Going whole grain? Try corn tortillas
(ARA) - By now, nearly
everyone has heard about
the health benefits of whole
grains. While more and more
products labeled “whole
grain” are showing up on
supermarket shelves, most
still take the form of breads
or cereals. If you’re looking
for something different - or
just to reduce your wheat
intake - consider corn tor
tillas.
Tortillas are versatile,
easy to prepare and can be
very healthy.
However, not all tortillas
are created equal. Most are
made with corn flour, but
do not use the whole com
kernel.
They may also include
multiple preservatives and
other ingredients. Some also
include Amylase, an enzyme
that breaks down starch
into a simpler form and can
be derived from bacterial,
fungal or animal sources.
When looking for a
healthy tortilla, choose a
certified organic, sprouted,
whole-kernel corn tortilla.
Sprouting grains converts
their carbohydrates into
maltose, which is ordinar
ily done by the body during
digestion. The enzymatic
action enables the body to
absorb the vitamins and
minerals more efficiently.

Making a homemade
honey vinaigrette can be
as easy as combining equal
parts olive oil and honey,
adding balsamic or red wine
vinegar and seasoning with
your favorite Italian herbs
or lemon juice, and salt and
pepper.
Different varieties of
honey boost the flavor in a
dressing. A sweet, fruity-fla
vored honey such as orange
blossom will complement an
assortment of fruits such as
melons, berries and citrus.
A mild-tasting honey, such
as clover, adds a unique fla
vor to both vegetable and
fruit salads.
Be sure to check the label
to ensure the product you
purchase is 100 percent pure
honey.

Vinaigrette to a Fruit Salad
with Honey Lime Dressing,
these recipes will make
your salad a sweet success
at summer gatherings. For

Spicy Honey
Vinaigrette
Makes 3/4 Cup
Ingredients:
1/4 cup cider vinegar
2 tablespoons pure
Honey
2 tablespoons prepared
Szechwan sauce
1 tablespoon soy sauce
1 small clove garlic,
minced
1/2 teaspoon grated
ginger root
1/8 teaspoon coarsely
ground pepper
3 tablespoons vegeta
ble oil
Directions:
Combine all ingredi
ents except oil; mix well.
Gradually whisk in oil; blend

and seasoning; blend until
smooth.
In a medium bowl, toss
fruit with dressing and chill

4 tablespoons fresh
organic cilantro
chopped
8 ounces, organic com
- cooked
1 cup cooked organic
brown rice (optional)
1 can (15.5 ounces)
organic black beans,
drained and rinsed
1 can of your favorite
organic enchilada sauce
5 ounces organic cheese
of your choice, shredded
(optional)
Pre-heat oven to 375
degrees. In a large pan over
medium heat, add half a can
of enchilada sauce, olive oil,
chili powder, cumin, onions
and garlic. Bring to a sim
mer.
Add corn and black beans,
let simmer on low heat for
about five minutes. Add
half the cilantro and cooked
brown rice, then remove
from heat.
Warm organic corn tor
tillas on heavy dry skillet.
Spoon ingredients in each
tortilla and place in oven
safe pan. Add remaining
sauce over top, sprinkle with
cheese, cover and cook in
oven for about 10 to 15 min
utes.
Sprinkle with remain
ing cilantro and serve with
guacamole, salsa and lime
wedges.
