspoon mustard
1 cup Bisquick
V* cup milk
4-6 slices of American
cheese
preheat oven to 450
degrees. Brown beef, celery,
onion and green peper and
stir in tomato sauce and
mustard. Place meat mix
ture in greased pie dish.
Mix Bisquick with milk to
make a biscuit dough and
roll it out into a circle large
enough to cover the meat
mixture. Bake for 10-15
minutes until biscuit top
ping is done. Turn upside
down and top with cheese
slices while hot.
Potato Caesar Chicken
Salad
12 oz. skinless, bone
less chicken breasts, cut
into bite-size strips
1 Tbsp. oil
1 can (29 oz) DEL
MONTE® Whole New
Potatoes, drained and
halved
1 pkg. (10 oz.) torn
mixed salad greens
1 small red onion,
sliced

salad dressing
1/3 cup croutons
2 Tbsp. finely shred
ded Parmesan cheese
Cook and stir chicken in
hot oil in large skillet over
medium-high heat 3 min
utes or until chicken is no
longer pink.
Add potatoes, Cover and
cook 2 to 3 minutes or
until potatoes are heated
through.
Arrange greens and onion
on serving platter. Top with
chicken mixture. Drizzle
with dressing. Sprinkle with
croutons and Parmesan
cheese.
Chhj-Macaroni
You can’t get any easier,
but it’s still good. Using
good-quality .diced canned
tomatoes makes a differ
ence.
1 lb. ground beef
1 onion chopped
1 can tomatoes und
rained
1-2 cups cooked and
drained macaroni
Brown the bround beef
with the onion. Drain off
any excess fat. At the toma
toes and macaroni and keep
hot for five minutes to let
flavors blend. This is good
with garlic bread and a
green salad.
Quiche Lorraine
No kidding! This is easy
as pie if you buy the pie
shell ready-made. Once
you master the basic quiche,
you can get creative and
add veggies that your fam
ily likes, or try diced ham
instead of bacon.
1 9 inch baked pie
shell
6 slices of bacon,
cooked and crumbled
1 cup grated Swiss
cheese
6 eggs beaten
1 cup milk
Va teaspoon salt
Pepper to taste
Preheat oven to 350
degrees. Sprinkle cheese
and bacon on bottom of
baked pie shell. Combine
remaining ingredients and
mix well. Pour over bacon
and cheese. Bake for 35-
40 minutes until a knife
inserted in the center comes
out clean.
Sloppy Joes
1 lb. lean ground
beef
1 cup chopped onions
3/4 cup Steak Sauce
1/4 cup water
1 tsp. chili powder
4 Classic Wheat or
White Bakery Buns
toasted
Cook and stir meat and
onions in large skillet until
browned; drain.

Stir in steak sauce* water
and chili powder; bring to
boil. Reduce heat; simmer
10 to 12 minutes.
Spoon meat mixture into
buns to serve.

Chicken Puttanesca-
Style
2 tablespoon olive oil
2-1/2- to 3-lb. chicken,
cut into serving pieces
1 medium onion,
sliced
1/4 cup balsamic vin
egar
1 jar (1 lb. 10 oz.)

Pasta Sauce
1 cup pitted ripe
olives
1 tablespoon drained
capers
In a large skillet, heat
olive oil over medium-high
heat and brown chicken.
Remove chicken and set
aside; drain.
In same skillet, add onion
and vinegar and cook over
